MISSION: To be United, Empowering and Witnessing Communities. When we were informed our Rector Fr. Michael was moving from our parish, our team unanimously decided that our editorial would be to bid him farewell and thank him. For us, he had given us practical inputs to make the Record even more connected. Interview young entrepreneurs from our parish, publish pictures of couples celebrating milestone anniversaries, etc. But a post on facebook said it all. So it was decided to reproduce the same. Thank you Wendy Chaves. Editorial : He is named for an archangel....who is Defender of the Faith, so it is no surprise that he takes his role very seriously indeed!! When Fr. Michael Goveas was named Rector of Holy Name, I received a spate of phone calls (thanks to innumerable contacts at St. Andrew s) telling me what to watch out for. Apparently, he was irascible of temper and handed out short shrift to the incompetent. While that is somewhat true, getting to know Fr. Michael has been a truly enjoyable experience and an enlightening one too!! And the memories that I am happy to treasure feature a number of firsts: When Fr. Michael was inducted as Rector, he made it a point to visit each and every parishioner, criss-crossing the length and breadth of the parish to enquire after the families, pray for and bless them. The shepherd was making sure that he could identify his flock. While priests have certainly made home visits in the past, this kind of visit was certainly a first. Then, it has been my privilege to accompany the band of very dedicated parishioners who sing at parish funerals. At every funeral Eucharist, I have observed Fr. Michael come and stand by the coffin for the blessing/rite for the Dead, without exception, no matter the day or the time. Once again, a practice that, for me, was a first and one that touched me deeply. In the lead up to the Feast of the Nativity of the Blessed Virgin Mary, the Novena has now become a virtual pilgrimage, for our children, to nine shrines of Our Lady. A packed church is testimony to how popular this is for the little (and not so little) ones. How well they have come to know the apparitions and messages of our Mother Mary. Fr. Michael, it seems, cannot do enough for the children or for the underprivileged. He can be depended on to lend a hand and a very generous one at that. A man of prayer, he guards his time with the Lord very jealously but he will make exceptions for emergencies. Add to that an impish sense of humour and the love of music he drills the children s choir and a smattering of adults too, with military precision - and you have a man whose heart and priorities are certainly in the right place. And what of that irascible temper? Well, Father does not suffer fools gladly (nor should anyone, for that matter) and he tends to be abrupt, which ruffles more than a few feathers, but when he appreciates a job well done, there is joy in being acknowledged his praise is tough to earn and therefore more precious. A book should never be judged by its cover or, for that matter, by a critic s review (as I have often found out) and that is so true of Fr. Michael. There are many pages of his book still left to be read, but others will have that privilege. I wish them the joy and the adventure. God bless you, Fr. Michael and thank you! HOLY NAME RECORD 1
2 RECORD INTERVIEW The Record Interview Our new Rector is no stranger to Holy Name. And though he has not been here as a priest, part of his youth was spent here and perhaps the seeds of the vocation were sown here. The Record reporter met him to find out more. Welcome to our parish Fr. Harry. Thank you for agreeing to be interviewed and giving us an opportunity to know more about you. To begin with, could you share a little of your family background? My father, Fredrick Vaz was a Signals and Telecommunication Engineer in the Central Railway. My mother Gladys worked as a secretary and was an LTCL (Trinity College) pianist. We were a large family of eight brothers and one sister. My parents and four brothers are already with the Lord. Of the surviving four brothers, the eldest lives in the UK, one in the US and two in Canada. My sister lives in Bandra and so do her son and his family. One deceased brother s wife and daughter live in Orlem, Malad West. Our family was well grounded in faith and fellowship and home parties & picnics were real fun. Now dispersed, we remain close knit & in constant touch. We know you studied at Holy Name, and lived here. What did you do next? My family lived in Badhwar Park, Cuffe Parade from 1955 till I was a student of Holy Name High School and passed my SSC in March