1 August 2014 As Americans, we spend nearly half of our food budget on foods prepared away from home and consume about one-third of our calories on those foods. When we walk into a restaurant, we are faced with menus loaded with high-calorie, high-sodium options. In addition to sharing an entrée, wrapping up half your meal to take home and just being mindful of how much food is on your plate, you can try these supersimple switches to eat healthier at your favorite restaurant. AMERICAN Start with a house salad with dressing on the side instead of a Caesar salad. Order grilled instead of fried chicken or fish entrees. Choose a baked potato instead of French fries. Order steamed or sautéed vegetables instead of potatoes in gravy. Order a veggie burger instead of a cheeseburger. CHINESE Choose steamed instead of fried dumplings Order steamed brown rice instead of fried rice Order entrees steamed or lightly sautéed, instead of fried. Order your favorite sauce on the side. ITALIAN Order pasta primavera instead of fettuccine alfredo. Skip the extra parmesan cheese. Order pasta in olive oil or tomato sauce instead of cream sauce Start with a salad instead of fried calamari Choose whole wheat pastas whenever possible. MEXICAN Start with gazpacho instead of nachos with cheese. Order grilled fish or chicken instead of fried beef or pork (carnitas). Choose borracho beans and rice instead of refried beans. 2 First Place 4 Health Prayer Week Are You With Me? I must have been in another world when my grocery cart collided with hers. This is a common occurrence in our small island grocery store, but it caught me by surprise that day. I quickly uttered an apology and tried to move on past. Something about her stopped me. I could see from a quick glance that she was middle-age, obese and very worn out. There was a sense of hopelessness about her. My heart was quickened with compassion, but not enough to start a conversation. I moved on to finish up my list. I headed to the checkout and, of course, she was right in front of me. I smiled at her and tried to think of something to say. Blank! She was ready to pay for her groceries and embarrassingly came up short on cash. She pulled out a cashier check and asked if she could use that to pay. By now the line is growing longer behind me, and folks are in a hurry to get on to their vacation. The cashier tells her she does not think she can accept the check, but goes to talk with the manager. Hostile minutes are ticking by. She finally returns and says she cannot accept the cashier check. The unfortunate woman quickly starts pulling things out of her cart to put back. I cannot stand this. I speak up and say, "Please let me pay the difference; it would bring me great joy." She is embarrassed, but accepts. She is waiting outside for me and offers another word of thanks. I tell her it's not a problem and that I am blessed to do it. I want to tell her much more standing there in the parking lot. I want to tell her about Jesus. I want to tell her that He is the great provider, that He loves her, regardless of her physical condition or her position in life. But I don't. I bless her in Jesus name and go on my way, never to see her again. Was this enough? I think not. This precious lady was in need of some good news, and the word gospel in Greek means "good news." So what keeps me from speaking up? I am not sure in this case. Sometimes I do speak up and share Christ, but I am not always consistent. Rob (my cute pastor husband) says the easiest way to share the gospel with someone is to try and figure out what would be good news to that person. How hard is that? Good news to this one is certainly not hard to figure out. God can meet your needs. That's it. She needed help with her weight and probably her finances. My God can help with both of these needs. I know, because I am an eyewitness to his goodness, generosity, grace and power. We, as leaders and members of FP4H, can make a difference in the lives of people around us. It starts with prayer. In his book A Life That Matters Ron Hutchcraft suggests praying "open" prayers. Here are some examples: Lord, OPEN the door: What would you be able to do for the kingdom if doors were opened all around you? There are many opportunities offered to us in FP4H to start new classes, but we need more doors to open. Right now, I am praying for God to open the door to our community center here on Edisto. In light of the current obesity epidemic, we need to pray for the doors to open in community centers, government programming, grants and foundations, and sometimes even in our own churches. And then we need to pray for the courage to walk through these doors when opened. Continued on page three

