By Fr Fred Mothering Sunday or Mother s Day as it s known these days has long been associated with mothers and family and, for centuries, it was custom for people to return home to their mother church on Laetare Sunday the middle of Lent. Those who did so were said to have gone a-mothering. The day often turned into a family reunion and a chance for children working away from home often young domestic servants to spend time with their mothers. Many used to pick flowers from the verges along the way to leave in the church or hand to their mothers when they got home. But it was American social activist Anna Jarvis ( ) from Philadelphia who lobbied the government for an official day to honour mothers in the US, and is regarded as the Mother of Mother s Day. She dedicated her life to the cause after swearing she would do so after her mother s death. However, over the years Jarvis became increasingly concerned at the commercialisation of the day, saying I wanted it to be a day of sentiment, not profit. She also didn t like the selling of flowers and the use of greetings cards which she described as a poor excuse for the letter you are too lazy to write. The day took off in Britain when vicar s daughter Constance Smith was inspired by a 1913 newspaper report of Jarvis campaign and began a push for the day to be officially marked in England. Smith, of Coddington, Nottinghamshire, founded the Mothering Sunday Movement and even wrote a booklet The Revival of Mothering Sunday in Interestingly, neither Smith nor Jarvis became mothers themselves. By 1938 Mothering Sunday had become a popular celebration with Boy Scouts, Girl Guides and various parishes across Britain marking the day and communities adopting the imported traditions of American and Canadian soldiers during the war. By the 1950s it was being celebrated throughout Britain and businesses realised the commercial opportunities. Continued on page 2... 2 THE BRIDGE Page 2 When did Mothering Sunday begin? continued from page 1 When you say Mother s Day you re actually referring to the American version, although the term is widely used in Britain too. In the US, Mother s Day falls on Sunday 14 May this year. The French celebrate Mother s Day on the last Sunday in May, where a family dinner is the norm, and traditionally the mother being honoured is presented with a cake that looks like a bouquet of flowers. Mother s Day in Spain is celebrated on 8 December. Spaniards pay tribute not only to their own mothers on this day, but also to the Virgin Mary. the bond between mother and child that remains strong even in adulthood The day includes religious celebrations across the country. Simnel cakes light fruit cakes covered with a layer of marzipan and with a layer of marzipan baked into the middle of the cake are associated with Mother s Day. During Lent, people did not eat sweet foods, rich foods or meat. However, the fast was lifted slightly on Mothering Sunday and many people prepared a Simnel cake to eat with their family on this day. Traditionally, Simnel cakes are decorated with 11 or 12 balls of marzipan, representing the 11 disciples and, sometimes, Jesus Christ. Ecumenism alive and well in Torrens Valley By Leonie Holmes You ll remember last month I shared some of the initiatives that keep ecumenism alive in the Torrens Valley and left you all in some degree of suspense by alluding to a group called GIGGLES. And leaving it at that! Well, the suspense is over, as here s the much-anticipated GIGGLES story About five years ago, Kathy Schutz, who is a member of the Birdwood Lutheran Church, sought the support of her pastor to start a women s group called Girls In God Growing Laughing Eating Sharing or GIGGLES. It is ecumenical and they meet together once a month in the evening for prayer and fellowship and usually have a guest speaker. This group has instituted the One in Worship services, which are held on the last Sunday of each month in a different church, with an emphasis on spontaneous prayer and hymn singing. They are great occasions and well supported. GIGGLES has a fund raiser every second year called Dinner Under The Stars. Dress is formal as in ball gowns, bowties and gumboots a four-course meal is served and the dance floor is in a local paddock, so you can dance under the stars to the sound of the Baker Boy Band The combination is hilarious and appeals to the residents in this rural area. This year s event will be on Saturday 4 November and money raised will go towards the School Chaplaincy Program. Tickets are available from gigglesaustralia@gmail.com. One legend says that the cake was named after Lambert Simnel who worked in the kitchens of Henry VII of England sometime around the year I finish with Elizabeth Chase Alkens Allen s poem which is all about the bond between mother and child that remains strong even in adulthood, good for reminding your mother that she will always be important to you. Mother, dear mother, the years have been long Since I last listened your lullaby song: Sing, then, and unto my soul it shall seem Womanhood