3 C olum b ie t te News Dear Sister Columbiettes, Our January Business meeting was cancelled due to some of our sisters being ill and causing poor attendance. The few of us who came to the council Were not enough to hold a meeting, so it was shelved. We will hold our February business meeting on Monday, February 11th. Please mark your calendar. On Friday, February 8th, we are planning another Night At the Races. Time- 7:30 pm. Cost - $15 per person. This time of year, we cannot predict the winter snows so hopefully, weather permitting, we will have a fun-filled evening. Contact Mary Contini at , or Joanne Toigo at for reservations. Since we will not have a meeting before Feb. 8th, contact Mary or Joanne to let them know you will attend. Dues are in order for $15. Please make your check out to Joseph B. 4 New!! Now Hear This! Council News Something new at Cavallaro. Besides posting our members birthdays in the bulletin, the Council will celebrate the members birthday at the business meeting of the birth month. Come join us for a special cake in your honor. 53 rd Annual Dinner & Dance Save the date: April 14, Joseph B. Cavallaro Council will be celebrating its 53rd Anniversary with its Annual Dinner and Dance. Preparations are being made now and help is needed. As we do every year, a Journal will be prepared and prize donations are being requested. Please contact General Chairman Bob Vezzuso, PGK at for information and reservations. The committee is being formed and more information will follow. There is not a lot of time left. Price has yet to be determined, but every effort will be made to keep it reasonable. We will once again hold the event at Sirico's right here in the neighborhood. Watch your mailbox. 5 Super Bowl Party February 3rd is Super Bowl Sunday!!! We will be having a party at the council. There will be hot food, an open bar, poker games, raffles and the big game on the big screen TV. The party is open to non-members so bring your family and friends. Advance Tickets are $20 Tickets will be $30 at the door. Fantasy Baseball Cavallaro Council s fantasy baseball league is coming back. Last year 14 teams slugged it out. This year we are hoping for more. Don t worry if you have never played before. We will teach you and help you along. The league is open to members and non-members of the council. If you would like to play, know someone who might want to play or if you have questions please contact Enrico Bolognino at or enricob@cavallarocouncil.com for more info BINGO IS UP & RUNNING The Council is counting on all those who volunteered to work Thursday Night Bingo s. Please contact Chairman Carl Bartolotti at or for any additional information Financial Secretary News Dues notices have been mailed dues are now due. - Please pay your dues promptly to maintain your good standing in our order and our council. Membership is the life blood of the Knights of Columbus. Each council pays to both Supreme and State councils a per-capita fee. These fees are used to subsidize the good works our order does in promoting Catholic values and helping the needy around the world. Your dues help pay these fees and also subsidize the work our council does in our community and our parish. Your membership in our order also builds strength in numbers in the fights against the forces that are trying to undermine our values. CHRISTMAS WREATH SALES The wreath sales went really well this year. We sold wreaths and blankets in front of St. Athanasius and St. Dominic s. We sold a total of 142 wreaths and 20 blankets. We raised a nice amount of money to help us out in doing our charitable deeds in the upcoming year. The weather was good, we had some Christmas music playing during the sales getting our brother Knights and customers in the spirit and had a good time. Another special thanks goes out to Jerry Mandaro who supplied the transportation and storage of the wreaths and blankets. I hope everyone had a very Merry Christmas and has a Happy and Healthy New Year. - Mike Nuccio An n u a l Ad u l t C hristmas Party Our Annual combined Knights/Columbiettes Christmas party was a great success. The council was beautifully decorated for the festivities. We had a great turnout of 56 people attending. Thank you to all who donated gifts for the raffle table. It was a fun filled night with great food, great raffles and great people. Santa himself even stopped by to say hello for a while. Many thanks to Phil Randazzo, Tony Corso, Mary Contini and Joanne Toigo for helping put this great night together. Also a thank you to everyone who donated something and participated in event. M i k e N u c c i o Palm Crosses and Easter Plants On Palm Sunday (3/24) and Easter Sunday (3/31) we will be selling Palm Crosses and Easter plants respectively in front of St. Athanasius after all morning masses. This is a big fund raiser for our council. HELP IS NEEDED. 