3 Lord, OPEN hearts: Ask God to prepare the hearts of people around you. No matter how far your sphere of influence extends, there are people who need the good news of the gospel. God's word has the answer to the obesity epidemic. We bring the message of hope. I am praying for hearts to be open to receive the love God is showing through others, and to receive His word and encouragement that are shared in FP4H classes everywhere. According to Matthew 9:37 the harvest is plentiful. There is no shortage of people needing hope. The gospel is clearly presented in all of our Bible studies. Pray that God will make hearts ready to receive His Son. No one can come to me unless the Father who sent me draws him (John 6:44). Lord, OPEN my mouth: How many people could I bring into the kingdom if I dared to open my mouth and share the gospel? When the opportunity is right, we need to share Jesus. Colossians 4:4-6 says, Pray that I may proclaim it clearly, as I should. Be wise in the way you act toward outsiders; make the most of every opportunity. Let your conversation be always full of grace, seasoned with salt, so that you may know how to answer everyone. We have been blessed with an amazing gift of hope and eternal life through the death and resurrection of Jesus Christ. May we be quick to share all he has done for us and be true to our Mission Statement: To provide a biblical wellness program that enables individuals to achieve balance in spirit, soul, mind and body based on giving Christ first place. May we not shrink back from the opportunity set before us. I pray we will spend the necessary time in prayer, and that we will be willing to walk through the doors God opens for us. Maybe I will divinely crash into that dear lady again, and I will quickly be the bearer of some good news! In the meantime, I think we need to join together in a corporate prayer effort. I would like to suggest a week of prayer for the Lord of the harvest to bring people into the kingdom and to use us! If you would, let's commit to pray every day for a week the OPEN prayers above and see what the Lord does. As the Lord leads, this would be a great week to present the gospel to your class. I am designating the week of September 21st through 27th as First Place 4 Health Prayer Week. Traditionally, September is one of the times we have hundreds of people in FP4H. Are you with me? 4 AUGUST 2014 PAGE TWO Success Story ~ David Poole My plan: In March of 2011, I started my wellness plan after a visit seeing my parents (who are taking several pills in the morning and evening), failing my EKG, and the doctor telling me to lose 50 lbs. to improve my HDL and LDL. At age 50 and 220 lbs., I started walking. Ten months and 400 miles later, I got down to 195 lbs. The Doctor was very happy and so was I. All my health numbers were showing in the good range. During 2012, at 195 lbs., I continued walking and playing tennis and Disc golf. I also made better food choices. But, at the end of 2012 I was at 201 lbs. Wow! I was stuck not knowing what to do. Now God s plan: I was asked by a friend from church, Why don t you join me in First Place 4 Health? I said to myself, Great! I need to learn more about healthy foods; I got the exercise figured out. Then on January 23, 2013, I started the 12-week class at church called First place 4 Health. Great! Now I can learn more about nutrition. This class looked at four parts of our being: the mental, emotional, physical and spiritual. I really wasn t sure about the mental and emotional stuff. Ok, I can do this. I decided to make the Bible study my first priority and I did. I did not miss one day of the study, and I tracked my food and exercise every day using My Fitness Pal at I also keep track of it on a spreadsheet to calculate the 3500 calories I need to lose 1 lb. I was very honest in tracking my food and exercise, so I could get a good analysis of my progress. God did a mighty work in all four areas, and allowed me to lose 11 lbs. in the first 6 weeks (Praise God) then another 11 lbs. at the end of the 12 weeks. Praise God more. Wow! In all of 2012, my plan failed. On my spreadsheet, according to my numbers in the reduction of calories, I was only supposed to lose 14 lbs., but I know because I made studying the Word a priority, God allowed me to lose 8 lbs. more. I am blessed to over flowing. Now for that emotional and mental stuff! I would find myself getting stressed at work and the first thing I would do is hit the vending machine and find that Hershey bar; it would take all my stress away. God said, Stop! Turn to me. Get an apple or orange; go outside and take a 15 minute walk; Cast your cares on me and I will take your stress. Thank you, Father. Then the 6-week summer session started and on (week 2), I tore my MCL a 2 degree strain. I was on crutches and unable to exercise, and only on spiritual food and physical fuel. I gained weight for the next few weeks. Wow! My emotional and mental factors were dropping fast, but God said, Continue in my Word. It was tough not being able to exercise, but I trusted in God s Word. And by the end of this 6 weeks, I lost 9 lbs. God said, See, I have you; just keep in My Word and I will fight your battles. And 4.7 lbs. was more than my spreadsheet said I would lose. Thank you, Father, again. Then another 6 weeks and I lost 2 more lbs. and I m now down to 168 lbs., 6 months later. Goodbye to 52 lbs. of not trusting God, not wanting to study His Word and not fully relying on God for all matters. He really does care for me. He is building me a house in heaven and I really need to do all I can do to keep His earthly temple spiritually, emotionally, mentally and physically strong, so His will can be worked through me. Now the greatest part is during the past months. Due to my weight loss, God has given me boldness to share how He has worked in my life and I give him all the credit. As I make steps, He directs my path. Thank you, Father. I have shared Your gospel. Your will be done!