s years have been only a dream Wishing all Mothers a Happy Mother s Day. 3 Page 3 Sacramental Program heads towards Confirmation By Jamie Mulcahy, Acting Assistant Principal Religious Identity and Mission, St Catherine s School. The Adelaide Hills Catholic Parish Sacramental Program, run by Fr Fred, Renee Johnson, Kelly-Ann Kirby and me, heads towards its next major milestone, Confirmation, next month. The current program started in September 2016, with 15 children from St Catherine s enrolled. The parish and school work together to offer preparation for the reception of the three sacraments of Reconciliation, Confirmation and Eucharist, with Baptism preparation also available on request. The program is offered to the children from Year 3 to Year 7, with discernment of readiness the joint responsibility of the children s parents, APRIM, the pastoral coordinator and the parish priest. The Sacramental Program is based on the Policy for the Initiation of Children into the Catholic Church in the Archdiocese of Adelaide. The policy speaks clearly about the importance of parents as first educators of their children in their journey of faith. The school offers this program in conjunction with the parish to support you in your Baptismal promise to prepare your child to celebrate the Sacraments. The Catholic Church celebrates seven Sacraments, with the four being offered in this program briefly outlined below: Baptism is the first sacrament of Initiation. It is the first celebration of God s presence in our growth in a faith that will be experienced within a family and, most importantly, in the wider Christian community importance of parents as first educators of their children in their journey of faith Reconciliation is a sacrament that celebrates God s loving mercy and forgiveness, where we acknowledge our need to live in peace with one another and to become forgiving people Confirmation celebrates the gifts of God in each person in the community and seals the presence of the Holy Spirit within us Eucharist completes Christian Initiation. To share at the table of the Lord acknowledges that the suffering, death and resurrection of Jesus is at the heart of the Parish Community. The ongoing sharing of this mystery will continue to give meaning in our lives Our first Sacramental Family Workshop in February was entitled Living in God s Spirit and during this session, we raised awareness of the gift of the Holy Spirit among and inspiring us and helped the children to have a better understanding of the Gifts of the Spirit and the Fruits they produce. More recently in March, the Sacramental children met in the Tree House for their second Family Workshop this year, entitled Our Faith Journey Continues Towards Easter. Our Lady of the Rosary Church Is an attractive, historic (1881) stone church in a lovely garden setting. It is available for weddings. The church has seating for eighty to a hundred. To make a booking or to enquire, please call the Parish Office on Fr Fred, seated, looks on while the children take part in a recent Sacramental Family Workshop This workshop is a new addition to the Sacramental Program this year and is intended to provide the children with a better understanding of Lent, Palm Sunday, Monday of Holy Week, Holy Thursday, Holy Friday and Easter Sunday. As Easter approached, the Sacramental children celebrated the sacrament of Reconciliation at St Matthew s Bridgewater on Tuesday April 4 and went on to perform in a Palm Sunday the Passion of the Lord liturgy on the St Catherine s School Oval. This was followed by Mass in the school hall. The next important dates in the program are Confirmation Orientation on 23 May and Confirmation on 18 June.

4 THE BRIDGE Page 4 Holy Week well attended The events of Holy Week, opening with Palm Sunday on 9 April and concluding with Easter Sunday Mass at St Matthew s Bridgewater on 16 April, were well attended by parishioners and visitors to the Adelaide Hills Catholic Parish. Here, we share a selection of photographs of the week. 5 Page 5 It s been an honour for Mary By Mary Honner Mary Honner, a parishioner for over 40 years. When Fr Fred asked me, as a longtime parishioner, to share my 40-plus years in the parish, I was initially a little apprehensive as there are many more worthy candidates who ve been in the parish far longer than me. But when he explained I ll just be one of many parishioner stories over a series of articles to appear in The Bridge during the year and beyond, I felt a little better and offer the following as my personal observation of worshipping here for much of my life. My first Mass in the parish was in the last two years of school, when our class retreats were held at the YCS Training Centre at Stirling and we walked up the hill to Mass at St Peter the Apostle. This was a house where St Catherine s school is now. Interestingly, one of the chalices we constantly use at Bridgewater is engraved St Peter Apostle Stirling Parish. In early 1973 I moved to the Hills but continued to practice my faith at Tranmere parish, only