Pastoral Care : Jan Brooks (845) For non-urgent calls, please leave a msg. on the church office phone: (518) Hudson River Presbytery: Inside this issue: The great thing about walking with God in life is that there is always the opportunity to start anew - God always offers us a new day and a new dawn, no matter what has gone before. At the start of the New Year, why not take a moment to thank Him for last year, ask His forgiveness for where you have failed, and dedicate this new year to Him - to serve Him and love Him afresh. A good way of reviewing the year ahead is to write down the main areas of your life (e.g. work - family - friends - church - leisure etc) and then think about what God might want you to do in these areas during the next year. Once you've done this you might want to share this with your partner or a close friend, and give your decisions over to God in prayer. Thank you for this new year For all the potential it holds. Come and kindle in us A mighty flame So that in our time, many will see the wonders of God And live forever to praise Your glorious name. 4 Page 4 Agape Harvest January 2019 Looking Ahead By Lynne Clinch 2018 is over and a new year is in the early stages. Resolutions are made. Great family traditions at the holiday time are put away for another year. So let us take a moment and think about the upcoming year. What resolutions am I going to make? Bet I can guess --- eat healthier and/or go on a diet! If that s the case you are in the majority. This is the number one resolution. The problem is; it is also the most frequently broken one as well. Let me offer some suggestions to avoid this problem. No eating after 7 pm Limit frying More veggies Change fat type Smaller portions Limit desserts More lean meats Make take outs at home Increase exercise Healthy snack choices Weigh yourself weekly only unless doc advises otherwise Use less processed foods Well, that s the list and I ve written about it over the years so I will not go into it again. But I will say; making small changes will make a big difference. Only if you make one change you ll reap the rewards. My food sites continue to send many interesting recipes. In fact, I was going to change this whole article to Casserole 101 before deciding to start where I left off. You have to understand I had a computer update the other day and I thought I lost everything. Well patience outlasted the computer today and I won! The first recipe I m offering is a vegetarian dish but you can add ground beef, diced /cubed chicken or turkey if you do not want to try meatless meals. Actually I m making this tonight but adding shredded chicken and changing up the veggies since I don t have fresh cauliflower. I m also cutting in half the recipe for me but writing the original. It does serve 12 and uses a 9x13 baking dish. Of course you could make the whole dish, divide it into small containers and freeze for later use.

5 January 2019 Agape Harvest Page 5 1½ c. uncooked elbow macaroni 3 c. fresh broccoli florets 2 c. fresh cauliflower florets 3 large carrots, halved lengthwise and sliced thin 2 celery ribs thinly sliced 1 T. butter 1 medium onion chopped ¼ c. flour 1c. chicken broth 3 c. shredded cheddar cheese 1 T. mustard ¼ tsp. salt 1/8 tsp. pepper ¼ tsp. paprika Veggie Macaroni & Cheese Cook macaroni according to directions but add the fresh veggies the last 6 minutes. Drain well and add to baking dish. Meanwhile, melt butter and sauté onion until tender. Stir in the flour and gradually stir in the milk. Cook until this thickens. Stir in the cheese, mustard, salt and pepper. Add to the macaroni mixture and mix. Sprinkle the paprika over the top and bake. I d be inclined to sprinkle bread crumbs over the top for baking. As I previously mentioned I d be adding shredded chicken and would do this to the cream sauce. Try this recipe and make it your own. Let me know how you make out. Monterey Spaghetti 4 oz. spaghetti, broken into 2 inch pieces 1 large egg 1 c. sour cream ¼ c. grated parmesan cheese ¼ tsp. garlic powder 2 c. shredded cheese of choice (Monterey jack, cheddar etc) 1 pkg. frozen chopped spinach, thawed and drained 1 can French fried onions Cook spaghetti according to directions. Using medium size bowl beat egg. Add sour cream, parmesan cheese and garlic powder. Drain spaghetti well and add to egg mixture with shredded cheese, spinach and half the onions. Pour into 2 qt. baking dish. Cover and bake for 30 minutes. Remove cover and sprinkle with remaining onions. Return to oven for about 5 min. or until top is golden brown. Again, I d add shredded chicken, ground beef or cubed ham. I d probably not use French fried onions either but dice an onion and sauté, cool and add to egg mixture. Might add mushrooms too since Bob likes them. Of course, the spinach could be changed to peas and carrots or any other veggie on hand. Just remember the basic concept of a casserole. A starch of some sort---pasta, rice, even potato. Add a sauce --- canned creamed soup or make your own cheese or white sauce, a protein --- chicken, turkey, beef, pork. And a veggie --- fresh, frozen or canned. Combine, bake, add topping if inclined and then enjoy. Happy and healthy New Year and oh yes, happy cooking.
