1 Arkansas Association of Nutrition & Foodservice Professionals Executive Committee 2012 President Loretta Kilts CDM, CFPP President-Elect Lynn Farmer CDM, CFPP Past President Sherri Williams CDM, CFPP, MHS Secretary Stanley Vault CDM, CFPP Treasurer Tina Harris CDM, CFPP EDITOR: Amy Hickman, CDM, CFPP VOLUME 49 ISSUE 4 NOV 2012
2 Letter from the President: It is finally fall! The trees are turning into God s vibrant quilt colors lining the roads, hillsides and mountains. The quilt God has draped over the young vegetation to protect them from the coming winter months. I suggest when you get that extra moment take that cup of coffee out to the back terrace and enjoy the splendor of God s creation. I want to Thank all of the ANFP Arkansas members, students, vendors and speakers who attended the fall conference this past September in Hot Springs. The Austin Hotel had suffered some cosmetic damage when strong weather swept through the last past of the summer yet that did not stop the hotel from honoring a relationship they have had with us for years. JoElla and her staff went so far out of their way to make certain everything was as close to perfect as possible. For those who left their tennis shoes at home not knowing Thursday was exercise day we applaud you for hiking back and forth to the convention center to attend the educational classes. We are all food service professionals and we never know from one day to the next what we will face going to work. I applaud the staff and management of the Austin Hotel for everything they did for us and want them to know we will see them in 2013! I want to also thank SYSCO HEALTHCARE, USFOODS, COLEMAN DAIRY, DENNIS DOTSON, RONDA SELF, ED FASON, and anyone else for their assistance in making this a great meeting for us. To all our speakers we received rave review about this years topics. Thanks for making this a great meeting for us. Let us never forget the gentleman from Group Purchasing Advantage, Bingo would not be the same with out Zack and the boys! We will have some AWSOME giveaways this year and additions to upgrading our scholarship program. We all know of someone we work with who has never attended a state meeting either because their facility does not cover their expenses and/or they just don t have the funds to put up front then wait to be reimbursed. The board is working on the required forms and policy so we may give some lucky members an all expense paid trip to the State meeting in Hot Springs next fall. This will include the registration, accommodations at the Austin Hotel and transportation expenses. We will have more on that in the coming months. Also we will give an expense paid trip to the National Meeting in July in Savannah Georgia to one lucky member of our ANFP Arkansas family. Over the years we have heard a lot of complaints concerning the going green doing everything online however, by doing this we have saved so much in postage that now we can as a family make it easier for one of our members to attend meetings they never thought possible and this should make all of us proud to be members of the ANFP Arkansas. The holidays are quickly approaching and we will all be busy with cooking, decorating, and last minute shopping. Let us not forget those in nursing homes, orphanages or senior citizens living alone with no family. It is better to give than to receive so this year I hope every district will gather together and adopt a cause for the holidays then share your story with all of us in our next newsletter. May we also keep all those who were in the path of Hurricane Sandy, not only our friends and family but our ANFP families as well in our prayers. Until next time may God bless you and keep you safe Loretta Kilts, CDM,CFPP FUN FALL FACTS Autumn is one of four seasons that occurs from roughly September 21 through December 21. It is more commonly known as "fall" because the leaves fall off of deciduous trees during the season. Modern Halloween has its origins in the Celtic holiday at the end of the annual harvest, similar to an ancient Thanksgiving. Carving pumpkins didn't become a part of the holiday until the 19th century. The cornucopia or horn of plenty is a symbol of abundance and nourishment, commonly a large horn-shaped container overflowing with produce, flowers, nuts, other edibles, or wealth in some form until the 19th century
3 My Favorite Pumpkin Recipe: Ingredients: LIBBY S PUMPKIN ROLL Letter from the Editor: Fall has Arrived, All the colored leaves on the trees, the wonderful smells from the kitchens, the crispness of the air, and everything having to do with pumpkins. Fall is Here! I love this time of year. It makes me start thinking about Christmas shopping (yes I said the c word), getting out and having a family portrait in the fall foliage, and it makes me want to bake for my family and friends. We all had a great time at the State Conference in Hot Springs. We had wonderful speakers with a wide range of topics. We thank each and everyone of you and your companies for making it such a huge success. If you have never thought about attending one of our state meetings, think again. It not only is a great way to earn CEU s, but it is a way to meet others from across the state who share the same business ideas and goals. Who knows, you might come and be so inspired, that you sign up to be part of our board. We are always looking for new faces. I am so proud to be a part of the Arkansas ANFP, thank you for allowing me to be your newsletter editor for another term. With the holidays approaching, I hope that each one of us can count all of our blessings and share with others. This is a time for giving, not only of material things but of ourselves. Make time for the little things, and know that each minute is a gift. Happy Holidays to all!! Amy Hickman CDM, CFPP Washington Regional Medical Center 1/4 cup powdered sugar (to sprinkle on towel) 3/4 cup all-purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1/4 teaspoon salt 3 large eggs 1 cup granulated sugar 2/3 cup LIBBY'S 100% Pure Pumpkin 1 cup walnuts (chopped (optional)) 1 pkg. Spread evenly into prepared pan. Sprinkle with nuts. BAKE for 13 to 15 minutes or until top of cake springs back when touched. (If using a dark-colored pan, begin checking for doneness at 11 minutes.) Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Carefully unroll cake. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
