Dear friends and family, Ali s and my wedding was almost seven months ago and life has been quite the whirlwind for us since then! The day after our wedding, we flew to Destin, FL for our honeymoon. A week later, we were flying into Raleigh/Durham airport as we moved to Kinston, NC to report to my assignment to teach elementary school in Eastern North Carolina through Teach for America -... an organization that places recent college graduates in low-income school systems throughout the country. We spent the summer of 2016 learning what it was like to live in an underserved area as I taught kindergarten to lowincome students in an elementary school that served the majority of project housing in Kinston, NC. After two months of living in Kinston during my teacher-training period, we eventually moved to Greenville, NC where I was placed in a low-income, low-performance elementary school to teach 5 th grade. Five months into the school year, we have experienced the challenges that come with teaching, balancing work and life, and beginning a marriage while being so far away from family and friends. At the same time, we have also experienced the joy of receiving unexpected blessings, praying together as a couple, reconciling with one another, and at times laughing at ourselves as we learn to maneuver through this crazy adventure! We are growing in Christ and in our marriage every day as we journey through this season in our lives. We miss our friends and family greatly, but we are so grateful for the ways God has provided for us here in North Carolina. Please keep us in your prayers and we look forward to the next time we can visit with you all! In the Mix Cleta Gillis This month Cleta has offered us two recipes to try for these cold winter evenings. Enjoy! Angel Cornbread 1 ½ c. cornmeal 2 Tb. sugar 1 c. flour 1 pkg. dry yeast ½ tsp. baking soda 2 eggs beaten 1 tsp. salt ½ c. vegetable oil 1 ½ tsp. baking powder 1 ½ to 2 c. buttermilk Combine dry ingredients. Combine eggs, milk & oil. Mix all ingredients together. Grease a 9 x 13 pan. Bake at 450 degrees for 20 to 25 minutes. Creamy White Chili 1 Tb. Canola oil 1 14 oz. can niblet corn 1 med. onion chopped 1 4 oz. can diced green chilies 1 garlic clove minced 1 tsp. ground cumin 1 15 oz. can garbanzo beans 1 tsp. salt 1 15 oz. can northern beans ½ tsp. pepper 1 lb. sautéed chicken cubed 1 c. sour cream 2 14 oz. cans chicken broth ½ c. heavy cream (Drain niblet corn & beans) Sauté oil, onion and garlic 2 min. Add next 9 ingredients and bring to a boil. Simmer 30 min. uncovered. Remove from heat. Stir in sour cream and heavy cream. Serves 6-8. For no one ever hated his own flesh, but nourishes and cherishes it, just as the Lord does the church. (Ephesians 5:29) 10
