And our favorite friend.pollen is back!! Spring time is a beautiful time of year! Everything is so colorful, so vibrate and so alive! Everything about Springtime, even the pollen, brings joy! Even the pollen? Yes, even the pollen! The pollen, in a way, reminds us that we may have to endure some things in order to receive our breakthrough. Without pollen, we wouldn't have the beautiful flowers, the lush green grass, the gorgeous full trees! Without pollen, the bees would have no flowers to collect nectar from in order to make honey. Pollen also symbolizes the renewing of life. During the colder months everything is so drab and gloomy. However those same bare trees and bushes start to sprout new life during the spring. Those birds that where relatively quiet during the colder months begin to fill the air with their beautiful songs! If trees can shed their dead leaves, if a wilted flower can bloom again; we too can start anew! When we as Christians, accept Jesus as our personal savior we are starting a new life! Those old habits that were weighing us down, begin to fall by the wayside; just like the leaves on a tree. Those feelings of being lost that were holding us back, begin to wither away. And in time, just like a Robin, we begin signing a new song! Special points of interest: Exciting news from the James M. FOUNDATION NEWS Midlands Gives The James M. Hinton Community Development Foundation (Foundation) will participate in Midlands Gives on Tuesday, May 3, 2016 from midnight to 11:59 pm.

3 FOUNDATION NEWS Midlands Gives The James M. Hinton Community Development Foundation (Foundation) will participate in Midlands Gives on Tuesday, May 3, 2016 from midnight to 11:59 pm. Hosted by the Central Carolina Community Foundation, Midlands Gives is a 24-hour online giving event designed to raise money and awareness for local nonprofits in 11 Midlands counties. Persons that want to support the Foundation during this event should log on to the MidlandsGives.org website on May 3, complete the giving form, select the James M. Hinton Community Development Foundation and make a donation using your debit or credit card ($20 minimum). Your credit card statement will reflect a donation to Midlands Gives/Central Carolina Community Foundation. Central Carolina Community Foundation will forward the funds (minus credit card and processing fees) to the James M. Hinton Community Development Foundation. All donations are tax deductible. You will receive a receipt acknowledging your donation. Funds received through this event will be used to provide kid-friendly meals for low income students to carry home on the weekends to supplement their nutritional needs and to transport approximately 30 low income students to a summer feeding program sponsored by Second Calvary Baptist Church. While at the program, the students will receive a nutritious meal and engage in learning activities. The nourishment received and the educational activities will help the students to be better prepared to learn, succeed and, ultimately, become productive citizens in the greater society. The funds will be used to provide Sacks of Love for students that attend the Summer Feeding Program at Second Calvary Baptist Church this summer. 8 Courtesy of : Ingredients 2 tablespoons unsalted butter 2 cloves garlic, finely chopped 4 scallions, sliced 2 cups broccoli florets 2 cups shredded rotisserie chicken (skin removed) 1 cup medium-grain white rice 1 plum tomato, chopped Kosher salt and freshly ground pepper 2 cups low-sodium chicken broth 1/4 cup sour cream 1 cup diced dill havarti cheese (about 4 ounces) (Don t have Havarti cheese, try Monterrey Jack instead) 1/4 cup grated parmesan cheese (about 1 ounce) Chicken and Rice Casserole Total Time: 40 min Prep: 15 min Cook: 25 min Yield: Level: 4 servings Easy Directions Preheat the oven to 425 degrees F. Melt the butter in a large ovenproof skillet over medium heat. Add the garlic and about three-quarters of the scallions and cook, stirring occasionally, until soft, about 2 minutes. Add the broccoli, chicken, rice, tomato, 1 teaspoon salt, and pepper to taste; stir to combine. Whisk the chicken broth and sour cream in a bowl, pour into the skillet and bring to a simmer. Stir in half each of the havarti and parmesan. Cover tightly with a lid or aluminum foil, transfer to the oven and bake until the rice is tender and most of the liquid is absorbed, about 20 minutes. Turn on the broiler. Uncover the skillet and sprinkle with the remaining havarti and parmesan, then broil until golden, about 2 minutes. Sprinkle with the reserved scallions.