When my dad retired in 1966, we moved to Bandra West, in Mt Carmels parish. I joined the Seminary at Goregaon in June I also graduated in Psychology (principal) & Sociology (subsidiary) from the University of Bombay. When were you ordained? Tell us about your journey since then? I was ordained a diocesan priest on 22nd December I served as Asst. P.P at St Ignatius Church, Jacob Circle, from June 1977 till May From June 1979 till 1981 I was lecturer on probation at the Seminary. I was then deputed for higher ecclesiastical studies at the Pontifical Biblical Institute, , and obtained Licentiate in Scripture degree. Since then I was resident Professor of Biblical Studies at St. Pius College, the Archdiocesan Seminary in Goregaon, Mumbai for many years and continue as visiting Professor. I also did doctoral studies in France and obtained a Doctorate in Theology degree from the Institute Catholique, Paris, in Besides, for about five years I was Faculty member and Mentor of Power to Lead, a Christian Leadership Program for the Laity in Mumbai. I was also Rector of the Archdiocesan Seminary from 2007 till During my early years in the Seminary, besides regular lectures, I was also a formator, a group moderator and spiritual director to many seminarians. I have also given Scripture courses at the Jesuit Regional Theologate (Nashik), Mater Dei Institute for Religious Women in Goa, and Ministry of the Word and Theology for the 2 Laity in Mumbai. I felt very fulfilled and happy as a professor and a pastor. Did you miss doing pastoral work while you were deputed at the seminary for so many years? Yes I certainly missed being a pastor, but I always remained involved in some pastoral ministry all through. For instance, I was engaged in weekend ministries in different parishes, adult catechesis, confessions and counseling. I also enjoyed youth ministry during the years when Frs. Jude Bothelo and Larry Pereira were Youth Ministry directors at the Pastoral Centre. Providentially, during my early years of priesthood, I participated in sensitivity training & group facilitation workshops, Counseling and retreat guide training programs organized by the Jesuit managed Seva Niketan in Byculla. So I have been keenly involved in Youth animation, Pastoral Counseling, Sacramental Confession and personal retreat guidance. Most importantly, at my request, I had one year residential ministry in Orlem ( ), two years as Priest in charge at St Joseph s Church, Goregaon East ( ) and most recently as Parish Priest of Our Lady of Egypt Church, Kalina, ( ). I have indeed enjoyed and felt greatly fulfilled in a well balanced mixture of being a Professor of Sacred Scripture and also a pastor of God s people both in Mumbai and also abroad during my years of higher studies. What are you looking forward to do here, especially since we are comparatively a small parish (though a Cathedral) in comparison with Kalina? In size, age wise percentage, economic and intellectual levels parishes do indeed differ from one another. However, for a Parish Priest and his team every parish is a community of believers with Christ as Head of His Body, the Church. Parishioners are to be loved and served with the same dedication, devotion and joy whatever be the varying circumstances and characteristics. Compared to Kalina with a Catholic population of around 11500, the number of children, teenagers and young adults in Holy Name parish are much fewer. But the spiritual emotional and material care of all parishioners is paramount. Mutual greetings and priestly blessings before and after mass are a simple pastoral practice. At religious services as well as in other areas of sacramental, cultural and recreational activities parish clergy and parishioners can work together to foster a sense of belonging, bonhomie, personal care and comfort, and harmony in the parish community. Lay ministries and voluntary services are a great help. HOLY NAME RECORD
3 As a priority during the remaining six months or so of the extraordinary Jubilee year of Mercy, as the Cathedral of the Archdiocese, our church can be host to to individuals groups and associations from other parishes who come on Sunday mornings for a pilgrim visit to the Holy door. Some plans and preparations are in the pipe line and I have already asked parishioners to volunteer their services for an hour and a half in the Church on Sunday morning just before and after the 10 am mass. - Margaret da Costa, Editor PARISH NEWS Holy Name Cathedral Pilgrimage to West Europe PARISH NEWS To go on pilgrimage, to walk free of daily routine, to be physically present and pray at pilgrimage centres in Western