7 Item Matzah Name of store Phone number Pesach Perfectly Organized Addendum 7 Pesach Orders When calculating your matzah requirements, allot roughly 2 matzahs (machine or handmade) for the adults at your seder. For the wine/grape juice at the seder, multiply 3.5 ounces * 4 cups = 14 ounces per adult guest. Then, divide your wine/grape juice bottle size by 14 and that will tell you how many bottles you will need for the seder. For example, use one large 64 ounce grape juice bottle for four people. 8 Pesach Perfectly Organized Addendum 8 How to Set up Your Pesach Kitchen and turn over The last week of the Pesach countdown is devoted to working on the kitchen. 2 weeks before Pesach is the best time to start working on your kitchen. By now you ve made an area to keep the Pesach foods you have been buying. If you only have 1 pantry, 2 weeks before would be the ideal time to switch over to Passover foods. What you need to do to set up the Pesach Kitchen is: 1. Clean surfaces thoroughly. Refrigerator, freezer, tables, high chairs, stovetops, oven, sink, walls, floors, cabinets, tables, chairs, appliances-clean these areas well. Do as much as is feasible. If you can clean a little under the fridge, do so. I like using a power washer for things like the highchair. Do you want to take off your chair cushions and clean under them? Scrub what you can really really well. When thinking about creating your Pesach kitchen, plan ahead with regards to what cabinets and drawers you will be using for Pesach and clean those. If you are not going to use certain areas during pesach, just close them off. Think about getting a separate storage unit for Pesach utensils to have in your regular kitchen. Pesach pantry: Take care to clean the pantry since this is where Pesach foods have been stored all year round. Wipe down the shelves, walls, floors, and cabinets in this area. Take down heavy appliances like bread machines and clean those thoroughly as well. You can put them back into the pantry on the top shelf after they are clean and cover the top shelf with a blanket, sealing off that chametz area. It is a little confusing to have part of your kitchen be Pesachdik and part of it still Chametzdik. What you can do to make things easier is to make sure the pantry is in the back of the kitchen out of the way and also to start eating all chametz in the dining room or elsewhere, but not in the kitchen. You can take your toaster oven and microwave and move them into the dining room, out of the kitchen to continue eating chametz. We actually start eating Pesachdik foods about 2 weeks before Pesach. So, to recap: clean out one small area as your Pesach area to store supplies and pesach food packages. Don t let it come into contact with Chametz. Designate a Chametz eating area.

9 Pesach Perfectly Organized Addendum 9 2. Line flat surfaces. Whatever surfaces you will be using on Pesach, line them with foil, contact paper, or some kind of thick material. Some examples of areas to line are: the microwave cart, stove, shelves, tables, countertops, drawers, and refrigerators. Line them after you clean them. Use scotch tape or masking tape to keep the liners on. It is helpful to cut liners once and use them year after year. For my pantry, I use a thick soft plastic and keep track of what they are for. You can do this for your countertops also. That way you won t have to cut liners every year. 3. Now it is time to kasher! First find out what is allowed to be koshered and what is not. I find it really is best to have separate Passover dishes, and I know some dishes can be koshered however. Some countertops don t need to be covered as they can be koshered. Kosher these surfaces and your oven at least 2-3 days before Yom Tov so you have time to cook! After all surfaces are cleaned, you wait 24 hours between cleaning and koshering. Don t use hot food or water during this time in the areas you are koshering: like the sink and oven. Then, ask your Rav how to kasher. How do you decide when to kasher? It depends if you have an area you will be able to continue eating chametz. If you don t have anywhere else in the house you can go to eat chametz, you wouldn t want to kasher too much in advance. Definitely allot enough time to cook before Yom Tov and give yourself flexibility especially if you work full time. Consider also when Pesach is. If Pesach falls out on a Monday night, for example, you may want to consider koshering Saturday night. Wash all of your Shabbos dishes. Cover your sink and stove, and then begin Kashering.