6 Achievable Goals ~ Pastor Steve Reynolds I can do all things through Christ who strengthens me (Philippians 4:13). We have to get real. Even if we lose weight, most of us are not going to look like the models in magazines or even the people in weight-loss ads. First of all, those images have probably been computer enhanced, and you wouldn t recognize the models if you met them on the street. So let s set some realistic goals about how we will look when we lose weight. We have to learn to accept our bodies. When you lose weight, you won t suddenly have blue eyes and curly hair unless you had them before you lost weight. You probably won t have fabulous six-pack abs even if you exercise a lot. But you will look better than you do in your overweight condition and you will definitely feel better. So get real about what losing weight is going to do for you. Here are some things to keep in mind when you are trying to reach a healthy lifestyle and weight goal: Setting Goals Someone once said that if you don t set a goal, how will you know where you are going and how will you know when you arrive? And when you get back, how will you know where you ve been? Setting a goal tends to focus you on what you want to achieve. It s like a contract with yourself. It drives your motivation. Here are some tips for goal setting: Write down your goal. Post it where you see it often. It is important to set goals and it is important to keep that goal in front of you. Write it down on a sticky note and post it on your bathroom mirror. Post it on a computer screen or on the dashboard of your car. Make the goal attainable. I will lose one to two pounds a week. Keep the goal achievable. Set your goals realistically so that you can be successful. That will keep you motivated. Let everyone know about your goals and get people to encourage you. Spouses and children are notorious for trashing weight-loss plans. Explain to them what you are trying to achieve and ask them to be supportive. Vary your exercise and try to have fun. Take a walk one day, lift weights the next, ride a bike, swim or play basketball or handball. Watching TV while moving your body can help take the tediousness out of exercise and give you something to look forward to during that time. Try new seasonings and flavors in your food, but stay away from any that add calories. There are tons of recipes online for healthy, delicious dishes that will bring new flavors to your palate. I like the recipes at Reward your success on reaching your goal, but don t do it with food. This is one of the toughest places to retrain yourself, because most of us have been rewarded with food from the time we were sitting in a highchair. Continued on page six AUGUST 2014 PAGE SIX

7 Continued from page five Achieving Goals Once you have set your goals, you now need to go about achieving them. Spend a few minutes each day remembering that a worthwhile payoff lies ahead. You will be an improved you. If you step on the scale and see no weight loss (or perhaps only a little) remember that it took you a while to gain all this weight and it will take you time to lose it. It will happen if you stick to your goal of creating a lifestyle that honors God with your body. Periodically evaluate your progress and see how far you ve already come. And remember that even if you are not losing weight on a particular week, if you re also not gaining any, you are making progress. Get back on track quickly. If you miss exercise one day, or eat something you know will not help you reach your goal, get back on track the next day or the next time you eat. Remember all the benefits of exercise over and above weight loss: it improves mood, combats chronic disease, helps manage weight, strengthens the heart and lungs, and promotes better sleep. In setting and achieving your goals, claim the Scripture I can do all things through Christ who strengthens me (Philippians 4:13). 9 Devotional First Things First Being confident of this, that he who began a good work in you will carry it on to completion until the day of Christ Jesus. Philippians 1:6 My journey to lose weight began a few years ago, after the birth of my third son. I joined a First Place group 4 Health at my church. I was ready to conquer my weight issues, but I soon learned that there were others things I needed to address before I lost weight. During the first study, I found out just how broken I was: full of resentment, jealously and a negative attitude. Yes, I was a Christian, but my attitude did not reflect this to others. With each study, God began to peel away these negative attitudes. During the process, God was faithful, because He kept me on track not losing or gaining weight while He continued to heal me of these issues. Now I have been leading a small group of ladies in my home. This past fall, during a Bible study, God said, Penny, we can now work on your weight. I suddenly received a desire to exercise, eat right and