Europe, to dwell on our own inner pilgrimage to God - how privileged we felt to be a part of the Holy Name pilgrimage group. Numbering just 20, like a bunch of excited kids we set out on 6th June under the guidance of Rev. Fr Caesar D Mello, our former rector. Spending a week in Italy and the balance in Spain, France and Portugal, our trip was well paced and not rushed. In this Jubilee Year of Mercy we must have passed through the Holy Doors of at least 10 Cathedrals and Basilicas. At the General Papal Audience at St. Peter s Square we raised a loud cheer, a proud moment when Holy Name Cathedral, Mumbai, India was announced to Pope Francis. We went on our knees up the 28 steps of Santa Scala, the same stairs Jesus trudged on His way to the Praetorium to see Pontius Pilate during His Passion (these steps were transferred from Jerusalem to the Lateran palace by St. Helena, mother of Emperor Constantine I in the 4 th century). We visited Lanciano in Italy where the Eucharistic Miracle occurred in the 8th century when water and wine physically changed to the body and blood of Jesus. Also at Santarem in Portugal in the 13th century a consecrated host surreptitiously taken from the church, began shedding blood. Both these miracles were subsequently confirmed by the Church. We also saw the Shroud of Jesus at Turin. We visited the shrines and basilicas of Saint Padre Pio at San Giovanni Rotondo, Saint Francis at Assisi, Saint Anthony at Padua and Saint Ignatius at Loyola. We trod the path of the pilgrim at Santiago de Compostela in Spain. We honored Our Lady spending two nights each at Lourdes in France and Fatima in Portugal. The dip in the waters of Lourdes was a very surreal experience. The sanctity of these places which attract the prayers of millions is evident. At the candlelight processions in Lourdes and Fatima and even in St. Peter s Square we became aware of so many other pilgrims praying fervently in different languages. We celebrated Mass in several chapels in the places that we visited but the most memorable one was at the Catacombs of St. Callixtus in Rome. The thought is chilling that there were so many martyrs amongst the thousands buried there in inter-twining passages 4 floors deep and it brought to mind how the seed of Christianity was sown by the blood of these martyrs. Our experience of each place was enhanced by the excellent guides who gave us a feel for the place. We thank God for the learning we gained through the whole trip and for our lovely little group, each one enhancing the journey with their gifts and talents and we take back with us many fond memories and a renewed search for inner meaning. - Mildred Soares We are celebrating Parents Day on 24 th July, There will be games with a difference in the morning after the 10 am mass for Mums, Dads as well as our dear Bachelors/Bachelorettes. 4 PARISH NEWS Jubilee Year of Mercy PILGRIMAGE TO MOUNT MARY BASILICA Fifty parishioners gathered at the Cathedral gate on 24th April, 2016, to participate in the Pilgrimage. Fr. Michael Goveas, our dynamic Rector, gave the command to the bus driver at 8.30 a.m. sharp, and we were off. The journey started with a hymn and the Rosary. As we took the sea-link, we were soon at Mount Mary Basilica, where we prayed the Mercy Prayer at the Door. Then we entered the Church for the 9.30 a.m. Mass. After Mass, we solemnly re-entered the Door of Mercy in procession, singing Enter His Gates, and participated in the Prayer Service. The first part consisted of Gospel readings, contemplating Jesus as the merciful face of the Father. In the second part, we were exhorted to come to terms with the fact that it is not enough only to experience the mercy of God, but we need to try to become Merciful like the Father as the motto of the Jubilee Year suggests. An Examen on the Corporal and Spiritual Works of Mercy followed, concluding with the Our Father, asking the Lord to help us gain the graces of the Jubilee Year. We were then treated to a delicious chicken roll and a hot cup of tea, and boarded the bus, heading for the Church of our Lady of Good Health, Versova. There we made the Way of the Cross on the open ground behind the Church. The stations cover a large area and are beautifully constructed and conducive to reflection and prayer. Despite the hot sun at 12 noon, we felt the refreshing presence of the Lord, who loves and cares for us. Lunch followed sumptuous food, well prepared by the kind parishioners of the Versova Church. After a visit to the Church and the Blessed Sacrament Chapel, we visited the House of Charity run by the dedicated sisters of the Minor Carmelites of Charity, where