later in the year starting to attend Mass at Uraidla. Back then, the Uraidla Mass was held in the Anglican Church next to the Institute (they no longer used it) and the celebrant was a priest from outside the parish. When he was no longer available, probably in early 1975, Fr Michael Doherty took over, but not for long as he moved the Mass to Saturday evening at Bridgewater. The story I heard was that the Parish Council decided that, as the Uraidla congregation was small and the money brought in from the second collection could not cover the rent at Uraidla, it was no longer viable.very quickly the Anglican Church was put on the market and initially became a home. Today it serves as a wine bar. In mid-1975 we moved into our own home at Carey Gully and our son was born shortly afterwards. I now had the choice of Masses at both Bridgewater and Stirling East but mainly attended the latter. I have memories of Peter as a two- or threeyear old, walking around the church to shake hands with his friends at Peace. For that reason he always wanted to sit at the aisle. Then we started attending Sunday morning Masses at Aldgate Convent, which still had a resident Chaplain. Many years later, one of the Sisters told me that she was sure that Peter sat attentively through Mass so that he could blow out the candles afterwards! When the resident Chaplain was no more, it was back to Stirling East. It was during this time that the Church introduced Ministers of the Word and initially at least, Fr Doherty used to put out a sheet of paper on a table in the church, where those interested in being Ministers of the Word could enter their names alongside the chosen date. the money brought in from the second collection could not cover the rent at Uraidla I started to do some Sacristan duties and Peter decided to become an altar server. Thrust into the role after one lesson, he wasn t completely comfortable so I had to sit in the front row, where I d be close by and able to prompt him as and when needed. My hearing was also deteriorating, so the front row was a good thing. He continued as a server until, when he was standing at floor level to hold the Missal for the Priest, who was up on the step, Peter was taller than the priest. He seldom served anywhere other than at Sunday Masses. With the formation of the Adelaide Hills Parish, Sunday Mass at Stirling East ceased and I returned to Bridgewater, although I did occasionally attend both Birdwood and Lobethal, where the time was good but the distance too much. I now consider myself a regular at Saturday Vigil at Bridgewater. For a time the parish Mass on Wednesday mornings was at the Aldgate Convent, first in the Chapel, and later in the house. We also read the liturgy of the hours and during that time I became accustomed to saying you instead of thee in the Our Father and Hail Mary. You might find that it still happens sometimes, if you are near me. In recent years I have become a Minister of the Eucharist, an occasional reader and a Sacristan, especially on Fridays, while I also have a Communion round to the home-bound at Summertown and Basket Range.

6 THE BRIDGE Page 6 A Century and a Half for Birdwood s Catholic Church By Elisabeth Anderson Such was the description of that great day in September 1867 when the Catholic Church in Birdwood (then called Blumberg) was officially opened, one can almost imagine being there in the gathering. It was documented in The Southern Cross newspaper at the time and 100 years later retrieved by the Centenary Committee for another celebration and safe keeping in its parish archives. Now, as the date of the church s 150th anniversary approaches, The Bridge once again shares the event, this time with present-day readers. The Church of St Matthew, Apostle and Evangelist, Blumberg, was solemnly dedicated on 8 September 1867 by the Very Rev. John Smyth, the Vicar General. From an early hour numbers from the surrounding districts were assembling to witness the ceremony. Shortly before 11 o clock the Vicar General assisted by Fr Dowling, Pastor of the district, commenced the blessing at the porch of the Church, making the circuit of the exterior, and reciting the psalms and prayers prescribed by the Roman ritual. Re-entering the Church he recited the litany at the foot of the altar, and then blessed the interior. The Holy Sacrifice of the Mass was celebrated by Fr Dowling and at the Post Communion the Vicar General preached the dedication sermon. His text was from the Book of Chronicles: 11 Thus Solomon finished the house of the LORD and the king s house; all that Solomon had planned to do in the house of the LORD and in his own house he successfully accomplished. 12 Then the LORD appeared to Solomon in the night and said to him: I have heard your prayer, and have chosen this place for myself as a house of sacrifice. It became a parish in its own right in 1885 under the leadership of Fr Thomas O Neill 13 When I shut up the heavens so that there is no rain, or command the locust to devour the land, or send pestilence among my people, 14 if my people who are called by my name humble themselves, pray, seek my face, and turn from their wicked ways, then I will hear from heaven, and will forgive their sin and heal their land. 15 Now my eyes will be open and my ears attentive to the prayer that is made in this place. 