On behalf of Executive Committee, I would like to express my sincere greeting to all members on the occasion of the 44th Victory Day, December 16th. On this Memorial Day, we pay tribute to all fallen heroes and all women humiliated and martyrs who made big sacrifice for our motherland. We will continue to build strong and peaceful community and work together made community united for the future generation. 2015 was a great year to work in community. We did lots of very successful programs which was very much supported and appreciated by community members. I like to thank all my colleagues in the Executive Committee for their great work over the course of this year. In a very busy life style and personnel commitments, the executive committee members worked very hard to serve community, with their energy and enthusiasm. We could make all program successful by their super work to community. I am so proud and like to express my thanks from the bottom of my heart on countless effort of all the members, volunteers for their support and participation. We were able to successfully organize and deliver different activities and cultural shows and have accomplished a great successful year of celebrating Bengali culture. My very sincere thanks and gratitude to all the volunteers and advertisers for their contributions in this regards. I am very much delighted to see particularly our youth volunteers, for their participations in various cultural performances and extending their hands in organizing all the community events. It was a very successful year and I am honored to serve this excellent community and we have tried our best to organize successful events. Thank you all for your participations, appreciations, cooperation and contributions. I wish you all a fabulous holidays and happy and colorful new year of 2016. EDITOR S Note Greetings and a warm welcome to our 19th edition of BCAE Edmonton Bichitra Magazine! We couldn t be more excited to have made it to this point. Please take some time to get to know the layout of our magazine. You will notice the different sections: kids drawings, biography, articles, stories, poems, jokes, and Bengali cooking recipes. Within each sections, we collected our community s best arts and talents for you to enjoy. We are honored to share the work of many committed magazine contributors and also for the dedication and time to made this magazine a reality. Lot of work goes behind the seen and we forget to mention their names. Just to name a few: our official photographer Mr. Sheikh Jalil for wonderful photographs, magazine sponsor/ads collection: Mr. Kazi Aurangzeb and team for lot of hard work, magazine advisor: Mr. Sajjad Khandker and Mr. Moh Laskar to fix technical issues. C hamili Laskar was born in 2004, Windsor, Ontario, Canada. Her father, Moh Laskar, is a businessman. Chamili s mother, takes care of her dad s business, and she is a housewife. Her father and mother, came to Montreal, Canada, a long time ago from Dhaka, Bangladesh. Chamili s father, studied, worked, and afterwards, he started his own business in Montreal. Her mother, took a french course at Montreal, Canada and she worked at several places. After about six years, they moved to Windsor, Ontario, where once again her father runned his own business, and her mother worked. Chamili was born after her parents moved to Windsor many years later. After Chamili was born, she lived in Windsor, Ontario for two years, and then with her brother, sister, and parents, she moved to Edmonton, Alberta. She started kindergarten in Evansdale Elementary School, and after she finished grade three she started going to a school named Northmount Elementary School. Right now it is her third year in Northmount Elementary School. Chamili is known for her melodious voice. In 2010, when Chamili recited a poem and group danced, her father's friend Mr. Bikash Talukder suggested for Chamili to start taking singing lessons because 15 she had a lot of courage in public and he still gives Chamili a lot of advice about singing. After a few weeks, Chamili started taking music lessons from Mrs. Abira Mukherjee, a well known singer from Kolkata, India. After teaching Chamili about music for a year, she moved back to Kolkata, India, so Chamili had a new music teacher from 2011. Her music teacher's name is Mrs. Sabita Chowdhury, and she also, is a well known singer of Bangladesh. Chamili is still learning from Mrs. Sabita Chowdhury, but she is also learning about indian music and semiclassical since 2014 from Mrs. Lavanya Rajesh who used to be a playback singer in Bollywood. Along with the other two music gurus, currently she has a new guru, Pandit Shuvodeep