children and adults who are physically and mentally challenged are cared for. The special children inspired us with their spirited dancing and their cheerfulness. The Sisters are doing an excellent job, looking after their charges, who can do almost nothing for themselves. How little we appreciate our own health and wellbeing! We donated cash and non-perishable items to the House of Charity. We then started our journey back, singing and joking and dozing. On Marine Drive, we stopped for a cool treat of ice-cream, and reached back at 4.00 p.m. sharp, as promised. Praise the Lord and a Big THANK YOU dear Father Michael. - Jeanette Fernandes Maundy Thursday Feet washing ritual or more. Our beloved Pope Francis last year pleasantly shocked people all around the world when he undertook to wash the feet of prisoners of both genders for Maundy Thursday. He had not only moved away from tradition as it was understood, earlier, but taught us the true meaning of servant leadership. Earlier this year, Pope Francis had decreed that women could officially partake in the traditional foot-washing ritual on Maundy Thursday. Accordingly, our Rector and the parish pastoral team decided to follow suit. The Pre-chosen among the people of God in our parish constituted six women and six men. When I was informed that I was one among them, I thought it was a prank. Realization hit me only when Fr Michael, our Rector, notified me formally. I refused initially, uneasy even at the thought of an elder touching my feet, let alone washing them. It took a few talks to understand the double significance of this service and finally I humbly accepted. Thrilled as I was to participate in this ritual, it only marked the onset of a great deal of discomfiture. The single piece of advice I ever received in preparation for the day... Wash your feet well! Everything was fine with me on Maundy Thursday until that moment when the ceremony was about to commence. Never before had I experienced such a nerve-wracking moment. Although I understood the true meaning of this significant gesture, I failed to silence the battle of emotions going on inside of me. My foot washed by the Bishop-I was humbled. Honestly, it didn t feel any different then. A few incidents that took place since that day made me realize that I had changed... especially in terms of perception and understanding. Till then I was only teased as discerning religious life; now people think that the convent is my destination. And here I am; still praying for my vocation... - Jovita D Sa 4 HOLY NAME RECORD
5 PARISH NEWS Dear Austin, you will be missed... Austin Lobo was a part of the editorial team of the Holy Name Record ever since it began in its current avatar nine years ago. When Fr. Caesar came to our parish as Rector, it was suggested that a parish with so much writing talent should have more contributions from its parishioners. Accordingly, the journalists and aspiring writers were rounded up to make up an editorial team. A few issues later, Austin, Primrose and I were the ones who remained. His job took him to Bangalore for a while, but he came back to the team when he returned to Mumbai. Austin was deeply involved in the work of the St Vincent de Paul Society (SVP), and many of his articles were about the work the organisation did; helping the underprivileged was a great labour of love for him. His articles always wowed us with their different yet from the heart approach. But not everything was smooth sailing; umpteen reminders had to be sent and the promised article always appeared only on deadline day! Still, each was so beautifully written that we could not complain at all. This article is not just about Austin, but also about his wonderful neighbours Merlyn and Yazdi Malu, who have demonstrated the true meaning of the Christian exhortation: Love thy neighbour as thyself. First, over months in the hospital, and, later, in their own home, Merlyn and Yazdi looked after and watched over Austin as if he were their own flesh and blood, never stinting time nor effort in their care of him. Our admiration and gratitude mirrors what Austin s brother, Bento, wrote about Austin, and Merlyn and Yazdi. Today, a part of me died. Austin Lobo, my dear brother, lost his battle with multiple myeloma. With the best efforts of his angel caregiver, Merlyn Malu, he fought the good fight with his characteristic smile and good humour. Merlyn, with the support of her husband, Yazdi, fed him, cleaned him, took him to his bi-weekly dialysis trips to the hospital, and made him as comfortable as she possibly could. Thank you, Merlyn and Yazdi, for taking care of my brother in his time of