4 The Miracle of the Matzah Ball Soup: A Frozen Tale For any of you that missed our Community Passover Seder this year, we had a great time. Even more impressive was the delicious and amazing matzah ball soup that our beloved congregant, Marge Gersten, made for us. Her recipe was incredible, and Marge really worked her fingers to the bone to get it all done. I was shocked when she agreed to do it in the first place. Marge devised a careful plan and methodically got to work, first making gallons and gallons of soup over three weekends and then moving to the matzah balls over the remaining weeks. She was still making more matzah balls the day before the Seder! Since I signed on to help store the soup and the matzah balls in my empty freezer, it became a fun and wonderful ritual to go to Marge s house each time she had a batch at the ready. She often tried to enlighten me on the fine art of soup-making, but it was truly a lost cause. Off the soup would go to my freezer. By the time I had about 10 big plastic containers in there, I started to realize just what a responsibility I had taken on. You see, the liquid really expanded as it froze, so the containers no longer had flat bottoms or tops once frozen, which meant they did not want to sit on top of each other in the freezer very well. I had to remove some of the shelving to fit everything in, but the containers were very unsteady in there. Still, things were going well and the soup froze hard in no time. Next came the matzah balls of them. These were not tidbit size matzah balls. Nope, these were glorious, large, fluffy matzah balls. I would come pick up the matzah balls that she had painstakingly frozen into single layers in freezer bags. On top of the frozen soup containers that were puffing out and rolling around in the freezer, I now added bags and bags of matzah balls. Marge gave me precise instructions on how to thaw everything out. Sadly, not precise enough for me. Even though I moved them from freezer to refrigerator 2 days before the Seder as instructed, the soup was still solidly frozen on Seder morning. I even dropped and cracked one of the squirmy containers in the process. So out they came to sit on my kitchen counters -- the first visible sign that my bad luck in culinary arts would continue to haunt me. I hoped that by noon, all would be thawed. Of course, it was not to be. I could shake the containers and see some liquid soup, but the centers were still hard blocks of ice. I naively reasoned that once I got them to CBI, I could pour the icy centers out into the pot and heat them up and all would be perfect. Yes, a good plan, except the ice centers were larger in diameter than the lip of the jars. So it was a mad dash to chisel the icy soup into chunks in order to get it out of the containers or to melt the soup with hot water baths. The plastic bags of frozen matzah balls, which had been sitting on my kitchen floor on beach towels, were also still a bit frozen. My biggest fear was that my husband Gene Burden would come stomping into the kitchen unaware and accidentally crush them on his way to the microwave. It was a stressful time at the Burden household. When Marge arrived at CBI to help out, she took one look at me and the predicament we were in and only slightly raised an eyebrow, which led me to believe she was seriously considering ways to murder me without getting caught. But nonetheless, she jumped in to assist Angie Ellis, who had taken over the process of the big thaw. I made my respectful escape by rushing home to get some things for the Seder, leaving Marge and Angie alone to fight the frozen wonderland in the CBI kitchen. Somehow, a miracle occurred that can best be explained by the fact that I removed the offending item -- me -- from the kitchen. These stalwart women persisted, and we were rewarded with the most delicious soup and matzah balls we have had at our Community Seder. I am so appreciative to Marge and Angie, who took my frozen mistakes and made wonderful matzah ball soup of them. And lest you think there was no fitting payback for the stress I caused them, I must tell you that this soupy story was not quite over after Seder. I had taken a large container of soup home and stored it on a tall shelf in the door of my refrigerator. After eating only one meal of the soup, I somehow knocked the shelf loose, whereby the whole container dropped to my floor and broke. Liquid spilled everywhere and we were flooded with matzah ball soup. So, the moral of the story is this: if you want good matzah ball soup, keep all your burdens out of the kitchen. Thanks, Marge and Angie and all the Seder Committee folks! We could not have had such a great Seder without you.
