1 Happenings May 15, 2017 FREE to a Good Home! A Heartfelt Thanks by Anonymous We have a hero in our valley. She's kind, and she works hard, and without her we would all spend more gas and time than we have ever considered taking the trip to Jean every time we needed to mail a special letter or a package to someone we love. Sometimes I'm in a hurry and I take her dedication to this community without thought. When I open the door to our sweet little Post Office here in Sandy Valley, I'm treated by one of the most genuine souls here. Kay keeps the Post Office going with the help of her friend Debbie. Lately, I'm in another world making plans for my husband's retirement at the end of this month. He's 67 now, and is having a few issues with getting older, so it's wonderful that he can retire. The other day when I had to quickly stop in at the Post Office, I looked into Kay's eyes and realized that she hasn't let herself retire. She is there, or Debbie is there, 6 days a week without fail. I believe our little Post Office here is private. That means it belongs to Kay and she is subject cont d on page 2 A Word on Water by Gail Marie Beckman So, I m working on a project, physical in nature, and as I kept drinking water, I became more and more thirsty. Surprisingly so. This went on for a bit of time until I finally took a look at the bottle of water, which was taking twice as many as usual to even come close to quenching my thirst! On this particular bottle of water were the words: purified water and in the tiniest of print I saw: with minerals added for taste.. What? Then I found it. Ingredients for bottled water. It said: purified water, potassium bicarbonate, sodium bicarbonate, calcium citrate, sodium chloride and magnesium oxide. No wonder it makes me thirsty! I guess now you have to read the label on water. Just wanted water. The good, old-fashioned hydration kind of water. Cornmeal Crusted Chicken Nuggets - Page 5 For the Love of Mom We hope all of you Moms out there, whether you have human children or animal kids, had an especially lovely Mother s Day! The weather was beautiful and the wind stayed somewhat calm. Here is a story that was sent to me that I think you will enjoy: At the time of this story, Margaret Rudkin was not a new mom. At 40 years old, she was the busy mom of three boys. She had to watch as one of her sons became more and more affected by allergies, asthma and breathing difficulties. In 1937, a specialist suggested the boy adopt a natural diet of fruits, vegetables, and whole grains. Rudkin decided to try her hand at baking a loaf of stoneground whole wheat bread for her ailing son. The results were less than successful. I think she does an amazing job, and if she weren't there we'd have to go to the Post Office in Jean to do all of our postal business, or actually mail in our electric bill payment. Or, how many of us have received our UPS or FedEx shipments because when the drivers can't locate an address, Kay can?! That seems like a lot of responsibility for anyone. Kay is always kind and very helpful when we show up with questions or mailing issues. She is someone we all count on without even thinking about it. I just want to take this moment to say "I'm so glad you are there, Kay" and I'm sure everybody here in Sandy Valley feels the same. You have been there for us and you continue to serve your community well. Thanks for being the hardworking and sweet lady that you are, and thanks for always having our backs! Your hard work, dedication and perseverance are what heroes are made of. You are truly one of Sandy Valley's best! 3 For the Love of Mom cont d But she didn t give up, and finally after numerous attempts, she came up with a loaf of bread she thought was good. Her son loved it. Her friends loved it. In fact, everyone who tasted it seemed to enjoy it. And best of all? Her son s health improved so much that his doctor began prescribing the bread for his other patients. Eventually, Rudkin approached the local grocer about selling her bread. However, he was put off by the price of the bread 25 cents a loaf compared to the commercially processed white breads at 10 cents a loaf. Rudkin didn t try to negotiate with him; instead she let the bread speak for itself. She gave the grocer a sample. Once he tasted it, he took all the bread she had, and so began her company, Pepperidge Farm! Remember, there is nothing more kneaded than a mother s love. Blackberries combined with whole-grain mustard creates a sweet-and-savory dipping sauce. Ingredients 1 cup fresh blackberries or raspberries, finely chopped 1 1/2 tablespoons whole-grain mustard 2 teaspoons honey 1 pound chicken tenders, cut in half 1/2 teaspoon salt 1/4 teaspoon freshly ground pepper 3 tablespoons cornmeal 1 tablespoon extra-virgin olive oil Directions Mash blackberries (or raspberries), mustard and honey in a small bowl until it looks like a chunky sauce. Sprinkle chicken tenders with salt and pepper. Place cornmeal in a medium bowl, add the chicken and toss to coat. Heat oil in a large nonstick skillet over medium-high heat. Reduce heat to medium and cook the chicken, turning once or twice, until browned and cooked through 6 to 8 minutes total, depending on thickness. 12 Art is like a border of flowers along the course of civilization. Lincoln Steffens This Little Piggy Goes to Market by OllieAnna Wadley My fair experience was awesome! I sold my pig and made a lot of bonus money too. Now I can buy my pig and feed for next year and still have a little bit left over. I placed 5th in my division for showmanship, and blue ribbon in my class for market. I also entered a container garden and received a youth judge s choice award and a blue ribbon in my class for my sewing project. I had the opportunity to meet up with some old friends and make lots of new ones! I learned so much from 4-H senior showman; everyone is always so generous with their knowledge and resources! My mom says that nothing truly great is ever accomplished alone. And I would have to agree! I had so much support from my parents, friends, 4-H leaders and all of you!