16For now I have chosen and consecrated this house so that my name may be there forever; my eyes and my heart will be there for all time. After the sermon, which was most appropriate to the occasion and occupied a full hour in its delivery, during which the attention of the congregation never flagged, a collection was made, which realised the magnificent sum of , a sum truly marvellous for so small a community, and considering how short a time it is since the foundation stone was laid. The church is built of bluestone of the neighbourhood, with white cut stone dressings, all neatly pointed, and roofed with galvanised iron on open stained timbers. It is in the early English Gothic style and consists at present of a nave, entered by a porch in keeping with the building, provision being made for future extension. The gables are surmounted by a plain cut-stone cross, and are pierced by a quarter foil ventilator. The size of the building is 40 feet by 20 feet and 16 feet high to the eaves. The architects were Messrs Wright and Woods of Adelaide and the builder Mr Hick of Blumberg. The church was dedicated 17 years later, on 24 August 1884, by Bishop Christopher Reynolds. This occurred when its extension was completed and the bishop erected the Stations of the Cross at the same time. Fr Thomas Dowling who, as Pastor of the Mt Barker Mission, celebrated the first Mass in St Matthew s Church In 1921, when Fr Joseph Minetti was parish priest, a sub-committee comprising Dan Jenkins, John Formby and Michael Guthrie was formed to preserve the building and had the outside walls cement rough cast. Birdwood was originally part of the Mt Barker Mission. It became a parish in its own right in 1885 under the leadership of Fr Thomas O Neill. The area included Mannum, Woodside and Harrogate and went as far north east as the Victorian border, taking in Morgan and Waikerie. It was scattered and sparsely populated with poor Catholics and in 1891 the community returned to be part of the Mt Barker Parish Mission for a further four years. It became a separate parish again in 1895, with Fr Patrick Ryan as their pastor for the next 18 years. Other priests would follow in his footsteps and then, just over a century later, in 1996, the Birdwood Parish became part of the newly-formed Adelaide Hills Parish, with Fr John Swann (now Monsignor Swann) as Parish Priest. The 150th Anniversary of the church and the completion of the new Mary O Dea Community Centre will be celebrated on Friday 8 September with a 6pm Mass and the blessing of the new building. 7 Page 7 Happy 60th birthday, Fr Fred! Our parish priest Fr Fred had an exceptionally busy, joyful and cake-filled week to celebrate his 60th birthday back in early April. The birthday week got underway with a birthday cake at Our Lady of the Rosary, Stirling East, on Sunday 2 April, followed by another birthday cake after St Catherine s School Mass with children, staff and parents on Tuesday 4 April. The festivities on the big day itself, 5 April, shifted to morning tea at Birdwood, followed by a celebratory lunch at the appropriately named Fred s in Aldgate and a Maltese Meal dinner with Carmen and Anton Sylvester. St Matthew s Bridgewater then rounded out the week with another birthday cake after Palm Sunday Mass on 9 April. As we share a selection of photographs from the week, all across the Hills parish join in wishing Fr Fred a happy, healthy and holy birthday and many, many more... 8 THE BRIDGE Page 8 St Catherine s Catholic School News St Catherine s Catholic School correspondent and Acting Assistant Principal Religious Identity and Mission, Jamie Mulcahy, shares the school s busy Holy Week program Holy Week at St Catherine s The students of St Catherine s celebrated Holy Week during the last week of the first term, with an array of events. It all started on Tuesday 11 April with the Palm Sunday The Passion of the Lord Liturgy on the St Catherine s School Oval, where the entire school lined up around the oval chanting Jesus is coming! Jesus is coming! while waving palms. Jesus, played by Jamie Mulcahy and accompanied by the 12 Disciples played by St Catherine s students on the 2017 Sacramental Program, did a lap of the oval while the Andrew Chinn track, Bless our King played over the PA system. After the Liturgy, Father Fred led the school in a Whole School Mass. On Wednesday 12 April, the St Catherine s students took part in Coin Charlie, which forms part of our fundraising for Caritas Australia. Children were asked to bring in their Project Compassion boxes and any spare change to help their class make the longest line possible as well as aim to raise the most money. All money raised went towards Project Compassion and the class that raised the most money and made the longest line was awarded the first ever, St Catherine s Coin Charlie Medal. On the day, the St Catherine s Coin Charlie Award for the Longest Line was awarded to 5/6AC. Below are the amounts that each class raised: RG - $54.00 R/1M - $ /2J - $ /4K /4LE - $ /6KR - $ /7W - $ /6AC - $ A total of $ was raised for Project Compassion, which represents a great effort by the St Catherine s community. 