2 Chametz Chametz is fermented or leavened wheat, rye, oats, spelt and barley. When these grains come in contact with water, they leaven (begin to rise) within 18 minutes. In the case of hot or salted water, leavening takes place instantly. Chametz may not be consumed either by eating or drinking and may not be held in one s possession, nor may any benefit be derived from chametz. Please arrange for the sale of your Chametz through your Rabbi. For additional help, please call the Vaad at * The following must ALWAYS be considered chametz, and therefore MUST BE REMOVED FROM SIGHT AND OWNERSHIP, as well as T EATEN during the entire Passover holiday: beer and alcoholic beverages; bread; cakes; cereals; crackers; grains (wheat, rye, barley, oats except when specially prepared for Passover matzah baking); noodles; spaghetti products; soy sauce. * Chametz may be purchased after Passover from the following stores: Walmart s, Sam s Club, CVS, Target, K-Mart, Hannaford, Petsmart, Walgreens, Rite Aid, Price Chopper (Shtar Mechira effectuated), Shop-Rite. Quinoa: Healthy and Gluten-free for Passover As quinoa, a plant similar to spinach, has become more available, questions have been raised whether the cultivating and commercial preparation of the product has been compromised by coming into contact with wheat. Some Halachic authorities have become concerned and have removed quinoa from the recommended list of products. Others stand by earlier investigations which separated quinoa from all other products by cultivation and distribution. Our Vaad remains convinced that quinoa is acceptable to be used on Pesach but must have Passover supervision. Quinoa is prepared similar to couscous (forbidden to all on Passover), can be served like rice (not eaten on Passover by Jews of European descent), but must be purchased only from sealed packages, not from open bins. It is recommended that prior to Passover, consumers check for and remove any extraneous matter from quinoa (stones, wood, etc.). Fresh Vegetables Vegetables such as leafy greens (including parsley and especially lettuces), broccoli, artichokes and cauliflower require careful washing and diligent checking to remove any insects and worms. A light box and vegetable wash is suggested to help augment available light. There has been infestation found this season. Call the Vaad office, , for details only. Very Veggie Salad contains peas and is kitniyot. Frozen Vegetables P certified salads are Kosher for Passover. Frozen vegetables require Passover supervision since pasta blends are made on the same equipment. It is also important to know that there are many frozen vegetables that require insect inspection. Please contact the Vaad for extensive details about this important issue. Frozen Fruit (unsweetened whole or pieces) with no additives do not require special supervision. The Kashruth standards of the Vaad Hakashruth of the Capital District are determined soley by its Rav HaMachshir (certifying Rabbi), Rabbi Moshe E. Bomzer. The general policy and responsibilities of the Vaad Hakashruth of the Capital District are determined by a group of lay people from member synagogues who form the lay leadership of the Vaad. The officers of the Vaad work closely with its Rav HaMachshir to ensure a well-functioning Vaad. How does an establishment become Vaad certified? This varies with each case, but always the owner of the establishment must contact the Vaad office ( ) and fill out an application. The Vaad will then investigate the feasibility (if any) of Vaad certification. This investigation will include a visit to the establishment. While the Vaad s standards are set by its Rav Ha Machshir, the Vaad is indebted to the Chicago Rabbinal Council, the Vaad HaRabonim of Flatbush, and most specifically, to Rabbi Zushe Blech for his many insights and advisements about Kashruth issues for Passover and all year round. 2

3 KITNIOS Enzymes, Vitamins, Flavors and Other Complex Issues Microbiology has played a great role in the advances in food technology in the past few decades. Food scientists have identified numerous microorganisms which can either serve as or help to create enzymes, vitamins (e.g. Riboflavin, Vitamin B12), flavorful chemicals (e.g. MSG), and other items (e.g. xanthan gum, citric acid, yeast). In addition, scientists have learned new ways to react chemicals with one another (and use other methods) to create emulsifers, acidulants, sweeteners, flavors, and other chemicals (e.g. polysorbates, ascorbic acid, aspartame, esters, magnesium citrate). This technology has allowed food scientists both to create an array of foods which were inconceivable fifty years ago, and to improve on the way that they produce older foods. Of all these items, enzymes have arguably had the most far-reaching affect. Enzymes are chemicals which act as a catalyst for change in other items. A common example is rennet, which causes milk to coagulate into cheese, but the range of uses goes