7 EATING OUT When the bill arrives, Mike, Dave and John will each throw in $20, even though it's only for $ None of them will have anything smaller and none will actually admit they want change back. When the girls get their bill, out come the pocket calculators. MONEY A man will pay $2 for a $1 item he needs. A woman will pay $1 for a $2 item that she doesn't need but it's on sale. BATHROOMS A man has six items in his bathroom: toothbrush and toothpaste, shaving cream, razor, a bar of soap, and a towel. The average number of items in the typical woman's bathroom is 337. A man would not be able to identify more than 20 of these items. ARGUMENTS A woman has the last word in any argument. Anything a man says after that is the beginning of a new argument. FUTURE A woman worries about the future until she gets a husband. A man never worries about the future until he gets a wife. SUCCESS A successful man is one who makes more money than his wife can spend. A successful woman is one who can find such a man. MARRIAGE A woman marries a man expecting he will change, but he doesn't. A man marries a woman expecting that she won't change, but she does. DRESSING UP A woman will dress up to go shopping, water the plants, empty the trash, answer the phone, read a book, and get the mail. A man will dress up for weddings and funerals. NATURAL Men wake up as good-looking as they went to bed. Women somehow deteriorate during the night. OFFSPRING Ah, children. A woman knows all about her children. She knows about dentist appointments and romances, best friends, favorite foods, secret fears and hopes and dreams. A man is vaguely aware of some short people living in the house. Very interesting and shows how much we don't know about the symbols of our country and how our founding fathers arrived at their decision(s). Who Was Haym Solomon? On the rear of the One Dollar bill, you will see two circles. Together, they comprise the Great Seal of the United States.The First Continental Congress requested that Benjamin Franklin and a group of men come up with a Seal. It took them four years to accomplish this task and another two years to get it approved. If you look at the left-hand circle, you will see a Pyramid. Notice the face is lighted, and the western side is dark. This country was just beginning. We had not begun to explore the west or decided what we could do for Western Civilization. The Pyramid is uncapped, again signifying that we were not even close to being finished. Inside the Capstone you have the all-seeing eye, an ancient symbol for divinity. It was Franklin 's belief that one man couldn't do it alone, but a group of men, with the help of God, could do anything. 'IN GOD WE TRUST' is on this currency. The Latin above the pyramid, ANNUIT COEPTIS, means, 'God has favored our undertaking.' The Latin below the pyramid, NOVUS ORDO SECLORUM, means, 'a new Page 8 of 20 Always Remember 9/11/01

9 order has begun.' At the base of the pyramid is the Roman numeral for (MDCCLXXVI) If you look at the right-hand circle, and check it carefully, you will learn that it is on every National Cemetery in the United States. It is also on the Parade of Flags Walkway at the Bushnell, Florida National Cemetery, and is the centerpiece of most heroes' monuments. Slightly modified, it is the seal of the President of the United States, and it is always visible whenever he speaks, yet very few people know what the symbols mean. The Bald Eagle was selected as a symbol for victory for two reasons: First, he is not afraid of a storm; he is strong, and he is smart enough to soar above it. Secondly, he wears no material crown. We had just broken from the King of England. Also, notice the shield is unsupported. This country can now stand on its own. At the top of that shield there is a white bar signifying congress, a unifying factor. We were coming together as one nation. In the Eagle's beak you will read, ' E PLURIBUS UNUM' meaning, 'from many - one.' Above the