need. May God bless them abundantly for their kindness. And, Austin, rest in peace. Margaret da Costa - Editor Community Roundup COMMUNITY NO. 1: St Michael - Retired but never tired of serving the Lord Support your priests with love and prayers, that they may always be shepherds after Christ s heart - Pope Francis The season of Lent is not merely about abstinence and penance, but also about performing deeds of love and kindness. On Sunday the 6th March, twelve members, comprising of seniors and a few youth from St. Michael s Community (Gateway, Merewether Road and Fort areas) paid a visit to the priests at the Clergy Home, Bandstand, Bandra. On arrival at 5.00 pm, we were greeted by a young nun, who welcomed us and showed us around. We first met the highly talented Msgr. Vincent Gonsalves - a musical maestro. Despite being 96 and restrained to his bed, he was full of enthusiasm and regaled us, by playing tunes to hymns like Here I am Lord and O give thanks to the Lord, that we happily sang along to. We moved on to the Infirmary, where it was sad to see these brave soldiers of Christ, almost having reached the last stages of their earthly journey. We sang a few hymns which were appreciated by them. Moving to the upper floors, we met with Fr. Jude Pereira who animatedly narrated some of his intriguing life stories. We also met Frs. 6 COMMUNITY ROUNDUP and Denis Pereira who mused over their priestly years at the Cathedral. Both, still blessed with good memory, recognized some of us. We then met Fr. Brian Fernandes, who welcomed us with a broad smile, shared a few quizzes he had prepared on educational institutions in Mumbai, and blessed us individually. The humourous Fr. Bernard Rodricks, met us and told us, how he still continues to provide assistance to the Marriage Tribunal. He joined us in a short prayer for the complete and speedy recovery of our beloved Oswald Cardinal Gracias. COMMUNITY NO. 2: Little Flower - Blessing of Water Mass On 1st April our Little Flower Community had the Blessing of Water Mass at the Holy Name School Hall. Rev. Fr. John Lopes, our Spiritual Director celebrated The two hours spent with the Priests was a good Lenten exercise. May we never forget to pay tribute to these extraordinary men, our shepherds, who dedicated their lives in serving Jesus Christ, and whose loneliness is hidden away from us. On Wednesday, 16th March, 2016, during the season of Lent, Stations of the Cross were conducted by the Animators with the homebound parishioners of our community. This brought them immense joy as they could participate in the prayers at home. - Kevin Braganza the Mass while our choir ably accompanied by Wendy at the organ sang the hymns. The community actively participated in the service. Fr. John gave us a thought-provoking homily on the resurrection of Jesus and the three occasions He appeared to his disciples. It was interesting because Father interacted with the community with regard to their views on this subject. After Mass, Father blessed the water which was distributed to the community. The highlight of the fellowship that followed, was a small felicitation for Fr. John since, by a happy coincidence, the 26th anniversary of his ordination was on the same day. A cake was presented to a beaming Fr. John, which he cut to loud applause. Whilst Father had earlier blessed the congregation by sprinkling holy water on them, the congregation now reciprocated, tunefully invoking Showers of Blessings on him. On that happy note, the evening came to an end. - Claudette Nariman COMMUNITY NO. 5: St. Mark - Visit to Piety Home On Saturday, 5th March, 2016, some of our community members visited Piety Home at Thakurdwar, a home for the aged that currently houses 13 inmates: 11 ladies and 2 gents. The atmosphere was very peaceful, and the surroundings clean and well-maintained. Our community leader Hilda started with a prayer, followed by a small snack of Mariette s homemade sandwiches which they really relished. After a round of introductions, we spent a wonderful two hours singing, dancing and also played a game of housie which the inmates enjoyed thoroughly. Most of those staying here are able to do things for themselves but have nowhere to go and also have some health issues. They get healthy home-cooked food as a cook comes daily to prepare their meals. One of the inmates, Joaquim was celebrating his birthday. As he cut the cake we all sang for him and shared in the celebrations. We distributed some snacks and items of daily use that we had brought with us. Next followed a sing-song session both in Konkani and English in which all took part. Everyone was very excited to be in the big picture. We ended with Bind us Together and a prayer for each of them. Melissa, one of the ladies there expressed her thanks on behalf of the group and requested us to come again, which we promised we will. It was a morning well spent and was a touching and emotional time for everyone. - Sharon Pires 6 HOLY NAME RECORD