cook healthy meals for my family. I now wake up every day with a renewed purpose. I look for the good in others, as well as myself. Because of God s help, and the support of my First Place group members, I have lost 30 pounds during the study. I am confident that God, who began a good work in me, will carry it on to completion. PRAYER Father God, thank You for not giving up on me, even though I wanted to give upon myself. I know that I am Your work in progress and that You will complete Your good work in me within Your time frame. Journal: What work does God want to complete in you? 10 Motivational Leadership ~ A Leader s View Are you leading on battery power (your strength) or AC current (God's power)? Leading on battery power works until you run down, feel weary, lack creativity and want to quit. You may find that you just can't continue any longer, and when you get like that, you're right! YOU can't. The word of the Lord to Zerubbabel can be the same word for you: Not by might nor by power, but by my Spirit, says the Lord Almighty (Zechariah 4:6). When you first started leading, you were probably enthusiastic full of ideas and ready to help others on their life-changing journey to good health. You felt the Lord was in it and directing your path (AC current). Guess what? You were right! Where did you switch from AC current to battery power? A battery doesn't just lose power in one fell swoop. It drains when used. My ipad operates great on its battery power for a time. I can check the remaining power level by looking at the battery icon on the screen. If I ignore the absence of bars, eventually I'll get a critical power failure message and warning to connect immediately to AC power for recharging. Usage causes batteries and leaders to drain and lose power! We become weary and feel like quitting, because we neglect the daily infusion of faith power and fail to stay connected to our power source. We begin operating in our own strength! No leader is exempt from losing power, but the key is to recharge before you hit the critical power failure level. Some signs of a low leadership battery are: > Lack of enthusiasm - you don't enjoy your group as much. Fresh ideas are gone. > Unpreparedness - planning slides. > Inconsistent prayer/quiet time - other things take over. > Low communication - you lose touch with members. Recently, I became weary thinking about the upcoming FP4H meeting that night. I thought, "If I weren't the leader, I'd stay home." I was really dreading having to go (honesty here)! It occurred to me, as I sat with God that morning that I was running on a low battery (my strength). I felt drained, used up and powerless. How could this have happened? I had come through a season of pain, emotional stress and mental duress. It had caused a spiritual drought and I had resorted to leading my group in my own strength. That morning, as I sat with God and wept, He wrapped His loving arms around me. I felt His power surging through me as I read verse after verse about how He is my power source, and when I am weak He shows Himself powerful. I recharged by plugging in through prayer and being in His presence. I should not have ignored the warning signs, rather turned to God for a daily boost of faith to help me lead the way He intends. We must not disconnect our power cord. God won't disconnect on His end, so if your power cord comes unplugged, it's from your end. You cannot motivate others unless you are God-connected, because in all actuality, it is not you doing the motivating, but God's power through you! Your creativity, communication, enthusiasm, ability to prepare and your gift of leadership all come from God. So what can we do to stay connected plugged in? > Have a daily quiet time. Allow the Holy Spirit to infuse you with His power. > Memorize Scripture. Find verses that will motivate you and commit them to memory. > Pray. Ask God to transform you into the leader He intends for you to be. > Stay in the Word. I suggest you read the Book of 1 John (all 5 chapters) every day for 30 days. Motivational Leadership happens when we are motivated with the power of God, stay connected and allow Him to lead. It is in His love that He will lead. Exodus 15:13 says, In your unfailing love you will lead the people you have redeemed. In your strength you will guide them to your holy dwelling. That is Motivational Leadership! June leads by example starting and directing multiple women s ministries and groups. Currently, she serves as networking leader for First Place 4 Health, encouraging and equipping other leaders throughout Texas. At the same time, she ministers to the Red Hatted Road Runners of San Antonio, serving as their queen since June Chapko is an award-winning author. She is known for two bible studies Making Wise Choices and Balanced Living. June and Nick, her husband of 35 years, live in San Antonio. They are blessed with 9 children, 15 grandchildren and 2 great grandchildren.