Mukherjee, also a well know singer and teacher from Kolkata and Bollywood. Chamili plays the Harmonium, Piano, and Keyboard. Recently, she received an award from the Legislative Assembly of Alberta, Canada for her vocal performance and from two local Bangladeshi associations she received two awards for musically volunteering. Right now Chamili still lives in Edmonton, Alberta, Canada and she goes to Northmount Elementary School in grade six cogito. She is eleven years old and the youngest amongst her siblings. Chamili s goal is to become a successful singer and successfully complete university with health science. Her mother and father helped and supported her a lot about music and education. She has many well wishers in Canada, Bangladesh, and India, and hopefully day by day the number of well wishers will increase. The Virtual Resources of International Mother Language Day Delwar Jahid E kushey-the 21st of February is to promote the preservation and protection of all the languages used by peoples of the world. Ekushey is a name of a movement, a name of mourning, a name of a day of pride, a day of reflection, and a day of action, that advocates a greater socio-cultural cooperation among the nations. The UN says, so does the world s rich tapestry of cultural diversity. Opportunities, traditions, memory, unique modes of thinking and expression valuable resources for ensuring a better future are also lost,...when the languages fade. The day that benefits cultural diversity of the world and creates a unique opportunity to celebrate different cultures, opposing to monoculture in the worldwide arena. Ekushey in Bangladesh is known as the Language Martyr s Day. Sixty four years ago on this day of Ekushey February (21st) among others, Salam, Barkat, Jabbar, Shafiur and Rafiq, sacrificed their precious lives for the protection of mother language,-" Bangla" in Bangladesh. At the initiative of Bangladesh government, it was first announced by UNESCO on November 17, 1999 adopting 21st of February as the International Mother Language Day. For the first time, 21st February, has been observed since 2000 by UNESCO as the International Mother Language Day. The observance of the day formally recognized by the United Nations General Assembly in its resolution establishing 2008 as the International Year of Languages. Ekushey-The 21st of February is a milestone in recognition of Linguistic rights, those are also the human and civil rights concerning the individual and collective rights to choose the language or languages for communication in a private or public atmosphere. Other considerations for analyzing linguistic rights include the degree of territoriality, amount of positivity, orientation in terms of conservation, and obviousness. Linguistic rights became more and more prominent throughout the course of history as language came to be increasingly seen as a part of nationhood. Although policies and legislation involving language have been in effect in early European history, these were often cases where a language was being imposed upon people while other languages or dialects were neglected. Most of the initial literature on linguistic rights came from countries where linguistic and/or national divisions grounded in linguistic diversity have resulted in linguistic rights playing a vital role in maintaining stability.