12 Pesach Perfectly Organized Addendum 12 Pesach Recipe Substitutes Reprinted from the ou.org At some point during Pesach preparations we ve all tried to convert a main stream recipe into a Pesach one only to discover that we don t have a clue as to what to substitute for a chometz ingredient. This panic moment is why I started compiling my COMPLETE LIST OF PESACH SUBSTITUTES. I ve added some great new substitutions this year, thanks to readers who ve sent in their own ingenious creations. If anyone has any other substitutions that they would like to share please let me ( eztlog@hotmail.com) know and I ll attach them to the next Pesach article. 1 oz. baking chocolate (unsweetened chocolate) = 3 tablespoon unsweetened cocoa powder plus 1 tablespoon oil or melted margarine 16 oz. semi-sweet chocolate = 6 tablespoon unsweetened cocoa powder plus 1/4 cup oil and 7 tablespoon granulated sugar 14 oz. sweet chocolate (German-type) = 3 tablespoon unsweetened cocoa powder plus 2 2/3 tablespoon oil and 4 1/2 tablespoon granulated sugar 1 cup confectioners sugar = 1 cup granulated sugar minus 1 tablespoon sugar plus 1 tablespoon potato starch pulsed in a food processor or blender 1 cup sour milk or buttermilk for dairy baking = 1 tablespoon lemon juice in a 1 cup measure, then fill to 1 cup with Passover nondairy creamer. Stir and steep 5 minutes Butter in baking or cooking use pareve Passover margarine in equal amounts. Use a bit less salt 1 cup honey = 1 1/4 cups granulated sugar plus 1/4 cup water 1 cup corn syrup = 1 1/4 cups granulated sugar plus 1/3 cup water, boiled until syrupy 1 cup vanilla sugar = 1 cup granulated sugar with 1 split vanilla bean left for at least 24 hours in a tightly covered jar 1 cup of flour, substitute 5/8 cup matzo cake meal or potato starch, or a combination sifted together 1 tablespoon flour = 1/2 tablespoon potato starch 1 cup corn starch = 7/8 cup potato starch

13 Pesach Perfectly Organized Addendum 13 1 teaspoon cream of tarter= 1 1/2 teaspoon lemon juice or 1 1/2 teaspoon vinegar 1 cup graham cracker crumbs = 1 cup ground cookies or soup nuts plus 1 teaspoon cinnamon 1 cup bread crumbs = 1 cup matzo meal 1 cup matzo meal = 3 matzoth ground in a food processor 1 cup matzoth cake meal = 1 cup plus 2 tablespoon matzo meal finely ground in a blender or food processor and sifted 3 crumbled matzo = 2 cups matzo farfel 1 cup (8 oz.) cream cheese = 1 cup cottage cheese pureed with 1/2 stick butter or margarine Chicken fat or gribenes = 2 caramelized onions, Saute 2 sliced onions in 2 tablespoon oil and 2 tablespoons sugar. Cook until the onions are soft. Puree the onions once they are golden. 1 cup milk (for baking) = 1 cup water plus 2 tablespoon margarine, or 1/2 cup fruit juice plus 1/2 cup water 1 1/4 cup sweetened condensed milk =1 cup instant nonfat dry milk, 2/3 cup sugar, 1/3 cup boiling water and 3 tablespoons margarine. Blend all the ingredients until smooth. To thicken, let set in the refrigerator for 24 hours. 1 cup wine= 13 tablespoons water, 3 tablespoons lemon juice and 1 tablespoon sugar. Mix together and let set for 10 minutes. For frying: Instead of chicken fat, use combination of olive oil or vegetable oil and 1 to 2 tablespoons pareve Passover margarine. Eggs: Passover egg substitutes don t work quite as well as the chometz egg substitutes. For kugels, matzo balls, fried matzo and some cakes the recipes will probably be ok. However, if you want to avoid them (and I do) you can add one extra egg white and 1/2 teaspoon of vegetable oil for each yolk eliminated when baking. Use only egg whites as the dipping to coat and fry meats. Italian Seasoning= 1/4 teaspoon EACH dried oregano leaves, dried marjoram leaves and dried basil leaves plus 1/8 teaspoon rubbed dried sage. This can be substituted for 1 1/2 teaspoons Italian seasoning.

