These classes are offered on the first Sunday of each month. Anyone requesting a Sponsorship form must be a currently registered and practicing Catholic, and they must attend one of the New Baptism Classes to receive it. There is a 3-month waiting period for a sponsorship form for the newly registered. 3 St. Mary Catholic Church March 6, 2016 FATHER COREY S EPISTLE inch pieces; 2 stalks celery, thinly sliced; 1 1/2 quarts vegetable stock; 1 can chopped tomatoes; 1 tablespoon chopped fresh thyme; 1 can small kidney beans; 1 (15 ounce) can cannellini beans, with liquid; 1/4 cup elbow macaroni; salt and ground black pepper to taste. Directions: 1. Heat olive oil in a large saucepan, over medium heat. Add onion, kidney beans, carrots, zucchini, green beans and celery. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally. 2. Stir in the stock, tomatoes and thyme. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes. 3. Stir in the cannelloni beans with liquid and pasta. Simmer for an additional 10 minutes, or until pasta is al dente. Season with salt and pepper to taste before serving. Laetare Sunday is the 4th Sunday of Lent, and the name Laetare Sunday is taken from the words of the introit, laetare Jerusalem, "rejoice with Jerusalem." There is a more joyful tone at this halfway point in the Lenten season. The vestments are often rose-colored (pink). Traditionally, the Apostles Creed is "handed over" to the catechumens, the last step for those preparing for Baptism in the Church at the Great Easter Vigil. Laetare Sunday is also called Mothering Sunday, named because a person would visit his "mother church," another name for the church he grew up in, on this day. This day also became connected with visiting one's biological mother on Laetare Sunday. The Sunday also goes by Refection Sunday, or Refreshment Sunday, named because of the Scripture reading of Joseph feeding his brothers. Finally, the fourth Sunday of Lent is called Rose Sunday because of the papal blessing of the golden rose, a floral spray blessed by the pope and given to a notable person or institution. Various customs developed on this Sunday, including the baking of "mother cakes." These cakes are also called "simnel cakes," and sometimes the fourth Sunday of Lent is called Simnel Sunday. Simnel Cakes: Ingredients for the almond paste: 9oz caster sugar; 9oz ground almonds; 2 free-range eggs, beaten; 1 tsp almond essence. Ingredients for cake: 6oz butter or margarine; 6oz soft brown sugar; 3 free-range eggs, beaten; 6oz plain flour; Pinch salt; ½ tsp ground mixed spice (optional); 12oz mixed raisins, currants and sultanas; 2oz chopped mixed peel; lemon, grated zest only; 1-2 tbsp apricot jam; 1 free-range egg, beaten for glazing. Directions: For the almond paste, place the sugar and ground almonds in a bowl. Add enough beaten egg and mix to a fairly soft consistency. Add the almond essence and knead for one minute until the paste is smooth and pliable. Roll out a third of the almond paste to make a circle 7in in diameter and reserve the remainder for the cake topping. Preheat oven to 275F. Grease and line a 7in cake tin. For the cake, cream the butter and sugar together until pale and fluffy. Gradually beat in the eggs until well incorporated and then sift in the flour, salt and mixed spice (if using) a little at a time. Finally, add the mixed dried fruit, peel and grated lemon zest and stir into the mixture. Put half the mixture into a greased and lined 7in cake tin. Smooth the top and cover with the circle of almond paste. Add the rest of the cake mixture and smooth the top leaving a slight dip in the centre to allow for the cake to rise. Bake in the preheated oven for 1¾ hours. Test by inserting a skewer in the middle - if it comes out clean, it is ready. Once baked, remove from the oven and set aside to cool on a wire rack. 4 FATHER COREY S EPISTLE Brush the top of the cooled cake with the apricot jam. Divide the remainder of the almond paste in half; roll out a circle to cover the top of the cake with one half and form 11 small balls with the other half. Place the circle of paste on the jam glaze and set the balls round the edge. Brush the cake topping with a little beaten egg. Preheat the broiler to high. Place the cake onto a baking tray and broil for 1-2 minutes, or until the top of the marzipan begins to brown. Alternatively, lightly heat the cake topping using a cook's blow torch, until the marzipan is golden-brown. It is February 22, the third Friday of Lent, and the faithful parishioner stumbles through pouring rain past hamburger huts and steak houses into the monastery at Mount Angel and requests shelter. He's just in time for dinner and was treated to the best fish and chips he's ever had. After dinner, he goes into the kitchen to thank the chefs. He's met by two brothers, "Hello, I'm Brother Michael, and this is Brother Francis." "I'm very pleased to meet you. I just wanted to thank you for a wonderful dinner. The fish and chips were the best I've ever tasted. Out of curiosity, who cooked what?" Brother Michael replies, "Well, I'm the fish friar." The man turns to the other brother and says, "Then you must be...""yes, I'm afraid I'm the chip monk." As you do your spring cleaning remember to bring your clothes to our clothing collection bin in the parking lot across from the Parish Hall. These clothes will not only help the poor but the Parish as well. The clothing shed is open all year long. You only need to put your clothes in a plastic bag and we shall do the rest. The second talk will be held on Saturday, March 19th in the Parish Center. For the second talk, he'll discuss our spiritual growth and how the Bible effects our everyday living.