[2] However, it was not until the 1900s that linguistic rights gained official status in politics and international accords. Dr. Muhammad Shahidullah, an eminent academic in July 1947, suggested that, after the departure of the British from India, Bangla could be made as the state language of the new state. Even before the making of Pakistan in 1947, there had been strong demands from intellectual level that Bangla be made the state language of Pakistan. Shortly after the creation of Pakistan, Dhirendranath Datta MLA make it clear at the first session of the Pakistan Legislative Assembly that Bangla should be made as the state language of Pakistan.. Dhirendranath Datta's speech of 23 February 1948 to the Pakistan Constituent Assembly in Karachi, presided over by Mohammad Ali Jinnah, was the first formal articulation of the demand for Bengali to be made one of the state languages of Pakistan. This culminated in the Language Movement of 1952 and the martyrdom of the Language Heroes. This movement is regarded by many as the first step towards the Liberation Movement leading to independence of Bangladesh in 1971. For this reason, Dhirendranath Datta's speech is regarded as one of the most important events in the history of East Pakistan and Bangladesh. He said,..."sir, in moving this the motion that stands in my name--- I can assure the House that I do so not in a spirit of narrow Provincialism, but, Sir, in the spirit that this motion receives the fullest consideration at the hands of members. I know, Sir, that Bengali is a provincial language, but, so far our state is concerned, it is the language of the majority of the people of the state. So although it is a provincial language, as a language of the majority of the people of the state it stands on a different footing. Out of six crores and ninety lakhs [69 million] of people of people inhabiting this State, 4 crores and 40 lakhs 44 million of people speak the Bengali language. So, Sir, what 23

should be the State language of the State of Pakistan? The State language of the State should be the language which is used by the majority of the people of the State, and for that, Sir, I consider that Bengali language is a lingua franca of our State. It may be contended with a certain amount of force that even in our sister dominion the provincial language have not got the status of a lingua franca because in her sister dominion of India the proceedings of the Constituent Assembly is conducted in Hindustani, Hindi or Urdu or English. It is not conducted in the Bengali language but so far as the Bengali is concerned out of 30 cores of people inhabiting that sister dominion two and a half crores speak the Bengali language. Hindustani, Hindi or Urdu has been given an honoured place in the sister dominion because the majority of the people of the Indian Dominion speak that language. So we are to consider that in our state it is found that the majority of the people of the Indian Dominion speak that language. So we are to consider that in our State it is found that the majority of the people of the State do speak the Bengali language then Bengali should have an honored place even in the Central Government. [The Pakistan government never forgot Dhirendranath's continued rebelliousness of state insight and dictatorship. At the beginning of Bangladesh Liberation War, he was arrested from his Comilla house on 29 March 1971, three days after the arrest of Bangabandhu Sheikh Mujibur Rahman, and taken with his son, Dilip Kumar Datta, to Comilla Moynamoti Cantonment and tortured to death. He is also often referred to as "Shaheed" (martyr) as a sign of respect] Chronology of Language Movement: September 15, 1947: Tamuddun Majlis (cultural society, an organization by scholars, writers and journalists) demanded Bengali as one of the state languages of Pakistan. November 1947: Educator Fazlur Rahman opposed Urdu as the only national language in the Pakistan Education Conference. February 23, 1948: Dhirendra Nath Dutta, a Bengali opposition member, moves a resolution in the first session of Pakistan s Constituent Assembly for recognizing Bengali as a state language along with Urdu and English. March 1948: A committee of Action of the students of Dhaka University is set up with the objective of achieving national status of Bengali. March 21, 1948: Mohammad Ali Jinnah, the founder of Pakistan and its first Governor General, declares in Dhaka University convocation that The State language of Pakistan is going to be Urdu and no other language. Anyone who tries to mislead you is really an enemy of Pakistan." This remark evoked an angry protest from Bengali youth. February 3, 1952: In a protest meeting, the Committee of Action decided to hold a general strike on 21 February. February 20, 1952: An or der was pr