9 Page 9 Two motions for CWL National Conference By Leonie Holmes I have drawn up two motions one on palliative care and the other on residential facilities for drug addicts to be put to the CWLSA State Meeting in Loxton on 23 May and following a decision there, hopefully put forward to the organisation s National Conference. We the members of Catholic Women s League of SA call on all the state governments of Australia to allocate more funding for Palliative Care, We have been advised that Palliative Care is currently available to only 25% of Australians. We believe that professional Palliative Care of both mind and body should be available for every Australian diagnosed with a terminal illness from the time of diagnosis until death. We applaud the South Australian Government for passing the Consent to Medical Treatment and Palliative Care Act of 1995, making it clear that doctors are not obliged to continue life sustaining treatment if the patient is approaching death and that doctors are free to administer both pain and other symptom relieving medicines, in accordance with medical standards of palliative care, even if an incidental effect is to hasten death. This is not euthanasia but is truly dying with dignity a term which has been hijacked by the euthanasia lobby. Very few patients undergoing professional palliative care treatment are known to have requested euthanasia. These facts, if made more commonly known, would completely diffuse the euthanasia debate. We urge politicians to work towards ensuring that professional palliative care is available to all Australians. We the members of Catholic Women s League of SA call on all the governments of Australia to heed the advice of the nation s most senior parole board chief, Frances Nelson QC, by providing residential facilities for drug addicts so that they can be given the necessary medical and psychological support and structured supervision rather than be sent to prison. They need to learn ways of dealing with their problems that don t include crime and drugs. With a quarter of the current 2,700 prisoners in SA being Aboriginal, it is imperative that a facility be made available near the Pitjantjatjara Lands, so that culturally appropriate programs could be offered close to their own environment. Rather than building more prisons, funding should be put into supporting single parent and dysfunctional families and eradicating domestic violence and drug and alcohol abuse. This will not only save money in the long run but lives will be turned around so that offenders will become valuable members of our society. The World Union of Catholic Women Report By Leonie Holmes The World Union of Catholic Women s Organisation (WUCWO) this year celebrates 90 years of participation in the League of Nations (now United Nations), when it joined the Committee to Prevent Women Trafficking and that to Promote Child Protection on the World Stage. It has continued in both of these fields ever since and with an estimated 45-million people currently subjected to human trafficking, the need is greater than ever. Sadly Australia is not immune to this scourge and by supporting Catherine House here in Adelaide, we are helping to ensure that trafficked women here, who manage to escape, will have a place to go for refuge. WUCWO is also fighting against the legalisation of surrogacy, which it regards as a violation of the human rights of women and children. The move of the main WUCWO office from Paris to Rome has created a much closer liaison with the Holy See, enabling WUCWO to take a very active part in the Pontifical Council for the Laity, Family and Life. It is preparing for the Synod on Youth, Faith and Vocational Discernment by upgrading its website with better resources for social networking for young people. We can be proud to be members of this fantastic worldwide movement. In closing, I urge you to pray this this prayer frequently in solidarity with the women of WUCWO. Lord, you call us to share your table and also your cross of anguish with our sisters who are suffering. We pray for all who are being abused, violated, oppressed and in situations that deprive them of their dignity. We pray for mothers yearning for adequate, clean drinking water and proper sanitation and sufficient food and health care for their families. We pray for those struggling for survival, those broken and alienated, refugees and visible minorities experiencing repeated discrimination and bearing the brunt of indifference and oppression. We pray for the day when women who are equal in ability have equal rights and can live in peace, joy and harmony. We ask this with the hope that only you can provide.

