Meet your tour educator and drive to the city of Tel Aviv, known as the city that never sleeps, with its centers of culture, recreation and national history, great beaches. Check into the hotel with time to freshen up. Meet in the hotel lobby and depart for your welcome dinner. Welcome dinner at a local restaurant. Overnight: Tel Aviv DAY THREE MONDAY, JUNE 17, 2019 FOUNDATIONS OF A CITY AND A STATE Breakfast at the hotel. Overview and Hebrew word of the day! Visit the Jaffa Overlook for an introduction to Tel Aviv at the place where it all began. A New Perspective: Descend to the Old Port of Jaffa, and enjoy a boat ride along the Mediterranean coast from Jaffa to Tel Aviv. Get the spectacular skyline of Tel Aviv and learn about the creation of the first Hebrew city. From the Templers to the Hipsters: Guided tour to the renovated Templers town of Sarona, now a hip and vibrant fashion and culinary center. Visit the Historic Olive Mill and Press House for olive oil tasting, and take time to stroll through the indoor food and spice market, with lunch on own. Stop at Rabin Square, a center of Tel Aviv's cultural and political life, named for Prime Minister Yitzhak Rabin who was assassinated here. Take a quiet moment at the Rabin Memorial. Option 1: Walk through the museum at the Rabin Center, dedicated to the history of society and democracy in Israel. DAY FOUR TUESDAY, JUNE 18, 2019 DIGGING FOR ROOTS Breakfast at the hotel. Overview and Hebrew word of the day! Drive to Ella Valley and take part in an archaeological dig at the Beit Guvrin Caves. Prepare to get your hands dirty while uncovering pottery from the Hellenistic period, 2,300 years ago, followed by a crawl through the Maresha Cave Labyrinth (crawling is optional). Beit Guvrin-Maresha National Park was recently recognized as a UNESCO World Heritage Site. Lunch on own, en route. Visit the Ayalon Institute near Rehovot for an eye-opening tour of a clandestine munitions factory used during the British Mandate. Return to Tel Aviv. Dinner on own and evening at leisure. Walk through the 2,000-year-old water tunnel at Park Alona, the water source for ancient Caesarea. Lunch on own, en route. Drive to the Upper Galilee and take a late afternoon Jeep tour off-road up the southern Golan Heights in the footsteps of Israeli soldiers and their battles in the Six-Day War. Take a nature hike to the Suspended Trail above the spectacular canyon of the Banias Stream, at the foot of Mount Hermon. Enjoy rafting or kayaking down the Jordan River. Lunch on own, en route. Option 1: Wine Tasting at a local winery on the Golan Heights. Option 2: Enjoy the culinary delight of a chocolate workshop at the De Karina Chocolate Factory on Kibbutz Ein Zivan. All: The panoramic views from Bental (overlooking the abandoned Syrian town of Kuneitra) give sharp insights into Israel's security situation on the Golan Heights, and the enormous challenges it faced in the 1973 Yom Kippur War. Visit the grave of Rabbi Moses Ben Maimon, commonly known as Maimonides (also Rambam), a medieval Sephardic Jewish philosopher who became one of the most prolific and influential Torah scholars of the middle Ages. Lunch on own, en route. Drive southwards along the Jordan Valley, part of the enormous Syrian-African Rift. Continue on a walking tour through the Jewish Quarter for visits to archaeological treasures and other highlights, including the Cardo, the main street of Jerusalem in the 6th Meet a Sofer Stam for a scribe workshop, including learning to write your own name in Hebrew calligraphy. Lunch on own in the Old City. Stop at the Kotel (Western Wall) and experience the special atmosphere of this holy site.