omulgated under Section 144 of the Criminal Procedure Code prohibiting processions and meetings in Dhaka City. February 21, 1952: The students of Dhaka Univer sity decided to defy the official ban in a meeting and decided to protest in peaceful procession. The police opened fire on students in front of the Medical College Hostel. Mohammad Salauddin, Abdul Jabbar, Abul Barkat, Rafiquddin Ahmed, Abdus Salam were among those who became martyrs. May 7, 1954: The Pakistan government recognizes Bengal as a state language. Nov 17, 1999: UNESCO proclaimed 21 Feb as International Mother Language Day. With the proclamation of the day as the International Mother Language Day by the United Nations in 1999, the day has been given its due universal height and it has become a pride of Bangladesh. The essence of the Ekushey will always give us inspiration to forge ahead as a self-governing nation that refuses to obeisance its head to unholy and diabolical powers trying to suppress identity of a nation. The idea of the day came from a BC, Canada based Organization named Mother Language Lovers of the World. Including Bengali, English, Kutchi, Cantonese, German, Filipino, and Hindi language speaking members are in that organization. In 1999 they urged the UNO and the UNESCO to declare 21st February as the International Mother Language Day. The UNESCO in reply informed them that such proposal could only be considered if it had come from the National Commission for UNESCO by any member-state. The said organization immediate after informed The Ministry of Education of Bangladesh over tele- 24

phone and as a result the then government sent a Proposal to UNESCO from Bangladesh maintaining all the procedural formalities and after necessary review UNESCO has adopted the historic resolution. Through the recognition International Mother Language Day has opened linguistic and cultural rights for all speakers of all languages all over the world now it caught the eyes of the world, and created an opportunity to explore Bangladeshi history and culture. The sacrifices made by Rafiqul Islam and his team from Mother Language Lovers of the World and the then Bangladeshi Ambassador to France Syed Muazzem Ali, Dr Sadat Hossain, Education Minister ASHK Sadek, Dr Sayedur Rahman Khan, High Commission for the People s Republic of Bangladesh, London, who was then the VC of Rajshahi University and many other individuals and organizations. The efforts and dedication contributed a lot towards the recognition of this day. The Bangladesh Liberation War was rooted to the language movement of Bangladesh, Ethnic and linguistic discrimination was a key factor in the rise of Bengali nationalist sentiment that led by Bangabandhu Sheikh Muzibur Rahman. Language controversy, disparities, political differences, poor response to the humanitarian concern and a planned military action carried out by Army curbed the movement into a war of Independence. The Message for the International Mother Language Day is to join forces to promote linguistic diversity and promote multilingualism by the all nations of the world to build a terror free society and a life of dignity for all. In a Message the Governor General of Canada on International Mother Language Day 2015 expressed solidarity to Canada's cultural diversity. His Excellency the Right Honourable David Johnston, Governor General of Canada extended his best wishes to everyone marking International Mother Language Day in a message addressed to the president of Bangladesh PressClub Centre of Alberta (BPCA),:His Excellency the Right Honourable David Johnston said, [...] One of Canada s greatest strengths is its rich diversity. We are known throughout the world as a shining example of a truly multicultural society, where respect for others is paramount. I am filled with tremendous pride when I visit communities across the country and meet with citizens whose origins are as varied as the languages they speak. promoting the Day on February 21st in an effort to bring the people of all nations together to celebrate each and everyone's mother language, culture and heritage. The celebration can be understood as a reminder of the importance of linguistic and cultural diversity, and the occasion is a chance to build peace and understanding