7 COMMUNITY ROUNDUP COMMUNITY NO. 5: St. Mark - Annual Feast Mass On the 25th of April, we celebrated the feast of our patron saint St. Mark the Evangelist. Fr. Nigel celebrated the mass and blessed the water after an inspiring and motivating homily. The celebrations and fellowship were to be held in the Holy Name School hall, but the caretaker inadvertently locked the hall, and could not be reached. Fortunately, Sr. Arina very kindly allowed us the use of the Fort Convent school hall. Discouraging and disappointing, though it seemed, God had a plan to prove to the community that if we are united in His name, we can be happy even in adverse circumstances. And that is exactly what happened He makes all things beautiful in His time. COMMUNITY NO. 9: Our Lady of Immaculate Conception In this Extraordinary Jubilee Year of Mercy, on 15th April 2016 we were happy to visit the Clergy Home at Bandra to give thanks to all our former active priests. We shared the snacks that we had carried and entertained their special requests. They shared various jokes and riddles with us. Truly missed the presence of Bp. Ferdy, Msgr. Tony Cordeiro, Fr. Godwin, Fr. A.V. and Fr. Ivo whom we had met during our previous visits and who are no more. At Blessed Sacrament Chapel on 21st April, our community members came together to celebrate the Eucharist and special Easter Blessing of Holy Water to bless our Homes and to join in the fellowship thereafter. Special thanks to Fr. Michael Goveas. Youth SUMMER CLUB 2016 The concept of playing has evolved over the years from actual to virtual... our dear Fr. Michael just asked us, why are you not doing anything during the summer holidays? Start the Summer Club he said. We started brainstorming on all the activities that we could put up. And to give a little break to the tech games, we organised a Summer Camp for all age groups. Smaller kids were taught to be crafty Although our music system would not work, we enjoyed boiled gram and group games to the strains of live classical music provided by children who were having their scheduled music classes in the hall. Even after the children left, we continued with our programme of games, housie, etc. planned by the core group. There were lots of prizes and surprise gifts. After collecting the holy water and the prayer sheet to bless our homes, we went home with a packet of snacks. Thank you God for all the blessings You have bestowed on our community and for our leader, Hilda Pinto, who has served the community for three terms, with dedication and commitment. As a family, we have grown under her leadership and guidance. I personally have learnt to share, care and not to get upset when things don t go according to plan. A big thank you to Sr. Arina; to Genevieve for arranging the music though we could not play it; to our Rector Fr. Michael for his help and support; and last but not the least, to our spiritual director, Fr. Nigel. - Mariette Pais At Easter we reached out to our home-bound members. Thank you Jesus and Mother Mary for being ever present in our midst. Continue giving us the strength to participate, whenever possible, at our various Parish events. - Liane Remedios Pages with Origami. We also tested their running skills with outdoor games. The older kids were enjoyed playing Badminton, Table Tennis and Basketball. The Youth and the children were interacting and the kids wanted to stay and play for a longer time... and time just runs too fast when we are all having fun. The parents were quite happy for what we the Uth were doing. They gave us very pleasant and good feedback because they could see their children playing on the ground rather than just sitting on the couch and playing video games. 