Eagle, we have the thirteen stars, representing the thirteen original colonies, and any clouds of misunderstanding rolling away. Again, we were coming together as one. Notice what the Eagle holds in his talons. He holds an olive branch and arrows. This country wants peace, but we will never be afraid to fight to preserve peace. The Eagle always wants to face the olive branch, but in time of war, his gaze turns toward the arrows. An (untrue) old-fashioned belief says that the number 13 is an unlucky number. This is almost a worldwide belief. You will almost never see a room numbered 13,or any hotels or motels with a 13th floor. But think about this: America, which relies on God (not a number) to direct and lead, boldly chose: 13 original colonies, 13 signers of the Declaration of Independence, 13 stripes on our flag, 13 steps on the pyramid, 13 letters in 'Annuit Coeptis', 13 letters in ' E Pluribus Unum,' 13 stars above the eagle, 13 bars on that shield, 13 leaves on the olive branch, 13 fruits, and if you look closely, 13 arrows. And finally, notice the arrangement of the 13 stars in the right-hand circle. You will see that they are arranged as a Star of David. Always Remember 9/11/01 Page 9 of 20

10 This was ordered by George Washington who, when he asked Haym Solomon, a wealthy Philadelphia Jew, what he would like as a personal reward for his services to the Continental Army. Solomon said he wanted nothing for himself, but he would like something for his people. The Star of David was the result. Few people know it was Solomon who saved the Army through his financial contributions...then died a pauper. Haym Solomon gave $25 million to save the Continental Army, money that was sorely needed to help realize America s our- freedom and independence from England. Therein lies America s Judeo-Christian Most American beginning. children do NOT know any of this. They are not taught because their history teachers On America s Freedom: Too many veterans gave up too much to let the meaning fade. Too many veterans came home to an America that did not care. Too many veterans never came home at all. They served, they died for you for me. I hope you will share this page with many-so they can learn about the UNITED STATES DOLLAR BILL, and what it stands for. America is at a critical juncture. Let's do whatever we can to save her while never, ever forgetting: It is God in whom we put our trust! 11 September 11 A day we will never forget. A day of remembrance for the Hero s who gave their lives in order to the help others and for the thousands of innocent men, women and children who perished that day and on days past and yet to come, at the hands of extremist. Let no life lost ever be in vein Let us remember their sacrifices forever In time to come, our Council will receive a special artifact which we will present to St. A s Church for permanent installation and another in our Council chambers.. These Memorials will hold a special place in our hearts; as it may very well be the only one of its kind in the Knights of Columbus in Brooklyn or even elsewhere. 13 Chicken Saltimbocca Alta Bella Style By Carl Bartolotti INGREDIENTS 8 Boneless Chicken Breast Cutlets; approx. 4oz. each ½ - Cup of All Purpose Flour 8 - Thin slices of Proscuitto 8 - Lg. Fresh Sage leaves 1 tsp. Dried Thyme 4 - Tbs. Vegetable Oil ½ - Onion minced 1 - Cup Port wine 1 - Tbs. Fresh Lemon juice 3 - Tbs. Unsalted Butter; cut into 3 pieces and chilled 1 - Tbs. Minced Fresh Parsley Salt & Pepper Method 1. Pre-heat oven to 200 degrees 2. Pat dry cutlets and season with salt & pepper 3. Attach the Proscuitto and Sage to each cutlet with a toothpick 4. Dredge through flour to coat, shake off any excess 5. Heat 2 Tbs. of Oil in a 12 inch skillet over medium high flame until oil is hot enough but not smoking 6. Add cutlets and fry until golden brown, about 3-4 minutes on each side. Transfer to a plate and keep warm in the oven. 7. Add onions and ¼ tsp. of salt to the oil left in the skillet and return to a medium high heat, and heat onions for about 2 minutes. 8. Stir in the Port wine, and the Thyme and scrape up any browned bits and simmer for about 8 minutes to reduce to a syrupy consistency. 9. Stir in the Lemon juice and any accumulated chicken juice. Turn the heat to low and whisk in the butter, one piece at a time. Remove from heat and toss in the Parsley and salt & pepper to taste. Spoon over the cutlets and serve.