10 THE BRIDGE Page 10 A Lenten reflection journey By Karen Dutton of one of the Lenten Groups Today many people speak of drowning in the many demands of their life. Participating in this years six-week Lenten reflection and sharing program has enabled us to immerse ourselves in the words and actions of Christ and to pray and reflect on the Lenten Gospels. Each week we were welcomed by simple yet beautiful Lenten symbols of water, a purple cloth, the lighted candle and the open Book of the Word. We listened week by week to the Lenten Gospels including the woman at the well, the healing of the blind man, the raising to life of Lazarus and, of course, the totally emotionally overwhelming Passion of the Christ. Each week we were invited to dwell on a word or phrase that moved us and then to share this with the group. We also listened to an insightful Gospel reflection as presented by various members of the Brisbane Diocese which was responsible for the program. We have been invited through the readings to see how in His dealings with the world, Jesus upended societal norms and expectations to save and transform his people. Each session finished with an invitation to rest in the loving embrace of the Holy Spirit Also, each week an ordinary but extraordinary person shared their story of their experience of living as a missionary disciple (Good News People) and once again we were invited to reflect and respond on what was significant for us in these people s lives and how we could be encouraged and inspired to begin to live a life of faithful love and compassion. Each session finished with an invitation to rest in the loving embrace of the Holy Spirit and be immersed in God s love peace and wisdom as we listened to some beautiful meditative music. We then blessed each other each week with water and gave each other a sign of peace. The program booklet was also a wonderful display of religious art with drawings by Sr Orsolya Fecske of Hungary illustrating each Sunday Gospel. Many thanks to Fr Fred for leading us in the experience and for sharing his deep insight and knowledge into Scripture and developing our appreciation for the Karen Dutton s group meet during the six-week Lenten reflection and sharing program joy of the Gospel and the opportunity to be refreshed and rejuvenated by the living water that only Jesus can provide. Special thanks also to all our participants for having the courage to share their own personal insights and reflections, for their friendship, fellowship and faith journey. Our program was completed with a shared supper where Fr Fred revealed his culinary skills with a delicious Maltese anchovy pizza. Yum! We very much appreciate the effort that Fr Fred puts into these retreats and the comfortable venue at the Aldgate Church of Christ. I encourage all to try to come along next time one of these retreats is offered. It is a very worthwhile experience. Aldgate Lenten Retreat By Leonie Holmes The subject for the Lenten Retreat was taken from the story of Lazarus in the Bible, not the friend of Jesus, who Jesus raised from the dead but the wealthy Lazarus, who was so busy enjoying his wealth that he forgot the beggar at his gate. We were encouraged to consider if we are too fond of our wealth and are neglecting to poor, who maybe live in our own area. We broke into small groups to consider who these poor people might be and we came up with the fact that there is a local mother with several children, who was involved in a car accident recently. We resolved to do something to help her and the money raised from the recent raffle was given to her and the person who won the raffle generously gave the prize to her also. We also resolved to gather a group of cooks who might be prepared to deliver meals to parishioners who are sick, as has been done from time to time in the past. Fr Fred commended the parishioners at Lobethal and Birdwood who bring food items each Sunday to donate to the Community Pantry organised by the United Church. From here, food hampers are distributed to local families in need. Another thing that we discussed was the need to be welcoming to people when they come to Mass on a Sunday. This is one of the items which the Diocese is encouraging in their Parish Renewal Program, so although we think we have been doing a reasonable job in this area, we resolved to try even harder to ensure that everyone who comes to our churches feel welcomed, as a family member. The retreat finished with exposition of the Blessed Sacrament and Fr Fred brought the Blessed Sacrament individually to each attendant and gave them a blessing. He also sang a beautiful hymn in his beloved Maltese language, which was very moving.

11 Page 11 Winter warmers for those chilly evenings With the first blasts of winter arriving this month, Betty White turns her attention to a couple of hearty meals guaranteed to warm the cockles on even the chilliest of evenings First up is a Beef in Mushroom Sauce, for which you will require: 1 dash of olive oil 1 teaspoon of butter 2 thick cut beef sirloin steaks, thinly cut (sounds Irish but I m sure you understand!) 2 cloves of garlic, chopped 200g of button mushrooms, halved 125ml or half a cup of beef stock 60ml or a quarter of a cup of sour cream 2 spring onions, sliced Mashed potatoes to serve Heat a pan over medium high heat, add a splash of olive oil and half a teaspoon of butter. Season the beef with salt and pepper and add to the pan, in three separate batches. Cook each batch for one minute until brown and tender, remove and place in a bowl. Reduce heat and add the remaining butter, garlic and mushrooms to the pan and cook for one minute. Add beef stock and simmer for five minutes, return the beef to heat through then remove from heat. Stir through sour cream and spring onions, season to taste and serve over mashed potato. Next is a Borsch Soup. You ll need: 2 cups of chicken stock 1 small onion, thinly sliced 1 slice of unpeeled lemon ¼ of a cup of celery tips 1 cup of cabbage, thinly sliced 1 cup of beetroot, thinly sliced 1 cup of diced potatoes 1 teaspoon of Worcestershire Sauce And while primarily a winter dish, it s also delicious served cold in summer Place all the ingredients in a saucepan and bring to the boil, simmering for 10 minutes or until totally cooked. To serve, top with a spoonful of sour cream. And while primarily a winter dish, it s also delicious served cold in summer.