well beyond cheese. For example, one enzyme liquefies and sweetens corn into corn syrup, so that another enzyme can make it even sweeter and become the high fructose corn syrup used to sweeten soft drinks. Another enzyme is used to create the right kind of sugar molecule so that hard-candies will not stick to the wrapper, and yet another one ensures that beer does not get cloudy when it is refrigerated. The kashrus issues raised by all of this technology are beyond the scope of this article, but one issue is quite relevant to our discussion. One of the prime ingredients used in making just about all of the items discussed above is glucose (a.k.a. sugar). Glucose can be created from any starch, which means that these items may be wheat (chametz), corn or rice (kitniyot), sweet potatoes (kosher for Pesach), or something else, depending on what is available in the country where the glucose is being produced. This issue is further complicated by the emergence of the global marketplace, where it may be cheaper to buy xanthan gum from France or China than from the local producer. Additionally, many of the ingredients listed above are used in tiny proportions, which would theoretically be batel b shishim, and Poskim have taken different positions as to which of these serve as a davar hama amid and/or a milsah d avidah lit amah, which cannot be batel. In light of the seriousness of eating chametz on Pesach, it is obvious that no one would consider eating any food on Pesach which contains (or may contain) any of these ingredients, unless the food is certifed as kosher for Pesach. [Many children and adults must consume baby formula, soy/ rice beverages, or nutritional supplements (which cannot be certifed for Pesach since they contain kitniyot) and require information as to whether those items contain chametz. That issue is beyond the scope of this article but see listings elsewhere in this Guide for more information on specific items.] Some Rabbonim say that for the same reason one should not own any of these items on Pesach, but as noted above regarding vinegar, others argue that one may rely on the fact that the overwhelming majority of these items sold and used in the United States do not contain chametz (although they contain kitniyot). As with all matters of halacha, one should consult with a local Rav. custom by their traditions. Canola oil is kitniyot. The consumption of these foods is restricted by long standing European rabbinic tradition, though these foods are not chametz. Unlike chametz, benefit from and possession of kitniyot during Passover is permitted. This is also true of all products bearing the acceptable symbols of kashruth for Passover, as listed herein.

FOODS The following may be used for Passover without special Passover certification (unopened containers only). However, it is strongly recommended that these be purchased BEFORE Passover: BICARBONATE OF SODA - any, pure; COCOA - any 100% pure (no additives whatsoever; not from Europe); DISTILLED WATER - any; FISH (raw, frozen and unbreaded) - any with reliable Kosher supervision; FLAX - any (consumers are urged to check for and remove any extraneous matter from flax prior to Passover); FROZEN FRUIT - unsweetened, 100% pure, whole, sliced or formed, no additives or syrup; ICE - bagged - any from plain water; JUICES (frozen) concentrate - any 100% orange or grapefruit (no additives whatsoever); NUTS (raw) whole, chopped or ground varieties (except pecans and peanuts); no additives whatsoever; OILS - extra virgin olive oil; POULTRY (raw, fresh or frozen) - any with reliable Kosher certification except Empire raw ground turkey (unless indicating Kosher For Passover); SALT - any non-iodized, without dextrose or polysorbate; SELTZER - any unflavored; SPRING WATER - any pure, unflavored; SUGAR - all 100% pure granulated cane sugar (check ingredients carefully), no dextrose; TEA - all non-decaffeinated, unflavored 100% pure tea bags (not herbal teas ). Brown sugar requires special supervision. Sweetners accepted: Gefen and VIPMaster. When soy (which is a legume and normally is not eaten by Ashkenazim) is required, Vitasoy SanSui Original Natural and Soy Dream Original do not have any chometz ingredients. 3. FOODS The following may be used for Passover. (These brands only previously unopened containers only). However, it is strongly recommended that those without specific Passover endorsement be purchased only before Passover: BABY FORMULA (use separate utensils; wash in separate sinks) - Prosobee, Similac, Enfamil, Isomil; BROWN SUGAR - Domino with P; FRUIT, Dried - Ann s House of Nuts with P, Del Monte Raisins (Natural, Golden), Dole Raisins (Natural, Golden), Homa P; Nature s Harvest (with P), Nature s Original (with P), Sun (with P); LACTAID MILK (liquid) - must be purchased before Passover; LEMON AND LIME JUICE - Realemon Juice (liquid); MAPLE SYRUP - Adirondack with P; MINERAL WATER (Flavored) - Perrier with P; NUTRITIONAL SUPPLE- MENTS (use separate utensils, wash in separate sinks) - Ensure (when prescribed by physician), Glucerna (when prescribed by physician); TEA - INSTANT POWDER (unflavored, regular or decaffeinated) - Nestea; TEA - DECAFFEIN- ATED (unflavored). 