This cookbook will feature entries from all churches. Catholic Church members in our Auxiliary area may submit a recipe. Our goal is 1000 recipes. In April we will be preparing Easter Cookie Baskets for the shut-ins. We would also need to know if they have dietary restrictions. Those need to be presented at the March meeting so we have cookies on hand. In May we are planning a Mother, Daughter, Grandmother, Granddaughter, Mother-in-law, Step- Daughter...etc. Salad Nite. This will be at the May 9th meeting. Debbie Matson, President #4849 AURORA BELLARMINE LADIES The Bellarmine Ladies, the auxiliary to Cardinal Bellarmine Council 4849, has been growing this year! We now have approximately 25 members. We have hosted several free Ladies Night Out, where we played Bunco and other games, to encourage the wives to get to know each other. This has promoted and increased our membership and we had fun! For the 15th year, we continue to make and distribute free Rosaries to all the second graders in the seven Catholic grade schools in Aurora. The Knights will be hosting a Fish Fry on Fridays for six weeks of Lent at Holy Angels Church in Aurora. The Bellarmine Ladies will be providing the drinks and desserts for sale. We encourage all wives to join an auxiliary in order to help promote the family aspect of the Knights of Columbus; to help support our husbands and each other in order to promote the kingdom of God. Laura Wright, Chair of Bellarmine Ladies April, 2011 #4977 PALATINE HOLY GHOST LADIES AUXILIARY Our auxiliary has kept its' 45 members very busy doing charitable works for our church and community. Besides the usual bake sales, membership drives, selling our fabulous cookbook, volunteering for numerous things, the list goes on. Recently we partnered with St. Theresa's St. Vincent de Paul conference to help with three services. Their annual Archdiocesan Council of Chicago annual fundraiser on April 3, 2011 (frieda@svdpchicago.org) needed raffle baskets for their silent auction. Our members set up a "kitchen theme" basket which contained our cookbook, Bless Us O Lord, baking utensils, apron, measuring cups, decorative serving bowls and many more items. Did I mention, the bottle of wine, too. The Chicago Council of St. Vincent de Paul also was given 50 pallets of dried soup mixes that serve 1/2 gallon servings each. Our ladies loaded two cars with 3 pallets of packaged soups that

2 VOLUME 3, ISSUE 2 PAGE 2 amounted to approximately 3,600 packets. We delivered those to 17 different locations such as: Catholic Charity, Maryville Academy (children in need), food pantries at St. Thomas of Villanova, St. Theresa and Palatine Twp., Carmelite Monestary (for their needy families), CEDA, Pads Journey to Hope, Phd, Greencastle of Palatine and Appalacia...to name a few. Our upcoming event with SVdP will take place on June 14th. That is the day of our general meeting, so we have decided to combine our meeting with this project. After our brief 7:00 p.m. meeting, all who sign up will meet at a designated place to work with a total of 60 volunteers to package dried meals in plastic bags that will be shipped to third world countries through Feed My Starving Children. During the 8:00-9:30 p.m. work time, there will be a variety of jobs for those who want to sit or stand while doing the work. Our children and grandchildren are welcomed to work beside us for community hours or just the good feeling of helping those in need. Barbara Simeo, President #5574 CHICAGO MADONNA DELLA STRADA Our growing Knights of Columbus Ladies Auxiliary, Madonna della Strada Council #5574 (Chicago), has picked up five new active and eager members over the past two quarters and into Continuing successes of our regular flagship programs and our rapid response as on-call "first responders" have raised awareness of opportunities for service to our St. Thomas the Apostle (STA) parish and school and to our community in Chicago. ANNUAL PENNY DRIVE 2010: On January 13, 2011, our Ladies, coaches, teachers, students, Chicago Fire Department people, and friends and family flocked to the St. Thomas the Apostle School Gymnasium to dedicate a completed project underwritten by our Penny Drive--the Michael Gordon Basketball Scoreboard. The Ladies Auxiliary 2010 Penny Drive designated contributions to benefit the School, its students and athletes, and the whole parish family in honoring the late Sir Knight Michael Gordon (Financial Secretary), STA School Coach, and retired Chicago Fire Department Fire Marshal, who passed away November 17, Sir Michael was the beloved husband of Ladies President Worthy Lady Villa D. Perry Gordon; together they had served as a community