Publication Office, 324 South Howard Street. Entered as a periodical October 15, 1940, at the Post Office at Williamsport, PA under the Act of March 3, POSTMASTER: Send address change to Messiah Lutheran Church, 324 South Howard Street, South Williamsport, PA
2 MESSIAH MESSENGER Published by MESSIAH LUTHERAN CHURCH Phone: address: January 23, 2019 VOL. 77 NO. 4 Southern Communion Bread Four Flour Blend: 1½ Cup Sorghum Flour* 1½ Cup Potato Starch/Flour* 1 Cup Tapioca Flour* ½ Cup Almond Flour/Meal* Mix the blend well before use Dry Ingredients: 3/4 cup Four Flour Blend 1/6 cup Almond Flour/Meal* 1/6 cup Gluten Free Oat Bran* 1 Tbsp Light Brown Sugar ½ tsp Xanthan Gum Powder* ½ tsp Salt 1 tsp Baking Powder ½ tsp generic Gluten Free Flour Wet Ingredients: 1/8 cup Canola Oil 3/8 cup 2% Milk 1/8 cup Honey 2 Large Egg Whites * Any ingredient marked with an asterisk is an ingredient that I would strongly recommend Bob's Red Mill brand. Recipe courtesy of the Lutheran Theological Southern Seminary. Directions: Preheat Oven to 350 F 1. Mix Dry Ingredients well. (Make sure to break up any baking powder or brown sugar that clumps together.) 2. Mix Wet Ingredients well. 3. Prep Baking Pan (9-inch circular cake pan): Spread pan with a little Canola Oil then dust with generic gluten-free flour. (I have found it easier to use spray canola oil and then dusting the pan with the generic gluten-free flour.) This will help with extraction from pan later. 4. Combine Wet Ingredients into Dry and whisk until blended. Pour into prepped baking pan and smooth out the batter by either wiggling the pan or using a rubber spatula to spread out the batter. Allow the batter to sit for a minute or two in the baking pan. Pop any air bubbles you see rise to the surface. (You may want to wiggle the pan back a forth a few times to encourage any air bubbles to come to the surface.) 5. Bake about 35 minutes. When done, the bread should look like a soft cornbread yellow color. 6. Cut break lines (in the form of a cross) in the bread (but not through the bread) and remove from pan to cool on a rack.

Quite simply, a cottage meeting is a small group of Messiah members who will gather for approx minutes for informal discussion and light refreshments. A wonderful way to become better acquainted with your fellow members and the Pastor, we will consider what Messiah Lutheran Church currently is, and dream (with the Spirit s guidance) about how Messiah might continue to be a lynch pin in this community. Cottage meetings will take place on February 20 & 27; March 2 & 16. Sign-up sheets are in the narthex. The Library Corner - Highlighted books in our library Children/Youth book - Junie B. Jones and the Mushy Gushy Valentine - Hurray! Feb. 14-Valentine's Day-is just around the corner. Junie can't wait to see all the valentines she'll get. But she never expected a big, mushy card from a secret admirer! Who is this secret mystery guy, anyway? Junie is determined to find out. Adult Book - Ideals Valentine - This is a wonderful book if you like poems and stories that take you back to your childhood. There are a number of stories and poems that share the love of Valentine's Day. The pictures are unique and take you back to an earlier time. Both books found in the "other holiday" book section.