between all nations and ethnic groups around the world. For International Mother Language Day in 2015, BPCA celebrated IMLD at the University of MacEwan in Edmonton, Alberta of Canada. Moh Laskar T he year 2015 is about to end in about a half of a month with significance and noteworthy achievements by the current executive committee of Bangladesh Canada Association of Edmonton. I would like to thank all the respected community members, sponsors, volunteers, cultural participants, and well-wishers for their sincere support to make our events so amazing and enjoyable. We are also very thankful for the general members giving us the opportunity to serve in our Bangladeshi community this year. Below there are some highlights/details of BCAE 2015 s events: 30 Blood Donation Event: On February 21st, 2015, BCAE with BASUA jointly organized a Blood Donation event to remember, respect, and pay tribute to the martyrs for the sake of humanity. As a proud Bangladeshi, like each year since 2007 we have been actively participating in this event, wanting to commemorate our language martyrs. Also, our name is placed on the honour board at the Canadian Blood Services office, Edmonton, Alberta. Amar Ekushey and Independence Day: On March 14th, 2015 we celebrated Amar Ekushey and Independence day together at Bonnie Doon Community Hall. At 7:00 p.m. Mr. Moh Laskar welcomed all the members who attended the event and told them to have dinner. We had delicious dinner cooked by Mr. Ismail Mohammad, and everyone enjoyed the food. Afterwards at about 8:00 p.m, our present president, Mr. Kazi Aurangzeb said his first speech of the year of BCAE 2015. After the speech we started the cultural program with the melodious chorus which was led by Mrs. Sabita Chowdhury, followed by local performances of patriotic songs, dance performances, and recitation. At last, there was a raffle draw which was sponsored by Mr. Mahmoodur Rahman (Realtor) and BCAE 2015 s vice-president Mr. Sajjad Khandker thanked everyone who attended the event. Pohela Boishakh and Rabindra Nazrul Jayanti: At 7:00 p.m. Mr. Moh Laskar welcomed all the members who attended the event and told them to have dinner which was cooked by Mr. Ismail Mohammad. We started our cultural event with the president s speech, then a mellifluous local chorus performance which was led by

Mrs. Ulfat Parveen Rosy. Moreover, a singer from Bangladesh, which was Dinnat Jahan Munni performed many songs. There were 8 attractive prizes sponsored by Bangla Bazar and at last, BCAE 2015 s vice-president Mr. Sajjad Khandker thanked everyone who attended the event. The event was held at Bonnie Doon Community Hall, on April 18th, 2015. Mother s Day Celebration: On May 10th, 2015, we honored mothers by celebrating motherhood, our eternal bonding with our mother and their immense contribution towards our lives and society. This was our first outdoor event of the year for BCAE 2015. We enjoyed the day by participating in various outdoor games, art competition for kids that came along with attractive prizes, cutting 2 special mother s day cakes, and eating meals and snacks. The picnic took place at William Hawrelak Park with shiny and warm weather. Father s Day: Father s Day celebration brings tremendous excitement in many members of the Bangladeshi community as we play a friendly soccer match with BASUA. It is called a friendly match because even though both teams want to win desperately, they play gently because they care for each other and they don t want anyone to get hurt. The match started with the national anthems of Bangladesh and Canada. It was a competitive match because both teams had great solid walls of defense, while at the end BCAE won by 3-0. At the end a trophy was awarded by Dr. S. Amir Ali to BCAE s team members, and both BCAE s and BASUA s team members received medals. Cakes, samosas, and watermelons were arranged by BCAE for all the soccer players and supporters of both sides. The soccer game took place at Lansdowne Park/Field on June 14th, 2015. Iftar Party: On July 4th, 2015, BCAE organized a get together potluck at Blue Quill Community League (hall). MM Hadith Imam Byhaki read some parts from the Quran and Hadith, translated them, and lectured, at last there was a dua for Islamic Umma. For