11 Wellness Week Recipes Join us for Wellness Week in beautiful Round Top, Texas, on October 9-16, 2014, for a great week of fitness, inspiration and delicious healthy meals like these recipes. Vegetable Brunch Casserole 1 medium zucchini, diced or sliced 1 medium onion, chopped 8 oz. sliced mushrooms ¼ cup butter ½ cup flour 1 teaspoon baking powder ½ teaspoon salt 10 eggs, lightly beaten 2 cups (16 ounces) 2% Cottage Cheese 4 cups (16 ounces) shredded Monterey Jack Cheese 3 oz. can chopped green chilies In a large skillet, sauté the zucchini, onion, and mushrooms in butter until tender. Stir in the flour, baking powder and salt until blended. In a large bowl, combine eggs and cottage cheese. Stir in vegetables, green chilies and Monterey jack cheese. Set oven to 350 degrees. Spray a 13 x 9 pan with cooking spray. Pour mixture into pan and bake uncovered for minutes or until set and golden brown on top. Serves 12 Nutritional Information: 302 Calories; 20g Fat; 21g Protein; 9g Carbohydrate; 1g Dietary Fiber; 224mg Cholesterol; 584mg Sodium. Snicker Pie Low-fat graham cracker crust 12 oz. vanilla-flavored nonfat frozen yogurt 1 c. Cool Whip Lite (or homemade from the FP4H website) 3 tbsp. chunky peanut butter oz. box sugar-free chocolate-flavored instant pudding In large bowl, combine frozen yogurt, whipped topping, peanut butter and pudding mix; stir well and press into pan, being careful not to disturb the crust. Freeze 2 hours or until firm. Top with additional Cool Whip Lite and a few chopped peanuts if desired. Let thaw 10 minutes before serving. Serves 8. Nutritional Information: 194 Calories; 8g Fat; 4g Protein; 28g Carbohydrate; 2g Dietary Fiber; 2mg Cholesterol; 218mg Sodium. AUGUST 2014 PAGE ELEVEN

12 Quick & Easy Recipes From Wellness Week Creamy Fruit Salad Dressing: 1 (6 ounce) Fat Free Greek Lemon Yogurt 1 Tablespoon light mayonnaise 2 Tablespoons orange juice Salad: 2 large unpeeled red apples, cubed (about 3 cups) 1 (15 ounce) can Mandarin Oranges, drained 2 tablespoons golden raisins 2 tablespoons chopped walnuts 8 leaves bib lettuce In small bowl, mix dressing ingredients until well blended. In medium bowl, mix apples, oranges, raisins and walnuts. Pour dressing over fruit and toss gently to coat. Divide lettuce onto serving plates and spoon fruit salad over lettuce. Serves 8 Nutritional Information: 82 Calories; 2g Fat; 1g Protein; 18g Carbohydrate; 2g Dietary Fiber; 1mg Cholesterol; 13mg Sodium Texas Style Coleslaw 1 bag (16 oz.) coleslaw mix (shredded cabbage and carrots) ½ cup chopped fresh cilantro 2 cans (11 oz. each) Mexican corn with red & green peppers, drained 3 Tablespoons oil 3 Tablespoons lime juice ½ tsp salt ¾ tsp ground cumin In a large (4 quart) bowl, toss coleslaw mix, cilantro and corn. In container with tight fitting lid, shake oil, lime juice, salt and cumin until well mixed. Pour over coleslaw mixture; toss. Cover; refrigerate 1 to 2 hours to blend flavors before serving.
