1 1 CHAPTER MEETING Sunday May :30 P.M. St. John s Lutheran Church 1701 L Street Sacramento, CA Program Using maps, pictures or anything else to identify where in Russia, our ancestors came from before immigrating to the US or Canada. Members and visitors can bring the above items along with what we have in our resources to make a list or collage of places to identify what we all have in common, OUR HERITAGE! Note: I will bring the pictures that I took while in 1998 in Ukraine with The Journey to The Homeland Trip with Michael Miller. The pictures may give an idea how people lived during that period immigration. Duane Bittner President's Message (Don Shell) WE need to elect officers at our May 22, 2016 meeting. I would appreciate members volunteering for any of the officer positions. All members need to help us run the meetings. (see list on page 2) HOW WE BUTCHERED (Contributed by Don Schell, Pres.) Published in the Heritage Review by Ray Thomas, February 1983 page 35 When I was still small and of very tender age. I remember neighbors gathering, their skills to engage in butchering their pigs; each doing what he was able, to provide important food, which was meat on the table. as they all gathered; to help they were willing, but it wasn't all work; there was much story telling. Long before mother could start with her breakfast. The men were all out there killing them off--fast. Oft' times I found myself stirring the blood, Because of the cold, it needed stirring a lot. We needed the blood to make the blood sausage, There was head cheese and other; it was so rich. From a kettle of hot water that posed no peril. The pigs got their scalding in the old wooden barrel. Then came the skilled work with knife and with scraper any way you did it, it came out as a hard labor. We hung them aloft on both their hind legs. Cut open their belly; yes, that's what it takes. Removed all the innards and who knows what else. Washed off the krud or whatever it smells. The work was all managed, with skill, and my Dad. Divided bones and the meat and left some for the cat. Set up the old grinder to grind all the meat. Then salted and peppered it; tasty to eat. Nobody made sausage like good Uncle Fritz. He did it with speed, like staging a blitz. Salt water was used to treat some of the meat; Hams, carefully smoked. Oh boy what a treat. Long before meal time I felt awfully hollow. I took more, I know, than I know, I could possibly swallow. There were times you couldn't help but feel nauseated. Then you'd listen to stories and feel much elated. The company was good; the stories flowed freely. Yes, smoothly like clockwork; it worked well,-- really. Occasionally Dad poured a glass of home brew it warmed the membranes right down to the shoe 'Twas often reported that some got too many. A wet rag in the face was a cue, good as any It was a long day, indeed, for anyone able; My Lord it took work to put meat on the table.
