As we enjoy the warmer weather, vacations, beaches, swimming pools, baseball games, and outdoor barbeques, let us not forget those serving our country in the armed forces who allow our country to continue to be the land of the free and the home of the brave. Our 2014 Ladies Mini- Convention was held on Sunday, April 27, 2014 from 9:30-11:00 at the Hilton Hotel in downtown Springfield. There were 30 ladies in attendance. Coverage of the miniconvention including pictures, highlights, and Ladies Auxiliary Award winners for the 2013-2014 fraternal year can be found on pages 2 and 3. Now that the new fraternal year has begun and the new Ladies Auxiliary Officers have been installed, please take the time to complete the Ladies Auxiliary registration form found on page 5 of this newsletter, make 2 copies, and mail 1 copy to the Illinois. State Council Office in Kankakee and the other copy to me. Both addresses are listed at the bottom of the form. If you have any questions or need any forms or membership cards, please contact me. PAGE 2 LADIES AUXILIARY MINI- CONVENTION HIGHLIGHTS Welcome-Laurie Mann Prayer-Carol Muller (president of Bishop Griffin Assembly #201 Ladies Auxiliary of Central Il) Pledge-Cherri Mennemeyer (wife of Southern District Master Bernie) There are currently 67 active Ladies Auxiliaries in the State of Illinois. Our newest auxiliary is Fr. Matthew Rudden Auxiliary from St. Matthew The Worker Council #15530 at St. Bernadette Parish in Rockford. Ladies Auxiliaries are a program of the Knights of Columbus under Family Life Activities. Each Auxiliary should complete a registration form each year after new officers are elected and submit the completed form by email, fax, or regular mail to both the State Office in Kankakee and Laurie Mann, Ladies Auxiliary Liaison. Regarding guidelines for Ladies Auxiliaries in the State: 1) Ladies Auxiliaries are not permitted to use the words Knights of Columbus, K of C, or the Emblem of the Order in their name or for advertising of any auxiliary function unless it is a joint function with the Knights. 2) Ladies Auxiliaries are to report their volunteer hours for service to Church, Family, Community, Council, and Youth to the Financial Secretary of their Council. Forms for tracking volunteer hours were available at the registration table or by contacting the Ladies Auxiliary Liaison. 3) As far as the financial/fiduciary guidelines communicated to me by the State Deputy and the State Advocate, if a Ladies Auxiliary is using their Council s Tax ID#, they should not have their own checkbook-the Council would hold all their funds but set aside all money collected by their ladies auxiliary in a separate account for them to disburse as they wish provided they follow Knights of Columbus guidelines. The Council would report all receipts and expenditures by the ladies auxiliary on their Form 990 for tax purposes. If the ladies auxiliary wishes to maintain a separate checkbook, they should apply for their own tax ID# separate from the Council s and file their own separate Form 990 with the IRS each year. Thank you to all Auxiliaries who have provided articles for our quarterly newsletter. I would like to encourage more auxiliaries to send in articles to share to give other auxiliaries new ideas for membership recruiting, fundraising, and charitable activities. This makes our auxiliaries stronger and more productive. Awards were presented for State Auxiliary Lady of the Year, State Outstanding Auxiliary of the Year, Best Program/Service Activities, Public Relations, and Best Scrapbook. The Mini-Convention was closed with an Easter Prayer and door prizes were awarded. Thank you to all who were able to attend. We re glad you were able to join us. PAGE 6 Happy 4th of July Variously known as the Fourth of July or Independence Day, July 4th has been a federal holiday in the United States since 1941, but the tradition of Independence Day celebrations goes back to the 18th century and the American Revolution (1775-83) In June 1776, representatives of the 13 colonies then fighting in the revolutionary struggle, weighed a resolution that would declare their independence from Great Britain. On July 2nd, the Continental Congress voted in favor of independence, and two days later its delegates adopted the Declaration of Independence, a historic document drafted by Thomas Jefferson. Early Independence Day celebrations included concerts, bonfires, parades and the firing of cannons and muskets usually accompanied by the first public readings of the Declaration of Independence. The tradition of patriotic celebration became even more widespread after the War of 1812. In 1870, Congress made July 4th a federal holiday; in 1941, the provision was expanded to grant a paid holiday to all federal employees.. From 1776 until the present day, July 4th has been celebrated as the birth of American independence, with typical festivities ranging from fireworks, parades, and concerts to more casual family gatherings and barbeques. Summer is here and we re looking forward to a good one after the long cold winter we had. Here are some fun and interesting facts about summer: 1. The first day of summer is known as the summer solstice and in the US it falls on June 20th or 21st each year, depending on when the sun is furthest north of the equator. 