14 Pesach Perfectly Organized Addendum 14 Curry Powder= 2 tablespoons ground coriander, 1 tablespoon black pepper, 2 tablespoons red pepper, 2 tablespoons turmeric, 2 tablespoons ground ginger. Makes 2/3 cup. Pancake syrup=use fruit jelly, not jam and add a little water to thin. I always like to combine the jelly and water in a microwave safe bowl and heat it gently before I serve it. Seasoned Rice Wine Vinegar= 3 tablespoons white vinegar, 1 tablespoon white wine, 1 tablespoon sugar, 1/2 teaspoon salt. Mix to combine. Makes 1/4 cup Flavored Vinegar= lemon juice in cooking or salad, grapefruit juice in salads, wine in marinades. Water Chestnuts- substitute raw jicama Orange liqueur =substitute an equal amount of frozen orange juice concentrate You can mince the tops of green onions and use them in recipes that call for chives or use celery tops instead of parsley (who are we kidding, we always have parsley during Pesach)

Roast shankbone Cook eggs Prepare charoses- mix ground apple and ground walnuts with a little wine. Make salt water Make karpas (potato, parsley)- slice small pieces of a potato. There are different customs of what is used as karpas. Check parsley the way you normally check for bugs Check lettuce for bugs and then dry it well. You need about 1 head of lettuce for 3 people Grind horseradish Dismantling Pesach -Resist the urge to rip off countertop covers and liners so you have workable space to lay down your Pesach equipment. -Put away all pesach dry goods and MAKE A LIST of what you are saving for next year. -Put away all Pesach appliances, dishes, cutlery in storage containers. -Remove oven covers -Remove countertop covers -Save pantry covers and countertop covers for next year -make notes of what you wish you would have had for Pesach, i.e., more ketchup. -make notes of where you are putting specific items not going into your Pesach storage area. -Keep all of your notes in a special Pesach folder.

17 Pesach Perfectly Organized Addendum 17 Putting Chametz back -Make sure every single Pesach item is put away. If you don t have time to put it all away before taking chametz back out, reserve your dining room table as workable Pesach space. -untape cabinets -put chametz back into the pantry (if you put away your chametz in bags or storage containers before Pesach, all you have to do now is bring the bags up rather than each individual item.) I recommend these items for storing away Pesach items: 6 piece China Protectors Clear Storage Bins (so you can see what you own year round!) Wire Shelving (to hold your bins) Getting back into the swing of things: -One subscriber of the Pesach course mentioned hiring cleaning help after pesach. I think that is a wonderful idea. -Use paper goods for the next 2-3 shabbosim after Pesach. -one thing you might do is cook extra meals for after Pesach during Chol Hamoed (while you cook for the last days) if you did not freeze away meals before Pesach began.

21 Pesach Perfectly Organized Addendum 21 Making Pesach on Motzei Shabbos This year Pesach will start immediately after Shabbos, at sundown on Saturday night, April 19, There are many seder-related tasks you ll have to complete on Thursday or Friday since all Yom Tov preparations will have to be completed before the Sabbath starts. Additionally, you ll have to make plans for how you ll eat your last Chametz (challahs) for the Shabbos meals when your house is already kosher for Pesach. Following are a few tips to guide you in preparing for a Saturday night Seder. Bedikas Chametz (Searching for Chametz): Usually done the night before Pesach, this year you will have to complete this two nights before Pesach, on Thursday night April 17th. Biur Chametz (Burning the Chametz): This will take place on the Friday morning before Pesach, instead of, as is usual, the morning of Erev Pesach. Be sure to save some chametz (rolls are easiest) for the HaMotzi blessings for the Sabbath meals. It is customary to NOT eat matza in the day before Pesach so that we ll go to the seder anxious to taste it. Seder Preparations: Since during the Sabbath we do not cook, or prepare for the next day, there can be no seder preparations on Shabbos itself. This means all your foods for the seder plate and for the festive meal must all be cooked and ready before sundown on Friday. If you like to be organized anyway, then this is really a nice situation. You ll finish all your cooking and organizing on Friday and spend the Sabbath resting up for the late seder night. The only thing I miss with a Motzai Shabbos seder, is that I don t get to spend tons of time setting and decorating the table to make it super fancy and elegant for the holiday. Instead it has to get done quickly after Shabbos ends and before the seder begins, along with many other pre-seder tasks.