outreach team for the Knights and the Ladies. The new scoreboard project sparked additional improvements to the School gym through shared contacts by the Parish, School, and the Ladies. ON-CALL SERVICE: 1. Several Ladies enlisted as volunteer judges in the STA School Science Fair November 18, Sharing our observations later, we marveled at the creative and carefully researched and tested science projects and applied some of the "take-away" conclusions from ecology-sensitive findings on additives in bottled water and plant fertilizer (which plants thrive, which don't?) to practical tips on boiling spaghetti with or without salt to make it cook faster and better. STA students presented their projects in person and answered questions from assigned judges, strengthening our Ladies bond to students and our appreciation of our unique STA School. 2. Our Ladies stepped up again this past December to donate toys and gifts to Chicago's Comer Children's Hospital (Child Life and Family Education Program) for its holiday program for hospitalized children. This carefully developed program provided guidelines for safe and appropriate toys and materials needed. President Worthy Lady Villa Perry Gordon was able to buy highly prized and needed items in bulk and Ladies turned over money contributions to her to deliver the goods to Comer on December 17th. Gifts were donated in memory of our late member, Penny Drive Chairlady, and Trustee Lady Wylola Cooper, who served 30 years on STA s hospital Ministry of Care (Communion ministers) at Comer Children s Hospital. 4 PAGE 4 #13123 ROCKFORD #14553 OAK LAWN OF HOLY FAMILY THE WOMEN S AUXILIARY OF ST. LOUIS DE MONTFORT The Holy Family K of C Auxiliary has been keeping active with many events. In June we held our Annual Garage Sale and not only had a great deal of fun and fellowship, we raised funds for a new funeral pall for the church. It was very meaningful to all of us when it was used this winter at the funeral of one of our beloved members. We also used money we raised to help fund the use of a mobile ultra sound machine, which offers free sonograms to educate moms about their unborn children, and to help them decide against having an abortion. VALENTINE JUMBO ANSWERS The Women s Auxiliary of St. Louis de Montfort #14553 sponsored a shoe drive for Share Your Soles. Two hundred pairs of shoes were received. They also helped collect gifts for a baby shower event which helped out two different organizations. The Auxiliary also assisted the Knights of Columbus with a Spaghetti Dinner and a Radio Music Show and in March there will be a Fish Bake fundraiser. 1. Valentine 2. Cupid 3. Sweetheart In December we held our annual Christmas Social, and in January the Ladies and Knights had an enjoyable evening at our Snowflake Party. Everyone brought appetizers, salads or dessert, and one of the Knights again made his delicious pulled pork sandwiches. We had a great evening! In February many Knights and their Ladies attended a Valentine dinner at Altamore s Restaurant, and we were treated to a wonderful 7 course dinner Have a Blessed Easter. prepared especially for our group. 8 WHAT WORKS -TEAM WORK LET S GROW AS A TEAM! COPPER PENNIES 4 1/2 cups thinly sliced carrots 2 lge. onions sliced 2 green peppers (cut into strips) 1 can tomato soup HAWAIIAN FRUIT SALAD 2 large cans fruit cocktail (drained) 1 can mandarin oranges (drained) 1 pint sour cream 3/4 cup vinegar 1 pkg. miniature marshmallows 1/2 cup salad oil 2 tsp. lemon juice 1 cup sugar 1 cups cherries (cut up) 1 T. worchestershire sauce Cook carrots 6 to 8 minutes drain, cool. Combine soup, vinegar, oil, sugar and worchestershire sauce. Place over medium heat. Cool. Combine carrots, peppers and onions. Refrigerate. Patricia Kemp 3/4 cups pecans (optional) Mix together. Let set overnite if possible. (1/4 cup plus 1/8 cup) Corn Syrup 1-1/2 cup brown sugar 1/4 tsp. plus 1/8 tsp. baking soda Melt butter, brown sugar & corn syrup, simmer for 4 minutes. Add baking soda and simmer for 1 minute. Pour puffs into a large buttered roasting pan and pour caramel mixture over puffs and stir well until coated. 250 deg. for 1 hour, stirring every 15 minutes. While cooling, stir once or twice, so they won t stick together. Colette Giacovelli Ladies Auxiliary #6710, Warrenville BARBECUE BEEF 3 # hamburger 1 small onion (chopped fine) 1 tsp. dry mustard 2 T. worchestershire sauce 3 T. brown sugar celery salt to taste. 1 to 2 bottles Heinz Ketchup (not hot) Brown hamburger in very small amount of fat. Before adding chopped onion pour off any excess fat after browning meat. Add ketchup and other ingredients and simmer 25 minutes stirring occasionally not to burn.
