3 Butter Pecan Cake 40 minutes to prepare serves Ingredients Cake: 2 1/2 cups all-purpose flour 1 cup sugar 1 cup brown sugar 2 cups pecans, roughly chopped 1 cup (2 sticks) unsalted butter, room temperature 1 cup milk 3 eggs 1 teaspoon vanilla extract 2 teaspoons baking powder 1/4 teaspoon salt Glaze: 1 cup (2 sticks) unsalted butter, melted 1/2 cup heavy cream 2 cups powdered sugar 1 cup brown sugar 2 teaspoons vanilla extract pecans, optional Preparation 1. Preheat oven to 400º F and lightly grease a large sheet cake pan with butter or non-stick spray. 2. In a medium bowl, sift together flour, baking powder and salt, and set aside. 3. Cream together butter, sugar and brown sugar in a large bowl or mixer for 3-4 minutes, or until light and fluffy. 4. One at a time, beat in eggs, waiting until each is incorporated before adding the next, then add vanilla extract. 5. Starting and ending with the dry ingredients, alternate between mixing in the flour mixture and milk. Be careful not to overmix. 6. If using, fold in chopped pecans. 7. Pour batter into greased cake pan and place in oven. Bake for 20 minutes, or until toothpick inserted in center comes out clean. Remove from oven and let cool 10 minutes. 8. While cake cools, prepare frosting. Combine butter, heavy cream and brown sugar in a medium saucepan over medium-high heat. Whisk everything together and bring to a boil, then stir in vanilla extract and remove from heat. 9. Stir in powdered sugar and whisk until smooth, then pour frosting over cooling cake. Optional: fold pecans into frosting before pouring, or sprinkle over the top. Page 3

4 Council Minutes September 13, 2017 Members Present: Nancy Berg, Andy Hubbart, Mary Tveit, Roger Inman, Jan Deis, Liz Almlie, Dennis Hook, Peggy Brilz, Holly Crosby, Gary Crosby, Jessica Stanek, and Heath Schnee The meeting was called to order by President Nancy Berg. Devotions: Liz shared prayers for recent disasters from the hymnal. The president related that she hadn t printed an agenda. A motion was made by Mary to proceed without a typed agenda, seconded by Dennis, carried unanimously. Financial Secretary s Report: The report indicates that deposits are on track with anticipated. A motion to approve the financial secretary s report was made by Jan, seconded by Jessica, and carried unanimously. Treasurer s Report: Notes were made on remaining amounts in funds raised for the parking lot and in building funds. Pass-through to Lutherans Outdoors will be forthcoming. A motion to approve the treasurer s report as written was made by Peggy, seconded by Holly, and carried unanimously. Committee Reports: Education: Wednesday school has started. For the first two weeks, attendance was 6-7 students. Church Life: The congregational picnic was held yesterday. The idea for a family event/festival was tabled for this year, not having sufficient lead-time or planned budget. Discussion was had on doing a second-annual hayride with Tveits. Help will be needed and a sign-up was planned. Worship & Music: No meeting recently. It was noted that the piano has been tuned and that ushers should help out Jackie by covering the piano after Sunday services. Stewardship: The plan to add brick veneer to the center portion of the façade will probably not get on the schedule this calendar year. The estimate was also a little over what remains in the building fund. Heath made a motion to reserve the remaining building funds for the brick veneer project, seconded by Jessica, carried unanimously. Heath still plans to repair plaster on east wall of the sanctuary and drainage on the lot on the west side of the church. No quotes have been obtained for replacing the south door until more information can be obtained about requirements whether fire-exit rating or mechanisms are required. New Business: Insurance: Roger relayed information from his visit on building/liability insurance. The guy can send info to council and can come do a presentation in 2-3 weeks. Administrative Secretary: Duties list has been typed up and was copies were shared with council members. On advertising the available position, Mary asked whether the possibility of doing a financial background check on candidates. Marcia Makoweski has been covering temporarily and Jan made a motion to pay her for her time at the current salary, seconded by Mary, carried Page 4

5 unanimously. A motion was made by Mary to advertise the position with optional background checks, seconded by Heath, carried unanimously. A motion was made at 6:30pm to enter executive session by Jessica, seconded by Nancy, and carried unanimously. A motion to approve the August minutes was made by Heath, seconded by Holly and carried unanimously. Council Minutes October 11, 2017 Members Present: Nancy Berg, Jessica Stanek, Holly Crosby, Gary Crosby, Peggy Brilz, Mary Tveit, Dennis Hook, Jan Deis, Andy Hubbart, Roger Inman, and Liz Almlie The meeting was called to order by President Nancy Berg. Devotions: Open discussion. Minutes: A motion to approve the September minutes as presented was made by Dennis, seconded by Jan, and carried unanimously. Treasurer s Report: A motion to approve the treasurer s report as presented was made by Holly, seconded by Jessica, and carried unanimously. Financial Secretary s Report: The report indicates that deposits are behind a little, but contributions by pledging members are on track. A motion to approve the financial secretary s report was made by Peggy, seconded by Gary, and carried unanimously. Committee Reports: Education: Wednesday school has had an average of 4-6 students, confirmation has had one student. Stewardship: Temporary lights have been added to the chancel while Tom Tveit works on building new fixtures to match those he installed over the pews. Norm Weaver offered to close up the lawn sprinkler system for the winter. A fall clean-up event was discussed. Members will contact the Boy Scouts to ask about stored supplies now that they have relocated their meetings. Church Life: The congregational hayride sign-up is circulating, the event will be October 29th. Worship & Music: Potentially will have a meeting next week. While using lay and supply preachers, we ve primarily been using Service of Word. The fall of Christmas Eve on a Saturday, with regular worship potentially the next morning was brought up for the committee to discuss more about that schedule. Old Business: Council has hired Erin Flynn as church secretary and she s been working on training with past secretaries. Insurance: Roger investigated the Church Mutual Insurance quote compared to current insurance with Guide One, and pricing was similar. A motion to stay with our current provider, Guide One, was made by Mary, seconded by Jessica, and carried unanimously. New Business:The November church calendar was passed around for comment. November 4 th was selected as a Clean-up Day, 9am. Paul Bly has asked to buy the church laptop he has been Page 5

6 using. A motion to sell the laptop to Paul for $50 was made by Gary, seconded by Mary, and carried unanimously. A letter from Bishop Zellmer that Nance Orsbon is given special dispensation to administer communion was presented to the council and given to be filed in the office. Paul Bly s resignation was sent to council leadership by on September 27 th, and council members voted by to accept the resignation on the 28 th. A motion to confirm the vote was made by Mary, seconded by Gary, and carried unanimously. A motion to approve a severance package of two months salary and allowances for health coverage, housing, and taxes was made by Gary, seconded by Mary, and carried animously. PARS sent the church information about their annual holiday meal fundraisers and that will be copied for the church bulletins. Mercy Hobbs contacted the church about filling Resurrection s slots to lead services at local senior living facilities, and potential lay leaders were discussed that we could ask. Discussion was held about the call process and potential supply options. A motion to adjourn was made by Peggy, seconded by Mary, and carried unanimously. Holly volunteered to lead devotions for November. The meeting ended in the Lord s Prayer. Page 6
