JADHAV Assistant Professor, KIT's Institute of Management Education and Research, Kolhapur. Abstract: Jaggery is a traditional unrefined sugar, which is consumed in Asia, Africa, Latin American and also the Caribbean. It is made from concentrated sugarcane juice, but the molasses are not separated, as is the case with sugar. The color of Jaggery can vary from golden brown to dark brown. Sugarcane in India is processed in to sugar, Gur and khandsari and undergoes considerable weight reduction during processing. The methods of converting sugarcane and manufacturing sugar, Gur and khandsari are different but a great value is added in the manufacturing of these consumable final products. Further it offers employment opportunity to millions of people. Gur is prepared in all parts of the country. It is known as Gul, gud, Jaggery, Vellum and Bella. 4 PROSPECTS OF JAGGERY INDUSTRY IN KOLHAPUR DISTRICT 1.REVIEW OF LITERATURE A study conducted by J. K. Gehlawat (1964) showed that about 40% of the sugarcane production in India was used for Jaggery and Khandsari sugar. The study suggested that need of efficient milling practices and juice concentration techniques are essential for clarification of juice. A study conducted by S. S. Rupe (2007) revealed that the main cost for producing the Jaggery from suru sugarcane was around 50% followed by labour cost, material cost, marketing cost and interest on working capital etc. it was studied that the yield of Jaggery per pan was 2.8 quintals for ratoon Sugarcane as compared to 2.5 for Suru sugarcane. 2.JAGGERY COTTAGE INDUSTRY- The Jaggery industry has been considered as one of the small scale and cottage industry in India. From time immemorial, sugarcane crop has been known as a cash crop by Indian cultivators and so also preparation of Jaggery. The production of Jaggery ranges between five million tones to seven million tones. It is estimated that two third of the sweetening requirement in rural areas is met by Jaggery. The Jaggery industry in the country has thus been continued to be an industry of great importance and relevance. Not much effort has been made for the improvement of Jaggery industry. There is constant increase in the demand of Jaggery. The production of Jaggery has not been able to keep pace with increasing demand for it. Maharashtra is one of the leading producers of Jaggery apart from Sugar. Large numbers of Jaggery production units are operating in the state which has a great employment potential. In India, only Uttar Pradesh and Maharashtra produce good Jaggery of export quality because they have specialized centers for Jaggery Production. 3.KOLHAPUR JAGGERY INDUSTRY Kolhapur district is the southernmost district of Maharashtra. 5 PROSPECTS OF JAGGERY INDUSTRY IN KOLHAPUR DISTRICT The district has richness with lot of resources like water, soil, natural vegetation, animal wealth and minerals. The main income source of the district is from agriculture and agriculture related businesses. The industrialization is in boom now days in the district. The co-operative sector is also base for the source and development of rural area of Kolhapur. The climate of the place is temperate in plains and cool in Western Ghats. The Eastern region represents dry weather and it experiences hot winds during April and May. According to 2011 census population of Kolhapur district is 38,74,015. The district has a population density of 504 per square kilometer. Population growth rate of the district is 9.96%. The average literacy in Kolhapur district is 77.23%. There are 956 villages in Kolhapur district. Around 10 percent of the villages are producing Jaggery from the sugarcane. 50% of the Jaggery units are based in Karaveer taluka. In Kolhapur district Karaveer, Shahuwadi, Panhala talukas are the region where the farmers are cultivating sugarcane for making Jaggery. The number of Jaggery producing units is more in these places. More than 75% of the Jaggery in Kolhapur district is produced in these three talukas only. The soil, water sources, climate and the available labour are the important factors for the more production of Jaggery in these areas. Due to the available water resources, rich soil and healthy climate the quality Jaggery is produced in the Kolhapur district. There are around 702 Jaggery producing units in the district. 20 to 25 farmers crush their sugarcane at each unit. The number of Jaggery producing farmers goes to19000 to If we observe the data of Jaggery producing unit, around 30 to 40 employees are working on each unit. It means that around to workers are directly connected with the industry. Around 9000 to people are indirectly related with the industry. The number of dependents on the Jaggery industry is more than 60,000 families. Total population dependent on the industry is 2,50,000 to 2,80,000. 6 PROSPECTS OF JAGGERY INDUSTRY IN KOLHAPUR DISTRICT 4.POTENTIAL FOR THE JAGGERY The demand for Jaggery is steadily growing many folds in the urban, rural and semi-urban areas. There are several applications of Jaggery and almost all Indian households use it on day-to-day basis. Market for Jaggery is round the year whereas its production is only during the sugarcane season and thus factory works for around 6 to 7 months every year. Apart from individual households, it is used in large quantities in restaurants, road-side dhabas, other eateries, hostels, and clubs and by caterers. It has shelf-life of more than couple of months. Though we don't have the separate data of Jaggery exports but we are having exports data of Jaggery and confectionary which is increasing. In around. Kolhapur is famous for quality and tasty Jaggery in all India. Riverside area of Panchganga is mostly known for quality Jaggery. BIBLIOGRAPHY Table No. 4.