4. N-FOODS The following may be used for Passover without special Passover certification (use unopened container only): Aluminum foil, aluminum foil baking pans, baby ointments, bags (paper or plastic), body wash, bowl and tub cleaners, candles, cardboard, carpet cleaners, charcoal, conditioners, copper and metal cleaners, cork, cosmetics (except possibly lipsticks), cupcake holders, cups (paper, plastic or styrofoam), detergents, dishwashing detergents, drain openers, fabric protectors, furniture polish, glass cleaners, hair gels, sprays and mousse, hair removers and treatments, insecticides, isopropyl alcohol, jewelry polish, laundry detergents, lotions, napkins (paper), oven cleaners, paper towels, perfumes, plastic containers, plates (plastic or styrofoam), scouring pads and powders, shampoos, shaving cream and gel, shaving lotion, silver polish, skin cream, soaps, deodorant, suntan lotion, talcum, powder (100% talc), toilet bowl cleaner, water filters. 5. The Vaad maintains extensive lists of medications. Please call with details: manufacturer, purpose, method of use. 4

All product labels must indicate for Passover use. (Labels must be securely affixed from the factory.) This is not an exhaustive list. Contact the Vaad office ( ) for further information. Coffee Coffee beans that are plain, unflavored and are not decaffeinated do not require certification, but the grinder should be clean. K-Cups require certification even if they contain plain, unflavored coffee. Ground, instant, flavored, or decaffeinated require certification. The OU Guide lists several varieties of unflavored, not decaffeinated K-Cups that bear an OU on the outer box that do not need special Pesach certification. Spices Our Vaad has researched the preparation of spices extensively and has found that as countries and shippers become more industrialized, the method of drying can become more mechanized and sophisticated. Hot air driers sometimes are used. These driers force hot air over and around the spice, reducing the moisture content. This quick method of drying helps prevent mold development and makes it more economical to ship. Unfortunately, the more modern the process, the more possible questions of kashruth can develop. For fifty-one weeks of the year, whole and pure ground spices (not including seasonings and blends) would be determined as being kosher by using the same guidelines as those used for all vegetables. For the week of Pesach, it is imperative that spice preparation is properly supervised by a well-trained Mashgiach. Some spices, such as mustard seeds, are considered to be kitniyot and are not used by those people who do not use kitniyot on Pesach. Other pure spices, on their own, are not necessarily chometz. Problems can arise either through deliberate human introduction or as a natural non-deliberate occurrence. The Vaad recommends only those spices which have reliable Passover supervision. 5

6 COMPLETE LIST OF PASSOVER SUBSTITUTIONS by Eileen Goltz, Kosher Food Writer, Lecturer and Author, Perfectly Pareve Cookbook At some point during Pesach preparations we ve all tried to convert a main stream recipe into a Pesach one only to discover that we don t have a clue as to what to substitute for a chometz ingredient. This panic moment is why I started compiling my COMPLETE LIST OF PESACH SUBSTITUTES. 1 oz. baking chocolate (unsweetened chocolate) = 3 tablespoon unsweetened cocoa powder plus 1 tablespoon oil or melted margarine 16 oz. semi-sweet chocolate = 6 tablespoon unsweetened cocoa powder plus 1/4 cup oil and 7 tablespoon granulated sugar 14 oz. sweet chocolate (German-type) = 3 tablespoon unsweetened cocoa powder plus 2 2/3 tablespoon oil and 4 1/2 tablespoon granulated sugar 1 cup confectioners sugar = 1 cup granulated sugar minus 1 tablespoon sugar plus 1 tablespoon potato starch pulsed in a food processor or blender 1 cup sour milk or buttermilk for dairy baking = 1 tablespoon lemon juice in a 1 cup measure, then fill to 1 cup with Passover nondairy creamer. Stir and steep 5 minutes Butter in baking or cooking use pareve Passover margarine in equal amounts. Use a bit less salt 1 cup honey = 1 1/4 cups granulated sugar plus 1/4 cup water 1 cup corn syrup = 1 1/4 cups granulated sugar plus 1/3 cup water, boiled until syrupy 1 cup vanilla sugar = 1 cup granulated sugar with 1 split vanilla bean left for at least 24 hours in a tightly covered jar 1 cup of flour = substitute 5/8 cup matzo cake meal or potato starch, or a combination sifted together 1 tablespoon flour = 1/2 tablespoon potato starch 1 cup corn starch = 7/8 cup potato starch 1 teaspoon cream of tartar = 1 1/2 teaspoon lemon juice or 1 1/2 teaspoon vinegar 1 cup graham cracker crumbs = 1 cup ground cookies or soup nuts plus 1 teaspoon cinnamon 1 cup bread crumbs = 1 cup matzo meal 1 cup matzo meal = 3 matzoth ground in a food processor 1 cup matzoth cake meal = 1 cup plus 2 tablespoon matzo meal finely ground in a blender or food processor and sifted 3 crumbled matzo = 2 cups matzo farfel 1 cup (8 oz.) cream cheese = 1 cup cottage cheese pureed with 1/2 stick butter or margarine Chicken fat or gribenes = 2 caramelized onions, Saute 2 sliced onions in 2 tablespoon oil and 2 tablespoons sugar. Cook until the onions are soft. Puree the onions once they are golden. 