iftar, the meat and rice was sponsored by 2 of BCAE 2015 s executives and cooked by Mr. Ismail Mohammad, and the rest of the food was sponsored and cooked by the community members. Ananda Utsab (Eid-er Khushi-Eid ul Fitr): BCAE celebrated Eid ul-fitr joyously on July 25th, 2015. At 7:00 p.m. Mr. Moh Laskar welcomed all the members who attended the event and told them to have dinner. Before dinner, which was cooked by Mr. Ismail Mohammad, there was the president s speech and afterwards, many new families introduced themselves. After a while, there was a melodious chorus, which was led by Chamili Laskar followed by local performances. There was a raffle draw sponsored by Deshi Boutique, Edmonton, and after that the event ended at 11:00p.m and BCAE 2015 s vice-president Mr. Sajjad Khandker thanked everyone who attended the event. The joyful event was held at Bon- 31

nie Doon Community Hall. Annual Picnic: BCAE 2015 held its annual picnic at Hermitage Park on August 22nd, 2015. Our members came down to enjoy a fun-filled exciting day with family, friends, and community members. There was kid s sprint, other kid s games, musical pillow passing for the women members, and soccer and cricket for the men members. The food was cooked by Mr. Moh Laskar and Mr. Mohammad Abu Ishaque helped him. Ananda Utsab (Eid-er Khushi-Eid ul Adha): The event was held at Bonnie Doon Community league, on October 10th, 2015. At 7:00 p.m. Mr. Moh Laskar welcomed all the members who attended the event and told them to have the mouthwatering food cooked by Mr. Ismail Mohammad. Afterwards, there was the president s welcome speech followed by local performances. There was only one hour of local performances because BCAE 2015 had a singer from Kolkata, India to come and sing for us. The singer s name was Pandit Shuvodeep Mukherjee, and his melodious songs touched the hearts of the audience. Finally at last, there was a raffle draw which was sponsored by Mr. Kishore Chowdhury an agent from State Farm and Mrs. Rani Saadat Chowdhury from Nira s Boutique. BCAE 2015 s vice-president Mr. Sajjad Khandker thanked everyone who attended the event. Ananda Utsab (Pujar Hashi): BCAE celebrated the event Ananda Utsab (Pujar Hashi) 2015 on November 28th, 2015. At 7:00 p.m. Mr. Moh Laskar welcomed all the members who attended the event and told them to have dinner. The delicious dinner was cooked by Mr. Bikash Talukder. There was the president s speech and afterwards, many new families introduced themselves. In between the event, Dr. Manas Shome and Mr. Kishore Chowdhury gave a speech about puja and humanity. There were local performers who recited, danced, or sang songs. At last, BCAE 2015 s vice-president Mr. Sajjad Khandker thanked everyone who attended the event. Hall Committee Activities: This year our hall committee members were Mr. Ashraf Uddin, Mr. Shahidul Islam, Mr. Nakib Ahmed, Mr. Mizanur Rahman, Mr. Nazmul Islam, Mr. Mujibur Rahman, and with these members there were also the president, vicepresident, general secretary, and treasurer of BCAE, who automatically became the members of BCAE hall committee, in the beginning of the year 2015. BCAE 2015 s president, automatically became the hall committee s president in the beginning of the year. We gave Mr. Mahmoodur Rahman the responsibility to show the property to the hall committee, and he still is looking for suitable property. We hope next year, we have our own property (BCAE Bangladesh Center), but everyone will hopefully help us by donating. BCAE Bangla School: As one of its main goal, BCAE works to promote Bangla lan- 32

guage and the culture in Edmonton. The teacher, Mrs. Salma Jahan teaches how to read, write, and talk in Bangla, which all of the parents are satisfied with. This year, we made a video about Bangla School where the students, the parents, the teacher, and some of BCAE 2015 s executives shared their point of view about Bangla School. The video clip was made by Mr. Melvin Mondol, BCAE 2015 s public relations secretary, and Mr. Sheikh Jalil helped him. This is one of the most successful programs of BCAE with currently around 15 students enrolled and we hope to enhance this program further in future. Grant from AGLC Volunteering: This year we got $81,955.16 (Eighty one thousand nine hundred