3 LOTS AND LOTS OF Food... Food... Food by Bob Spear ASK TIM SCOTT ABOUT THE NUMBER OF MEALS SHANDON S KITCHEN MINISTRY PRODUCES EACH YEAR AND MENTAL CALCULATIONS BEGINS. Photos by Jim Covigto He operates i a settig most restaurats would evy. There s the Youth Missio Project with at least 100 people to feed three times a day for seve days, he begis. That s more tha two thousad. Wedesday Night Maa averages about 180. The there s the Luch Buch with about 90 per week, thigs for the Coferece, meals for the Dreher athletic teams, luches ad diers for various church groups, five Suday school classes every Suday, fuctios for the Scouts, receptios for special occasios... He pauses ad says, I kow I m leavig some thigs out, so I d be guessig o a exact umber. It might be 15,000 or maybe 20,000 or maybe more. I do kow it s a lot. Ideed, the Shado Kitche has bee a beehive of activity with first Barbara Kirklad ad the Scott providig most of the leadership for the past 33 years i a ever-growig outreach program that touches more ad more people. Tim Scott, Shado s Chef sice 2000, operates i a settig most restaurats would evy, ad he says he ca cook for a 1,000 at a time. Barbara Kirklad, who headed the Kitche with itervals for other pursuits, remembers iheritig a facility with o commercial freezer ad oe stove with two bakig shelves. Imagie, she says, bakig 50 doze cookies two pas at a time. Ah, but the stories they ca tell... Larry ad Barbara Kirklad joied Shado i 1984, ad she saw a ote i the bulleti seekig a church hostess. She iterviewed a day later ad got the job. Six dollars a hour for 30 hours a week, she says, ad I worked 60 hours that first week. Ad she faced a eve bigger problem: I had bee the maager of departmets at Kroger, but I did t kow how to cook, she says. (The late) Reid Cochrae taught me everythig. Cochrae, a Shado stalwart who worked i the food service idustry, played a large role i the Kitche through the years. My first day o the job, I came i ad (Cochrae) was lookig through some papers o the desk, Scott says. He told me, You re payig too much for paper cups. That was my itroductio. Scott came to Shado with a backgroud i restaurats, ad the close-late-ope-early demads led him to seek other opportuities. At his former job, he overheard two me metio the Shado positio, followed them outside ad expressed iterest. I gave them my phoe umber o that Saturday ad got a call to come for a iterview o Tuesday, he says. He s still at Shado 17 years later. With years come experiece, ad experiece eables Scott to kow what to prepare ad how much to prepare, whether the expected crowd is 20 or 200. You look at the iformatio-filled caledars for his 17 years at Shado ad realize there is seldom a lull i the demads. Usig a recet Suday to illustrate, We prepared for the Suday school classes, the LifeLie service, a luch for the Gree Team ad a receptio that followed a fueral, Scott said. Thik about that schedule ad jugglig the demads. The classes ad LifeLie required oe preparatio, the lucheo aother ad the receptio a third. Times chage, of course, ad the meal preparatio for the Youth Missio Project provides a example. We would take what we could ad buy the rest at the Piggly Wiggly, Kirklad says of her days of risig at 4:00 a.m. to prepare breakfast. We defiitely eeded the Piggly Wiggly for ice. Now, Scott says, We pla the meals ad order the food, ad U.S. Foods drops a refrigerated trailer with what we eed. That s a big step forward. Ideed, the Kitche Miistry has steadily progressed through the years. Those days of takig edless hours to bake 50 doze cookies are log goe, yet the activity seldom slows ad the umber of meals cotiues to grow... a lot. Voice page 3