1 cup milk (for baking) = 1 cup water plus 2 tablespoon margarine, or 1/2 cup fruit juice plus 1/2 cup water 1 1/4 cup sweetened condensed milk = 1 cup instant nonfat dry milk, 2/3 cup sugar, 1/3 cup boiling water and 3 tablespoons margarine. Blend all the ingredients until smooth. To thicken, let set in the refrigerator for 24 hours. 1 cup marshmallow cream/ 2.5 ounces = 8 large marshmallows or 1 cup miniature marshmallows 1 cup wine = 13 tablespoons water, 3 tablespoons lemon juice and 1 tablespoon sugar. Mix together and let set for 10 minutes. For frying: Instead of chicken fat, use combination of olive oil or vegetable oil and 1 to 2 tablespoons pareve Passover margarine. Eggs: Passover egg substitutes don t work quite as well as the chometz egg substitutes. For kugels, matzo balls, fried matzo and some cakes the recipes will probably be ok. However, if you want to avoid them (and I do) you can add one extra egg white and 1/2 teaspoon of vegetable oil for each yolk eliminated when baking. Use only egg whites as the dipping to coat and fry meats. Italian Seasoning = 1/4 teaspoon EACH dried oregano leaves, dried 6 marjoram leaves and dried basil leaves plus 1/8 teaspoon rubbed dried sage. This can be substituted for 1 1/2 teaspoons Italian seasoning. Curry Powder = 2 tablespoons ground coriander, 1 tablespoon black pepper, 2 tablespoons red pepper, 2 tablespoons turmeric, 2 tablespoons ground ginger. Makes 2/3 cup. Pancake syrup = use fruit jelly, not jam and add a little water to thin. I always like to combine the jelly and water in a microwave safe bowl and heat it gently before I serve it. Seasoned Rice Wine Vinegar = 3 tablespoons white vinegar, 1 tablespoon white wine, 1 tablespoon sugar, 1/2 teaspoon salt. Mix to combine. Makes 1/4 cup Flavored Vinegar = lemon juice in cooking or salad, grapefruit juice in salads, wine in marinades. Chili sauce, 1 cup = 1 cup tomato sauce, 1/4 cup brown sugar, 2 Tbsp vinegar, 1/4 tsp. cinnamon, dash of ground cloves and dash of allspice Water Chestnuts = substitute raw jicama Orange liqueur = substitute an equal amount of frozen orange juice concentrate You can mince the tops of green onions and use them in recipes that call for chives or use celery tops instead of parsley (who are we kidding, we always have parsley during Pesach) 1 egg = 1 ½ tablespoons water, 1 ½ tablespoons oil, 1/2 teaspoon potato starch 1/2 teaspoon baking soda. It works well for up to 2 eggs. You can also try 1/4 cup of applesauce = 1 egg but only for some of the egg in a recipe. SOY SAUCE SUBSTITUTE: This soy sauce substitute doesn t taste exactly like the real thing, but it makes a flavorful alternative for Pesach stir fry. 2 tablespoons beef broth 1 tablespoon red wine vinegar 1 teaspoon balsamic vinegar 1 tablespoon brown sugar 1 teaspoon oil 1/8 teaspoon garlic powder black pepper to taste 1/4 cup boiling water Combine all the ingredients. At this point, you can either a) use the sauce as is, leaving for an hour to give the flavors a chance to blend, or b) for a thicker, richer sauce, boil the liquid until it is reduced by half, about 3 tablespoons. Store in a sealed container in the refrigerator. Makes 2/3 cup. Use the sauce within 3-4 days. CASHEW SOUR CREAM: It s creamy and you can use it in any recipe that calls for sour cream. It refrigerates well. 1 cup raw cashews (must not be roasted or salted) 1/4 teaspoon salt 1-2 teaspoon apple cider vinegar 1 small lemon, juice Cover cashews with water and soak for a few hours, or overnight. Pour off all water, and place nuts in food processor. Add 1/4 cup cold water, salt, vinegar and lemon juice. Puree for 3-4 minutes or until completely smooth and creamy in consistency. Use in any recipe that calls for sour cream. Refrigerate in an airtight container for up to a week. Makes 1 cup. CORN SYRUP SUBSTITUTE: 2 cups white sugar 34 cup water 1/4 teaspoon cream of tartar 1 dash salt Combine all ingredients in a heavy, large pan.stir and bring to a boil. Reduce heat to a simmer and put cover on it for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage.stir often.cool syrup and store in a covered container at room temperature.

For Pesach, it is a commendable extra precaution to cover all foods in the microwave, even after performing the above kashering. Hag'alah, assuming there are no cracks where food might get trapped. If there are cracks, it cannot be kashered (or used).