fifty five dollars and sixteen cents) from AGLC 2015, as a result of our hard work. Thank you to all the volunteers and all the BCAE 2015 executives that participated and we look forward to seeing you at the next AGLC (Casino) event and we highly appreciate your cooperation. If we continue to cooperate like we always do we will be able to build/buy a community hall owned by BCAE that will be named BCAE Bangladesh Center. Annual General Meeting (AGM): This report was written before the actual date of the annual general meeting on December 19th, 2015 at Bonnie Doon Community Hall. First of all, the president will say a speech and guide the meeting. As a general secretary, I will present BCAE 2015 s yearlong activities report. The detailed financial report will be presented by BCAE 2015 s in AGM. The other executives will add details as we talk. This is the day for all the general members of BCAE to share their ideas or comments. For the first time in BCAE we will be having a 31st night and new year s 2016 celebration at Bonnie Doon Community Hall. This event will be a potluck event. Also, this year we had 13 events including AGM, AGLC, and New Years celebration. This year all the volunteers and performers will receive a certificate(s) from BCAE. This has been a wonderful journey for the executive committee with noteworthy support from the community members. My sincere thanks to all the executives, volunteers, well-wishers, community members and performers of various events, and to our sponsors for their continued support. Bangladeshi Recipes By Ripa F. Naznin Burhani Ingredients: 3 cup thick curd/natural yogurt (tok doi) 3 cup milk/water 2 cloves of garlic 2 hot green chilli a good bunch of fresh mint leaves 1/2 tsp red chilli powder 1/2 tsp roasted cumin powder 1 1/2 tsp salt 3 tsp sugar 1/4 tsp black salt(kalo lobon) *You can adjust the amount of sugar & salt upon your taste but the proportion of sugar should always be double the salt. Directions: 1. In a blender combine all the above ingredients. 2. Blend well and get a thick milk shake type texture. Pour out in a glass(es) 3. Chill in the refrigerator for an hour serve chilled in individual glasses decorating it with few mint leaves. If you want you can add ice cubes or crushed ice. Kachi Biriyani Ingredients: 1. Mutton-1 kg 2. Basmati rice- 1/2 kg 3. Potato(cut in cube) - 3 medium size(around 250gm) 4. Onion - 1 cup(chopped) 5. Yogurt - 1 cup 6. Milk- 1 cup 7. Cinnamon stick -4 pieces 8. Cardamom-5-6 pieces 9. Clove-3-4 pieces 10. Bay leaf- 4 pieces 11. Garlic paste-1 and 1/2 Tbs 12. Ginger paste- 1 and 1/2 Tbs 13. Garam masala powder- 1 ts 14. Cumin powder- 1 ts 15. Red chili powder- 1 ts 16. Black pepper powder- 1 ts 17. Nutmeg powder (Jaifol)- 1/2 ts 18. Mace powder (jaiotri)- 1/2 ts 19. Aloo Bukhara/dried prune-7-8 pieces 20. Raisin -10 pieces 21. Keora water-1/2 Tbs 22. Sugar-1 ts 23. Ghee- 1/2 cup 24. Oil- 2 Tbs 25. Salt- 2 Tbsp or according to your taste Procedure: 1. Clean and wash the mutton properly and keep them on a strainer to drain the excess water. 34

2. Now take the mutton in the pan (try to use an ovenproof heavy pan with heavy lid), add yogurt, salt, sugar, half of the ghee, ginger paste, garlic paste, whole masala (cinnamon, cardamom, clove, bay leaf) and all powder masala. Mix all these things well with mutton, cover it and keep it aside to marinate for around 2-3 hour. 3. In the meantime fry the potatoes lightly in oil and keep it aside. Then fry the chopped onion till it get nice golden color and take them out on a paper towel to soak extra oil and keep aside. 4. Wash rice and cook it half and drain through a strainer to drain water. 5. Now add milk on the top of the mutton and then spread the rice on it.then spread the fried potatoes, fried onion, rest of the ghee, aloo bukhara/dried prune, raisin, keora water one by one on the top. 6. Then cover the pan with lid. If the lid is not tight enough, seal the edge with flour dough. 7. Now preheat the oven to 375 degree F. Then put the pan in the oven and bake it around 20 minutes and then reduce the heat to 350 degree F and bake it around 45-50 minutes. 8. Then turn off the oven and leave it for around 30 minutes. 