2. The names of the key summer months have Roman origins. June is named after Juno, who was the wife of Jupiter; Marc Antony named July after Julius Caesar and August was named after Caesar s nephew, known as Augustus. 3. Even though the summer solstice is the longest day of the year, it s not the hottest, due to something called seasonal temperature lag, which means that it takes a while for the oceans to let their stores summer solstice heat back into the air. That s why it tends to be hotter in July or August than in June. 4. One of the more annoying parts of summer are the mosquitoes, which have been around for 30 million years. It s said they can find warmblooded mammals from 100 feet away. 5. Until the early 19th century, there w a s n o s u m m e r v a c a t i o n. Depending on the location of schools, breaks came either quarterly (town schools) or to coincide with planting and harvest seasons (rural Schools). School summer vacations were invented by educator Horace Mann in 1840. 6. France s Eiffel Tower can grow by more than 6 inches in summer due to the expansion of the iron on hot days. 7. July is the month where most ice cream is sold in the US. That s why it s National Ice cream month. Americans eat about 5.5 gallons of ice cream each per year on average. 8. Ice pops were invented by accident by 11 year old Frank Epperson. He mixed soda and water and left the mixture our overnight with the stirring stick still in it. Since the temperature was low, the mixture froze. He patented the idea in 1924. 9. August is the busiest month for travel and tourism. 10. Watermelon is the summer s favorite vegetable.. Yes, vegetable and not a fruit. It is part of the cucumber, pumpkin, and squash family. This juicy favorite is 92 % water and the average American eats 15 pounds of watermelon a year. 11. Summers spent throwing Frisbees back and forth owe their game to a pie maker named Mr. Frisbee., who originally designed them as pie plates in the 1870 s. Students started throwing them in the 1940 s. 12. The first bathing suit for women was created in the 1800s. It was l o n g - s l e e v e d w i t h w o o l e n bloomers. 13. The first Summer Olympic Games were held in 1896 in Athens. Women were first allowed to compete in 1900.

GRILLED BARBEQUE CHICKEN Barbeque Sauce 1 medium onion, finely chopped 1 cup ketchup or I can(8 oz) tomato sauce 1/2 cup hot water 1/3 cup lemon juice 1 Tablespoon Worchestershire sauce 2 teaspoons paprika 1 teaspoon salt 1 teaspoon sugar 1/2 teaspoon pepper Chicken 1 teaspoon salt 1 teaspoon paprika 1/4 teaspoon pepper 1 cut-up whole chicken (3-3 1/2 lb) or 6 bone-in chicken breasts 1.) Heat gas or charcoal grill. In 1 qt. saucepan, heat sauce ingredients over medium heat until boiling, stirring occasionally. 2.) In small bowl, mix 1 tsp salt, 1 tsp paprika, and 1/4 tsp pepper. Sprinkle both sides of chicken with salt mixture. 3.) Carefully brush grill rack with vegetable oil. Place chicken, skin side up, on grill over medium heat. Cover grill; cook 15 minutes. 4.) Turn chicken; brush with barbeque sauce. Cover grill; cook 20-25 minutes longer, turning and brushing with sauce, until juice of chicken is clear when thickest piece is cut to bone (at least 165 deg. F) SUMMER TORTELLINI SALAD 2 cups Cheese Tortellini 1 cup Sugar Snap Peas 2 cups diced chicken meat 6 slices American Processed Cheese, cubed 1/3 cup red onion, chopped 2/3 medium cucumber, coarsely chopped 1/3 cup sliced black olives 1 medium tomato, seeded & chopped 1/2 cup bottled Italian Parmesan dressing 1. Prepare Cheese Tortellini to desired doneness. Rinse well; drain. 2. Cook sugar snap peas to desired doneness; rinse and drain. 3. Combine all ingredients in lg bowl: toss gently to coat with dressing. Cover; refrigerate 1-2 hrs. PATRIOTIC TRIFLE 1 pkg(3.9 oz) Jello Vanilla Instant Pudding mix 1 1/2 cups fat-free milk 1 tub Cool Whip (8 oz), thawed, divided 1 pkg angel food cake (13 oz), cut into 1/2 in cubes (about 6 1/2 cups) 2 cups fresh strawberries, sliced 1 cup blueberries 1. BEAT pudding mix in medium bowl with wire whisk 2 min. Stir in 1 1/2 cups Cool Whip. 2. LAYER half each of the cake and berries in large serving bowl; cover with pudding mixture. Top with layers of remaining cake, berries, and Cool Whip. 3.REFRIGERATE 1 hour.