8 YOUTH PAGES to Fr. Michael, Fr. John Lopez for allowing us to use the school sports room, equipment, class rooms and grounds and Fr. Nigel for encouraging us to do our best and supporting us in all that we do. Youth Camp at Panchgani Vanessa D souza The Uth of the parish visited Panchgani for our camp organised by Fr. Nigel. This was a memorable experience for all of us for quite a few reasons. Firstly, it was a wonderful break from the scorching heat of Mumbai. We were also accompanied by Mr. Max Fernandes who conducted mind blowing ice breakers a light hearted way of understanding and knowing our group along with an appetizing lunch. In the evening we visited Table Land, clicked pictures and had an awesome Panchgani specialty Strawberry & Cream. The next day started off with some exercises that kept us energised the whole day. These sessions were conducted by Fr. Nigel. They included building a man out of stones and making a human pyramid. This was a great way of testing our physical strength, team work and getting to know how inventive the group can get. After lunch, we travelled by the Local Bus to The Mapro Farm at Mahableshwar. It was an enlightening experience. After dinner, we lit a bonfire that brightened up the night along with the comforting warmth. It was great fun barbecuing marshmallows and jacket potatoes... Like they say, all good things must come to an end, and we had to leave this beautiful paradise with a very heavy heart but with a suitcase filled with great memories. We thank Fr. Michael, Fr. 10 RECIPES Recipes - Perfect for the monsoon CORN TIKKIES INGREDIENTS: 1 teaspoon cumin 1 piece ginger 1 tablespoon fat 1 teaspoon cinnamon powder 1/2 capsicum 1 onion, chopped 1/4 teaspoon asafoetida 2 green chillies 2 tablespoons grated coconut 2 cups (approximately 400 gms) corn 4 tablespoons cheese 1 tablespoon butter FOR THE COVERING: 5 boiled potatoes Salt to taste 1/2 teaspoon garam masala 1 tablespoon butter 1 cup powdered breadcrumbs 1/4 teaspoon dry mango powder 1/4 teaspoon pepper powder Juice of 1/2 a lemon 1 tablespoon milk METHOD: Heat the ghee in a pan. Add the jeera, asafoetida, ginger and chillies. Fry the chopped onion till brown. Add boiled corn, salt and dalchini powder. Cover and cook. Add the cheese and butter. Keep aside. Mash the boiled potatoes. Add dry mango powder, salt, pepper, garam masala, lemon, butter and milk. Mix well. Shape into cups and place a tablespoon of the corn mixture in it. Seal the edges and make into a smooth ball. Flatten, coat with breadcrumbs and shallow fry till brown and crisp. STUFFED SWEET POTATO PAKODA INGREDIENTS: Sweet Potato 2 to 3 Grated green chilies - ½ tsp. minced grated cheese - ¼ cup ajwain - ¼ tsp oil to deep fry Cauliflower florets - ½ cup minced Garlic - 1 tsp. besan (chick peas flour) - 1 cup chili powder - ½ tsp. cooking soda - ¼ tsp salt and pepper as per taste METHOD: Peel the sweet potato and cut into 5 cm long pieces. Cut these pieces into ½ cm thick slices. Slit the slices carefully in the middle, keeping it uncut at one end. (like two thin slices held together at one end.) Combine cauliflower, cheese, garlic and green chilies together. Add salt and pepper to taste. Mix besan with corn flour. Add chili powder, ajwain, salt and soda. Add water and make mix to a smooth coating batter. Stuff the sweet potato slices with cauliflower mixture, dip in batter and deep fry. Drain well and serve with mint chutney. 10 HOLY NAME RECORD
11 RECIPES DRY FISH CURRY FOR TEMPERING: 1 medium Onion 2 tbsp oil 1 Small Tomato- chopped (optional) Salt to taste INGREDIENTS: 350 grams Dry fish (Can use thate/shark) Grind together : 1 cup Coconut 2 tsp roasted Coriander seeds 15 roasted Peppercorns 5 cloves of Garlic (with peel) Lemon size Tamarind 7 to 8 roasted Red chilllies 1/4tsp roasted Cumin seeds 1/4 tsp roasted Fenugreek seeds (methi) 1/2 tsp Turmeric powder METHOD: Soak the dry fish in hot water for 30 minutes to remove excess salt. Remove and cut to desired size. Place a pan on medium heat, add oil when hot add chopped onion and fry till it turns dark brown. Then add tomato which is optional and fry for 2 minutes. Add the ground paste and fry for few minutes till the raw smell disappears and oil leaves the sides of the masala. Now add the fish and enough water to get desired consistency. Add salt and bring the curry to a boil. Remember that the dried fish is salty. Serve with rice, preferably with brown rice. VORN INGREDIENTS: 1 cup rice 1 cup moong or channa dal ½ kg jaggery 1 large coconut 1 cup cashew nuts 5 to 6 cardamoms powdered Salt to taste METHOD: Wash the rice and soak for at least an hour. Grind to a fine paste. And Grate the coconut and grind to a paste and remove the first extract of thick milk approximately 2 cups. Grind the paste again adding water and extract the thin milk (about 3 cups). Wash the dal and boil along with the thin coconut milk, adding some water and a little salt, till well cooked. Remove scum, if any. Add the jaggery and simmer till the jaggery is melted. Add the rice paste gradually, stirring all the time, till the mixture thickens and is cooked. Then add the thick coconut milk and cardamom powder and simmer for 5 to 7 minutes stirring constantly. HOLY NAME RECORD 11