9. Now carefully open the lid and slowly mix the biryani from the bottom to top to make an even mix of mutton and rice in the biryani, serve hot and enjoy. Taaki Macher Bhorta Ingredients: Taaki fish - 6 to 7 Chopped garlic - 2 teaspoons Chopped onion - 4 tablespoons Chopped green chili - 4 to 5 Chopped coriander - 3 tablespoons Salt - as needed Mustard oil - 4 tablespoons Dherosh Bhorta Ingredients: Fresh okra - 250 gm Chopped onion - 2 tablespoons Chopped garlic - 1 teaspoon Green chili - 2 to 3 Chopped coriander - 1 tablespoon Salt - ½ teaspoon Mustard oil - 1 tablespoon Preparation: Clean the okra under water and cut them into small pieces. Boil the pieces, over low heat, in about ½ cup water with green chili, garlic and salt. Cover the pan. Stir occasionally as the okra is getting boiled. Turn off the heat once the okra is boiled and the water dries up. Let it cool for a while. Mix the onion, salt, coriander with the oil separately. Add the mix to the okra and mash completely by hand, serve and enjoy. Alu Bhorta Ingredients: Preparation: Clean the fish properly, and cut out the heads and tails from the body. Heat 2 tablespoons of oil in a pan and add in the fish. Cover and keep over low heat. Keep aside once the fish is steamed. Remove all the bones completely. Fry the green chili and garlic in the pan. Once the fish pieces have cooled enough, mash the fish and the rest of ingredients thoroughly. Serve fresh. 2-3 medium size potato 2 tablespoons mustard oil 4-5 cloves garlic 2-3 red chili 1/4 onion, thinly sliced Salt to taste Procedure: 1. Roast garlic and chili on stovetop or in the oven. 2. Boil potato until soft. 3. Peel boiled potato and smoothly mash. 4. Mash/paste garlic, chili and salt together. Add onion. 5. Add mashed potato. 6. Add oil and mix well. 35

Ilish Pulav Ingredients: Chicken roast Ingredients: Medium sized Hilsha fish - 1 Polao rice - 3 cups Chopped onions - 1 cup Ginger paste - 2 teaspoons Ground turmeric -1 teaspoon Coriander powder - ½ teaspoon Yogurt - 4 tablespoons Green chili - 5 to 6 Salt - 1 tablespoon Oil - ½ cup Preparation: Clean the rice a few times, rinse and keep aside. Clean the Hilsa and cut into thick pieces. Rinse the pieces dry and marinate with turmeric, coriander, yogurt, and a little bit of salt for 5 minutes. Heat about ¼ cup of oil in a pan and brown the onions. Add the marinated fish pieces and cook for about 2 to 3 minutes over medium heat. Pour in ½ cup of water, and add the green chili. Keep over low heat. Once the water dries up slightly and the gravy thickens, turn off the heat. Heat the rest of the oil in a separate pan, and fry the rice with ginger and the rest of the salt with 2 to 3 minutes. Cook the rice in 6 to 7 cups of water. When the water starts boiling, cover the pan and keep over medium heat. Wait for 5 to 7 minutes before stirring the rice again and putting the lid back on. Turn down the heat to low now. Turn off the heat when the rice is boiled and the water dries up. Take out approximately half of the cooked rice and pour in all the fish pieces and the gravy. Now cover the fish with the separated rice and cook over low heat for 3 to 4 more minutes. Turn off the heat completely when the mixture looks thoroughly cooked, having a characteristic fragrance. Serve hot. Chicken - 2 Chopped onions - 1 cup Yogurt - 4 tablespoons Garlic paste - 1 teaspoon Ginger paste - 1 teaspoon Coriander powder - 2 teaspoons Jaitri (mace) powder - ¼ teaspoon Cardamom - 5 to 6 Cinnamon - 3 to 4 small pieces Sugar - 1 teaspoon Kewra - 2 tablespoons Green chili - 5 to 6 Salt - 2 teaspoons Oil - 1 cup Preparation: Cut the chickens into 4 pieces. Clean and rinse the pieces thoroughly. Fry the chicken lightly in a little bit of oil and keep aside. Mix the yogurt, ginger, garlic, coriander, jaitri and salt in a bowl. Marinate the chicken in this mix for 10 minutes. Heat the rest of the oil in a pan and brown the onions. Keep aside some of the fried onions, and add the chicken, cardamom and cinnamon to the pan. Cook over medium heat for 3 to 4minutes until the water dries up. Add 1 more cup of water and cover over low heat. After another 4 to 5 minutes, gently stir in the green chili, kewra, sugar and the fried onions. Keep the pan covered. Cook for 5 to 6 more minutes until the gravy thickens and chicken is cooked. Turn off the heat and serve hot. 36