22 Pesach Perfectly Organized Addendum 22 Just before Shabbos starts: Be sure to leave a yahrtzeit candle burning so you can light the Yom Tov candles from a pre-existing flame. You ll also want to be sure your stove and oven are left on (but you may not use them during the Sabbath) so you can warm and cook foods once Shabbos is over and the Yom Tov begins. This also applies to crock pots or electric warming plates (platas) and any other appliances you may use over the holiday. Shabbos Meals: Since you ll be eating chametz (challah) at these meals, you ll want to make a plan of where to eat the chametz and how you ll dispose of the crumbs. Most people eat these meals on disposable dishes because your chametz dishes are already put away and you surely can t eat on your Pesach dishes. People with little children often make HaMotzi, and eat all their challah outside, to prevent any challah crumbs from straying in the house. After eating the challah you can return to your table to eat the rest of the meal. People often use disposable plastic table covers on their table to wrap up and throw away any table crumbs after the meal. A final sweeping will get up any loose crumbs on the floor. Shabbos Day Meals: Most shuls start and end services very early when Shabbos immediately precedes Pesach, so families can eat their last Chametz meals early in the day. By mid morning on the day of erev Pesach there is a time to stop eating chametz, so many families try to eat both the second and third meals of Shabbos before that time. The rest of Shabbos Day: Try to get everyone in the family to take a nap or at least rest so they ll be refreshed to stay up late for the first Pesach Seder that night. You ll have the chance to spiritually prepare for the holiday, and also have time to read some Hagaddah commentaries to come prepared with some interesting discussion for the seder.

23 Pesach Perfectly Organized Addendum 23 Motzai Shabbos/Havdalah: Women at home can make the declaration Baruch HaMavdil Bein Kodesh L Kodesh and begin preparing for the seder. Warm your food, set the table, make your seder plate, and ready all other seder items. Havdalah is included in the seder itself. Here is a list to help you remember the Pesach-related tasks you ll need to complete before Shabbos starts. For detailed checklists and timetables for how to clean, shop, organize and cook for the entire holiday, please consider ordering my book Pesach Perfectly Organized. Checklist for Preparing your Motzei Shabbos Seder: Buy disposable plates and cutlery for Shabbos meals. Buy or make chametz rolls and freeze them for the Shabbos meals preceding Pesach. Kosher bakeries will all be closed several days before Pesach; so if you re planning to buy rolls, do it at least a week before. Plan your Shabbos meals. You ll probably just want to keep these meals simple. You ll want to finish chametz meals early in the day, but won t be able to eat any matza-based foods until the seder. Have a lot of salads, boiled eggs, tuna, fresh fruits, and other foods available to tide you over. Once your kitchen is Pesadik, you can do the following: Cook and freeze. Soups, kugels, pesach cookies and cakes, even meat dishes in sauces all freeze well. Once the seder night arrives, you can pull out the foods you want and warm them for the Yom Tov meal. Thursday and Friday: Prepare the seder foods and store them in your fridge. If you use romaine lettuce for maror, it takes a long time to check the leaves for infestation, plan accordingly. Make the Yom Tov foods that need last minute preparation: Gefilte fish, salads, meat dishes, homemade juices or mayonnaise, for those of you that with the custom to only use foods made from scratch during this holiday.

24 Pesach Perfectly Organized Addendum 24 Thursday night: Bedikas Chametz. If you have little children, make sure there are enough flashlights in the house so they can participate in the search. Friday morning: Biur Chametz. Set up all your candles that you ll light for the Yom Tov. Be sure you have a source for a preexisting flame. Yahrtzeit candles or even a gas pilot light on the stove will do the job. Pre-open any containers, food packages or bottles you ll need for the three days of Shabbos and Yom Tov. Just before candle-lighting time: If you re planning to use any food cooking appliances on the holiday, be sure they re on and set properly. This could include your stove, oven, coffee urn, crockpot, hot plate or other appliances. Be sure to properly cover the items you won t be using for Shabbos. Light candles, sit back, and relax. You made it! Before I close I wanted to share a recipe for pesadik cookies I make every year. Everyone loves them and they re super healthy. Enjoy: Passover Walnut Cookies: 3 cups ground walnut 1-1/2 cups confectioners sugar (can use regular sugar, but better with powdered!) 4 egg whites pinch cinnamon (opt) 1/2 cup mini choc chips (opt) mix all ingredients together spoon up a tablespoonful and flatten it into cookie shape on cookie sheets keep one inch apart on sheets bake at 350 for mins
